A super easy, and quick rhubarb dessert recipe that is perfect with ice cream, custard, cream or even on its own.

85 g (1/3 cup plus 1 Tbsp) sugar
85 g (3/4 stick) butter, if using unsalted, add a pinch of salt to the flour
1 egg, beaten
115 g (1 cup minus 2 Tbsp) all-purpose flour
1 1/2 tsp baking powder
about 1 lb (500 g) stalks of rhubarb (about 2 1/12 to 3 cups)
1 tsp fresh lemon juice
⅔ cup (135 g) sugar, add a little more if you like a sweeter flavor
2 tsp cornstarch

Steps:

  • Wash the rhubarb stalks and chop into 1" pieces.
  • Stir the cornstarch into the sugar, then add it to the rhubarb along with the lemon juice, and toss gently
  • Place the sugared rhubarb into the buttered pie dish.
  • Sift the flour and baking powder into a bowl so that they are evenly mixed.
  • Cream the sugar and butter until light and fluffy. Beat in the egg, then gently fold in the flour and baking powder until well combined, without over mixing.
  • Drop large spoonfuls of the dough onto the rhubarb in the pie dish.
  • Bake for 35 to 45 minutes (depending on your oven) or until the topping is baked through, and golden brown. Remove from the oven. Allow the easy rhubarb cobbler to cool slightly before serving.

This is an easy cobbler to put together and one I have been making for years, I find that one cup of sugar is the perfect amount for my taste if you prefer a less sweeter and more tart taste then reduce the sugar by a couple of tablespoons.

4 1/2 cups rhubarb, cut into 1/2-inch pieces
1 cup sugar
1 1/4 cups flour
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup cold butter, cut into pieces (no subs please!)
1 egg, beaten
1/2 cup half-and-half cream or 1/2 cup full-fat milk

Steps:

  • Set oven to 375 degrees F.
  • Grease a 9-inch baking dish.
  • Mix the rhubarb and 1 cup sugar, and place in the baking dish.
  • To make the cobbler batter: combine flour, 3 tablespoons sugar, baking powder and salt.
  • Cut in the cold butter to make a crumbly mixture.
  • In a small bowl, whisk/combine the egg and half and half cream.
  • Add to the dry ingredients; stir with a fork to create a stiff batter.
  • Drop by spoonfuls on top the rhubarb/sugar mixture in the baking dish (does not have to cover completely).
  • Bake for 35-40 minutes.
  • Serve warm topped with ice cream.
  • Delicious!

I love rhubarb. I grew up with a grandmother that made all kinds of rhubarb recipes and so I am always on the prowl for a new one. I found this one is her recipe box so I thought I would share it. If you are using frozen rhubarb, measure while frozen then thaw completely in a colander. Do not press the liquid out.

4 cups rhubarb, diced
2 1/2 cups sugar, divided
1 cup miniature marshmallow
1/2 cup butter, softened
1 teaspoon vanilla
1 3/4 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk

Steps:

  • In a large bowl, combine rhubarb and 1 1/2 c sugar. Transfer to a greased 11x7 dish. Sprinkle with marshmallows.
  • In a small mixing bowl, cream butter, vanilla and remaining sugar.
  • Combine flour, baking powder and salt then add alternately with milk to the creamed mixture.
  • Beat just until moistened. Spoon over rhubarb/marshmallows.
  • Bake 350 degrees for 50-55 minutes or until topping is golden brown.
  • Serve warm.

¾ cup white sugar
2 tablespoons cornstarch
4 cups chopped rhubarb
1 tablespoon water
1 tablespoon butter, diced
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 tablespoon white sugar
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup butter
¼ cup milk
1 egg, beaten
2 tablespoons white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9 inch square baking dish.
  • In a saucepan, mix sugar and cornstarch for filling. Stir in the rhubarb and water. Bring to a boil. Cook and stir for 1 minute. Transfer to the prepared baking dish. Dot with butter, and sprinkle with cinnamon.
  • In a medium bowl, sift together flour, sugar, baking powder, and salt for topping. Cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, mix together milk and egg. Add all at once to dry ingredients, stirring just to moisten. Drop by teaspoonfuls on top of the rhubarb mixture. Sprinkle with sugar.
  • Bake for 20 minutes in the preheated oven, until crisp and lightly browned.

1/3 cup all-purpose flour
4 cups sliced fresh or frozen rhubarb, thawed (1/2-inch pieces)
2 cups halved fresh strawberries
2 tablespoons butter, cubed
CRUST:
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup canola oil
1/3 cup warm water
1 tablespoon 2% milk
1 tablespoon sugar
Vanilla ice cream, optional

Steps:

  • Preheat oven to 425°. In a large bowl, mix sugar and flour. Add fruit; toss to coat. Transfer to a greased 11x7-in. baking dish. Dot with butter., For crust, in a bowl, mix flour and salt. In another bowl, whisk oil and water; add to flour mixture, stirring with a fork until a dough is formed (dough will be sticky)., Roll dough between two pieces of waxed paper into an 11x7-in. rectangle. 1/2 cup shortening
1 large egg
