5 cups chopped fresh or frozen rhubarb (about 12 stalks)
1/2 cup water
1/4 cup sugar
2 cups fresh strawberries, hulled and halved
1/8 teaspoon ground ginger

Steps:

  • In a large saucepan, combine rhubarb, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until rhubarb is tender, stirring occasionally. Stir in strawberries and ginger. Serve warm or cold.

2 cups chopped rhubarb
⅓ cup brown sugar
⅛ teaspoon salt

Steps:

  • Combine chopped strawberries and rhubarb in a saucepan. Add sugar and salt; stir to coat evenly. Let sit until fruit has released its juices, about 10 minutes.
  • Bring fruit mixture to a light boil over medium heat. Reduce heat to medium-low and simmer, stirring occasionally, until fruit is soft and mixture has thickened, about 20 minutes. Remove from heat and let cool, about 30 minutes. Mixture will further thicken upon cooling. Place in a jar or storage container and refrigerate for up to a week.

We include only the good stuff in this naturally sweetened strawberry rhubarb compote. The fresh strawberries balance out the sourness of the rhubarb, the orange juice adds a nice zestiness and a touch of honey rounds out the whole flavor profile to give you a sweet, tart experience that pops in your mouth.

1 cup rhubarb (chopped into 1 inch pieces)
1 cup strawberries (hulled and quartered)
1 orange (juiced)
1/4 cup cold filtered water
2 tbsp honey or agave nectar
pinch sea salt

Steps:

  • In a small saucepan add the rhubarb, strawberries, orange juice, water, honey, and sea salt. Cover and allow to come to a boil. Reduce to a simmer, remove lid and and allow to simmer for 10 minutes. At this point most of the fruit should have broken down, remove from heat.
  • Using a potato masher, mash the fruit and make the compote smoother.
  • Taste and add more honey if needed.
  • Allow to cool for 10 minutes (the compote will thicken as it cools), then transfer the compote to a glass jar with a lid. Cool, uncovered at room temperature until it's no longer hot. Pop on the lid and transfer to the fridge to chill for at least 4 to 6 hours before using. See notes for serving suggestions.

3 ounces sugar
1 lemon, juiced
1 star anise
1 vanilla bean, halved and scraped
1 teaspoon pink peppercorns
12 ounces strawberries, cut into cubes
2 ounces tapioca starch
Streusel, recipe follows
1 cup butter
1 cup sugar
2 cups all-purpose flour

Steps:

  • Combine all of the ingredients, except for the tapioca, in a saucepan over medium heat to extract the juices, and then cook until the rhubarb is al dente. Add the starch and simmer until the compote thickens. Remove from the heat and transfer to a hotel pan to cool. Serve with Streusel.
  • Preheat oven to 300 degrees F.
  • Cream together the butter and sugar in a mixing bowl. Add flour, combine until pebbly.
  • Press together in your hand. Break off pieces and bake until golden brown

Paired with strawberries and a few other ingredients, the rhubarb cooks down into the perfect sweet and tangy compote for grilled pound cake.

1 pound rhubarb stalks (about 4 large), sliced into 1/2-inch pieces
1 pound strawberries, hulled and halved (quartered if large)
1 teaspoon vanilla extract
2/3 cup plus 2 tablespoons sugar
Zest of 2 oranges
Kosher salt
1/2 cup heavy cream
1/2 cup sour cream
8 slices pound cake

Steps:

  • Preheat a grill for cooking over medium-high heat.
  • Combine the rhubarb, strawberries, vanilla extract, 2/3 cup sugar, zest of 1 orange and 1/8 teaspoon salt in a large bowl. Lay out 2 large sheets of heavy-duty foil (or doubled layers of regular foil). Divide the rhubarb-strawberry mixture evenly between the 2 sheets of foil. Bring the long ends together and fold twice to seal; fold in the short sides to seal, leaving room for steam. Place the 2 foil packs on the grill. Cook, uncovered, 15 minutes. Remove from the grill and lower the grill temperature to medium. Carefully open the foil packs, making sure to avoid contact with the hot steam. Let cool long enough so the packets are not steaming before serving.
  • Meanwhile, using an electric mixer, beat together the heavy cream, sour cream, remaining orange zest and 2 tablespoons sugar in a large bowl until thick and fluffy. Keep refrigerated until ready to serve.
  • Grill both sides of each pound cake slice, 1 to 2 minutes per side, using a metal spatula to flip and remove them.
  • Serve each grilled pound cake slice with some compote and a dollop of the cream.

