Get your Crock pots on. This is a easy recipe I made today for a quick crock pot meal and my Mexican fix. I used the high setting because I was home and wanted to cook it in a hurry. It also may depend on the type of crock pot you are cooking in.

4 large pork chops, boneless works best
2 c rice
1 14 oz. can of chicken borth low sodium
2 c salsa, you may use mild or hot
2 c red kidney beans, drained from the can
8 tsp taco seasoning mix
4 tsp sea salt
1 can(s) enchilada sauce
mexican cheese dip
guacamole
1 can(s) refried beans
sour cream

Steps:

  • 1. Prepare the pork chops, sprinkle witht the sea salt on both sides. Then rub in one tsp. of taco seasonning on each side well.
  • 2. place in the crock pot the 2 cups of rice add the broth and salasa and 2 cups of red beans. I gave my a stir.
  • 3. Place the pork chops on top and place the lid on the crock pot.
  • 4. I set my crock pot on high and it only took 1hr 30 minutes till done.
  • 5. Place a serving of rice and beans on the plate, then lay the pork chop on top. Heat the enchilada sauce and pour the amount you like over the pork chop and rice mixture. Pour some hot melted mexican dip over that and serve with some refried beans and mexican salad with sour cream and quacamole

2 kg / 4 lb pork shoulder (pork butt) (, skinless, boneless (5lb/2.5kg bone in) (Note 1))
2 1/2 tsp salt
1 tsp black pepper
1 onion (, chopped)
1 jalapeno (, deseeded, chopped)
4 cloves garlic, minced
3/4 cup juice from orange (2 oranges)
1 tbsp dried oregano
2 tsp ground cumin
1 tbsp olive oil

Steps:

  • Rinse and dry the pork shoulder, rub all over with salt and pepper.
  • Combine the Rub ingredients then rub all over the pork.
  • Place the pork in a slow cooker (fat cap up), top with the onion, jalapeño, minced garlic (don't worry about spreading it) and squeeze over the juice of the oranges.
  • Slow Cook on low for 10 hours or on high for 7 hours. (Note 2 for other cook methods)
  • Pork should be tender enough to shred. Remove from slow cooker and let cool slightly. Then shred using two forks.
  • Optional: Skim off the fat from the juices remaining in the slow cooker and discard.
  • If you have a lot more than 2 cups of juice, then reduce it down to about 2 cups. The liquid will be salty, it is the seasoning for the pork. Set liquid aside - don't bother straining onion etc, it's super soft.

1 bone-in pork shoulder roast (4 to 5 pounds)
1 can (28 ounces) enchilada sauce
1 large green pepper, chopped
1 medium onion, finely chopped
2 garlic cloves, minced
1/4 cup minced fresh cilantro
1 tablespoon lime juice
1-1/2 teaspoons grated lime zest
Flour tortillas (8 inches), optional
Toppings of your choice

Steps:

  • Cut roast in half; place in a 4- or 5-qt. slow cooker. Top with enchilada sauce, green pepper, onion and garlic. Cover and cook on low for 8-10 hours or until meat is tender. , Remove roast; cool slightly. Skim fat from cooking juices. Remove meat from bone; discard bone. 1 (3 pound) boneless pork loin roast, cut into 2 inch pieces
½ teaspoon salt
2 (4 ounce) cans diced green chile peppers
3 cloves garlic, crushed
¼ cup chipotle sauce
3 ¼ cups water, divided
1 ½ cups uncooked long grain white rice
¼ cup fresh lime juice
¼ cup chopped cilantro

Steps:

  • Place the roast in a slow cooker, and season with salt. Place chile peppers and garlic on top of roast. Pour in the chipotle sauce and 1/2 cup water.
  • Cover, and cook 7 hours on Low.

