Steps:
- Heat the oven to 400°. Peel and finely chop the garlic. Cook the beef and garlic in the skillet over medium heat about 5 minutes, stirring occasionally, until the beef is brown; drain.
- Stir the Italian seasoning and spaghetti sauce into the beef. Spread 1/4 cup of the beef mixture in the ungreased square pan.
- Top with 2 noodles, placing them so they do not overlap or touch the sides of the pan because they will expand as they bake. Spread about 1/2 cup of the remaining beef mixture over the noodles.
- Spread about 1/2 cup of the cottage cheese over the beef mixture. Sprinkle with about 1/3 cup of the mozzarella cheese.
- Repeat layering twice more, beginning with 2 more noodles and following directions in steps 3 and 4 Sprinkle with the parmesan cheese.
- Cover with aluminum foil and bake 30 minutes. Carefully remove the foil, and continue baking about 10 minutes longer or until lasagna is bubbly around the edges and looks very hot. Let stand 10 minutes, so the lasagna will become easier to cut and serve.

- Preheat oven to 350°.
- In a mixing bowl, combine the egg, parmesan cheese, Italian seasoning, cottage cheese, and 1 cup mozzarella cheese; set aside.
- In a large skillet, brown the beef, onion, and garlic together until the beef is done; drain excess grease.
- Add water and all but 1 cup of spaghetti sauce to beef.
- Spread reserved spaghetti sauce into the bottom of a greased 13x9 inch pan.

- Heat the 2 tablespoons of olive oil for the sauce (see ingredients list for the sauce) in a pan and add chopped yellow onions and garlic, for 10 to 12 minutes until the onions and garlic are well sauteed.
- Once the onions and garlic are sauteed and no water is left (it's good to lightly brown the contents), add the butter and saute for few more minutes.
- Add the prepared onion garlic mixture to the marinara sauce and also add all the spice powders (onion, garlic, parsley, oregano), mix well and keep this prepared sauce aside.
- Cook the lasagna sheets according to instructions in the package. Make sure to use enough water (boiling water) to cover the lasagna sheets, or it won't get cooked properly. After you put the sheets in to the boiling water, give it a minute so the sheets will become slightly soft and you can gently press with a spatula so the sheets will get immersed in the water. If there is no enough water, make sure to add more water.
- Once the lasagna sheets are cooked, drain the hot water and I recommend adding some cold water to the same pan, which will help you to easily transfer the lasagna sheet from the pan. Transfer the cooked sheets to a foil greased with little oil.
- Once the sheets are transferred to the foil or any flat surface, grease your palm with some olive oil and sprinkle some olive oil over the sheets and gently grease each sheet with olive oil, which will help to prevent the sheets from sticking together.
- Preheat the oven to 375 degree Fahrenheit.
- Grease a large baking pan with oil(you may use a 13*9 inch baking pan or use any baking pan that can fit the sheets).
- Add few spoons of prepared sauce to spread over the baking pan.
- Add lasagna sheets on top of the sauce in a single layer.
- Add more sauce over the sheets and spread evenly.
- Add shredded cheese over the sauce in a single layer.
- Place the next layer of lasagna sheets in a single layer.
- Again, repeat the process by adding a single layer of sauce which is topped with enough cheese in a single layer.
- Repeat this process until the top layer of lasagna sheets are placed (do not add cheese above the top layers now).
- Once the topmost layers are placed in a single layer, add enough sauce and spread the sauce evenly.
- Cover the baking pan with foil and bake in the preheated oven for about 20 minutes.
- After 20 minutes of baking, remove the covering foil and top the lasagna with shredded cheese as desired.
- Cover the baking pan again with foil and bake for another 10 more minutes.
- After 10 more minutes of baking, open the pan and see if the cheese is melted enough. You may keep the pan opened, and bake for another 5 more minutes if needed so that the cheese will be bubbly and golden brown (do this only if you desire, you may also broil it for the final 3 to 4 minutes if you like).
- Allow the lasagna to cool down for few minutes, slice and serve!