1 1/2 pounds rhubarb leaf stalks
2 cups strawberries (washed and hulled )
3/4 to 1 1/4 cups sugar (see note in instructions)

Steps:

  • Wash and hull the strawberries, then slice them in half, or in quarters if they are large.
  • Chop the rhubarb stalks . In the end, you're looking for 2 cups each of chopped strawberries and rhubarb.
  • In a medium pot, combine the strawberries and rhubarb over low heat. Add 3/4 cup sugar. Stir constantly until all of the sugar is dissolved.
  • Continue to cook, stirring frequently, until the rhubarb pieces start to fall apart. When the compote is about as thick as applesauce, turn off the heat.
  • Taste, and add additional sugar if you desire more sweetness. Keep a light hand with the sugar, though; too much sweetness will bludgeon rhubarb's distinctive flavor. If you do add additional sugar, turn the heat back on to low and stir constantly until the sugar is completely dissolved.
  • Fill clean canning jars with the strawberry-rhubarb compote, leaving half an inch of headspace. It is not necessary to sterilize the jars for this recipe.
  • Tap the bottom of each jar gently but firmly on the palm of your hand to settle the compote and release any air bubbles, or run a clean spatula or chopstick around the interior periphery of the jar to release any trapped air.
  • Screw on canning lids. Process in a boiling water bath for 10 minutes. (Adjust the time if you are canning at high altitude .)

2 long stalks of rhubarb, sliced thinly in small pieces
10 frozen or fresh strawberries
64 g. sugar
32 g. honey
25 g. fresh lemon juice
64 g. lemonade

Steps:

  • Pre-heat burner to medium high heat.
  • Combine all the ingredients in a small pot on medium high heat. Allow to boil for about 4-5 minutes, then bring to a simmer.
  • Allow to simmer for about 20 minutes on medium to low heat, stirring occasionally. Compote will be done when strawberries are completely soft and broken down, and the rhubarb is mostly broken down and slightly transparent.
  • Let cool for about 10 minutes.

  • Strawberry Rhubarb Compote: In a medium saucepan over medium low heat add rhubarb, strawberries, cinnamon stick, sugar, cornstarch and lemon zest; stir the mixture occasionally so not to burn.
  • Cook until rhubarb is soft and mixture thickens, about 8 to 10 minutes; cool completely& remove cinnamon stick.
  • Cream Layer: In the bowl of a stand mixer fitted with a whisk attachment (or alternatively with an electric hand mixer), whip cream until soft peaks start to form.
  • Add icing sugar and increase speed to high; continue to whip cream into firm peaks.
  • Fold crème fraiche and Grand Marnier into whipped cream.
  • Assembly: Divide 1/3 of the cream layer equally into 6 parfait glasses; divide half the strawberry rhubarb compote equally on top of the layers of the cream layer.

One of my favourite ways to prepare rhubarb! I love this spooned over a dish of low-fat cottage cheese for breakfast or lunch. A simple, yet delicious compote.

1 cup white sugar (add more or less depending on your taste)
1/4 cup water
6 cups fresh rhubarb, chopped in 1-inch pieces
1 strip orange rind, 1 inch wide x 3 inches long

Steps:

  • This is prepared in a double boiler. Put a few inches of water in the bottom part of the pot and bring to gentle boil.
  • In top of double boiler over direct heat, bring sugar and water to boil. When the mixture is boiling, place the pot over the gently simmering water in bottom of double boiler.
  • Add the chopped rhubarb and orange rind to the sugar water mixture, stir.
  • Cover and cook, without stirring, for 15 to 20 minutes or until rhubarb is tender. The pieces will remain whole!
  • Turn off heat; allow the rhubarb to cool in the pan over hot water. Discard orange rind.
  • Enjoy!
  • I like to serve this warm or cold, either way it is delicious!
  • Serve as is or, just before serving, stir in 1 cup (250 mL) sliced strawberries, cubed mango or pineapple tidbits, good to serve over ice cream, frozen yogurt or a slice of plain cake.