1 large orange (juiced)
1 lime (juiced)
1 medium onion (finely minced)
3 cloves garlic (finely minced)
¼ cup tomato paste (about ½ a can)
¼ cup water
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon oregano
½ teaspoon sea salt
1 ½ lb. pork butt, pork shoulder or boneless pork ribs (see notes)

Steps:

  • Combine all the ingredients, except the pork, in your crockpot and mix together well. Lay the pork on top and turn your crockpot to low. Cook on low for 8 hours.
  • When the pork is tender, gently shred it using 2 forks. Pull the pork against the grain to get long strips of meat. Mix the shredded pork with the sauce in the crockpot.
  • Preheat your oven to broil. Line a baking sheet with parchment paper.
  • Transfer the pulled pork to the prepared baking sheet and spread it out so that it's in a thin layer.
  • Broil in the oven for 15-20 minutes, mixing halfway through until the pork is crispy in many spots.
  • Remove from the oven and serve on sandwiches, in tacos, burritos or as a side with some potatoes and salad.

3 pounds pork shoulder roast
1 onion (diced)
4 garlic cloves (minced)
2 tablespoons tomato paste
juice of one lime (1-2 tablespoons)
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon kosher salt (plus more to taste)
1/4 teaspoon red chili flakes

Steps:

  • Mix together the chili powder, cumin, paprika, salt, oregano and red chili flakes, set aside.
  • Add the chopped onion and garlic to the slow cooker with the tomato paste, lime juice, and just 1-2 teaspoons of the spice mixture. Stir everything together until fully mixed.
  • Sprinkle the rest of the spices all over the chuck roast, patting to help it stick to the meat.
  • Place the meat on top of the onion mixture and set cook on low for 8-9 hours. Total cooking time will vary for different roasts.
  • After meat has cooked, use two forks to shred the meat, removing any large pieces of fat or gristle as you find them. (If the meat is still too tough to shred, it needs to be cooked a little longer. Cook for an additional 30-60 minutes and check it again.) Stir to mix well with the sauce. Cover and continue to cook on low for another 30-60 minutes.
  • Before serving stir well again to mix the meat with the sauce. Taste meat and season with more salt to taste.
  • Optional Step: To create crispy carnitas, heat a heavy skillet (cast iron is best) over medium high heat. When pan is hot, add 1 tablespoon of oil. Add the carnitas in batches, careful not to crowd the pan. Drizzle a few tablespoons of the cooking liquid from the crock pot over the meat as it fries. Once bottom is crispy, turn the meat, until desired crispiness is reached.

3 whole pasilla chiles
4 cloves garlic, unpeeled
2 to 3 chipotles in adobo sauce

1 tablespoon cider vinegar
Kosher salt
2 teaspoons dried oregano, preferably Mexican
3 3/4 cups low-sodium chicken broth
4 pounds boneless pork shoulder (untrimmed), cut into chunks

2 bay leaves
1 cinnamon stick
Corn tortillas, warmed, for serving

Steps:

  • Put the ancho and pasilla chiles and the garlic in a bowl; add 2 to 3 tablespoons water. Microwave on high until soft and pliable, 2 to 3 minutes. Stem and seed the chiles; peel the garlic. Transfer the chiles and garlic to a blender.
  • Add the chipotles, onion, 2 tablespoons olive oil, honey, vinegar, 1 tablespoon salt and the oregano to the blender; puree until smooth. Heat the remaining 1 tablespoon oil in a large skillet over high heat; add the chile sauce and fry, stirring, until thick and fragrant, about 8 minutes. Pour in the broth and reduce until slightly thickened.
  • Season the pork all over with salt and pepper and transfer to a large slow cooker. Add the bay leaves and cinnamon stick, then pour in the sauce.   • Place the roast in the crock-pot and sprinkle the spices all over it. Add the water and cover with the lid. Cook on LOW for 6-7 hours if frozen or 4-5 hours if thawed. Alternatively, you can cook the roast on HIGH for 3-4 hours if frozen or 2-3 hours thawed. When the roast is tender enough to shred, gently pull it apart with tongs or with two forks. Break it into bite size pieces and toss the pieces in any juices left in the bottom of the pot.
  • If you are making taquitos, place a dry skillet over medium high heat. Warm the tortillas in the skillet, one at a time, they will become soft and pliable and it will be easier to roll them without cracking the tortillas. You can also warm 1/4 cup of oil in the skillet and then dip each tortilla in the oil prior to rolling them.
  • Preheat the oven to 350 degrees. Set out a large baking sheet. Place a warmed tortilla on the sheet, layer a tablespoon or so of cheese across the center of the tortilla and then a few tablespoons of the pulled pork. Roll the tortilla around the filling and place it seam side down on the baking sheet.