- In a large skillet over medium-high heat, saute the hamburger, sausage and garlic until brown. Drain off the excess fat. Add the tomatoes with their juice, tomato paste, 1/2 teaspoon salt and some freshly ground black pepper. Stir together well. Simmer over low heat, uncovered, for 45 minutes, stirring occasionally.
- Meanwhile, bring a large pot of water to a boil. Add the olive oil and a dash of salt. Cook the lasagna noodles according to the package directions until al dente. Drain the noodles and lay them flat on a piece of aluminium foil to keep their shape.
- Preheat the oven to 350 degrees F.
- Grate the mozzarella cheese and set aside.
- Cut the basil into a chiffonade by stacking the leaves on top of one another, rolling them tightly and then cutting across. Finely chop the parsley. Add half the herbs to the meat mixture and stir together. In a medium bowl, combine the other half of the herbs, the cottage cheese, 1/2 cup of the Parmesan and the eggs, and stir together well.
- Now let's assemble the lasagna! Begin by laying 4 lasagna noodles in the bottom of a deep rectangular baking pan; the noodles should slightly overlap. Spoon half the cottage cheese mixture onto the noodles; spread to distribute evenly. Sprinkle half the mozzarella on top of the cottage cheese mixture. Spoon just under half the meat mixture on top of the mozzarella, and spread evenly, being careful not to disrupt the layers below. Now repeat the process, beginning with a layer of lasagna noodles, followed by the cottage cheese mixture, followed by the mozzarella and ending with a thick layer of the meat mixture.
- Sprinkle the remaining 1/2 cup Parmesan over the top. Bake until the lasagna is hot and bubbly, 35 to 45 minutes. Allow to stand 10 minutes before cutting into squares.

- 1. In a large skillet over medium heat brown the ground beef. Drain the grease. Add spaghetti sauce and simmer for 5 minutes.
- 2. In a large bowl, mix together the cottage cheese, 2 cups of the mozzarella cheese, eggs, half of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
- 3. To assemble, in the bottom of a 9x13 inch baking dish evenly spread 3/4 cup of the sauce mixture. Cover with 3 uncooked lasagna noodles, 1 3/4 cup of the cheese mixture, and 1/4 cup sauce. Repeat layers twice. Top with 3 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Add 1/2 cup water to the edges of the pan. Cover with aluminum foil.
- 4. Bake in a preheated 350 degree F(175 degrees C) oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.

- In a large frying pan, fry up the ground beef and onions together until the ground beef is no longer pink and the onions are soft and translucent.
- Drain the excess grease and add in the garlic. Sautee until the garlic is browned.
- Stir in the sauce and the water, remove from heat.
- Combine the cottage cheese, egg and Italian seasoning.
- In a 9x13 baking pan, spread 1/3 of the sauce mixture on the bottom. Lay three noodles on top.
- Spread half of the cottage cheese mixture on top of the noodles evenly. Top with a cup of mixed cheese.

- Preheat oven to 350 degrees. Spray a 9 x 13 inch baking dish with cooking spray.
- Combine the ground beef, Italian sausage, and onion in a large, deep sauce pan. Cook over medium high heat, breaking apart the meat with a spatula, until no pink remains. MOM'S LASAGNA
My mom's lasagna recipe, classic Italian-American meat lasagna with cottage cheese and mozzarella.

- Heat olive oil in a large heavy bottomed pot. Add onions and a good pinch of salt and sauté until soft and starting to brown. Add the garlic and cook until fragrant, about a minute.
- Add the ground beef and brown, breaking up the meat with a wooden spoon until no longer pink.
- Add the basil and oregano and mix to combine.
- Put the whole tomatoes in a bowl and crush by hand. Add to the meat and onion mixture along with the tomato sauce, tomato paste, water and a generous pinch of sugar. Season with salt and pepper. Bring to a boil and then immediately turn down heat and simmer with a lid on for about 1 1/2 hours, stirring occasionally. (My mom's recipe says to simmer for hours, an hour and a half is plenty.)
- Let cool and then refrigerate overnight. The sauce is always better the next day and now all you have to do is assemble the lasagna.
- Drain the cottage cheese in a fine mesh sieve over the sink until most of the liquid has drained, stirring gently several times. Takes about an hour or two.
- Preheat oven to 350º
- In a 11 X 15 lasagna pan, ladle in some sauce to cover the bottom of the pan. Arrange 6 noodles, overlapping slightly, over the sauce in the bottom of the pan. Next, spoon half of the drained cottage cheese over the noodles. Sprinkle half the shredded mozzarella over the cottage cheese. Then generously spoon some sauce over the cheese.
- Repeat with another 6 noodles, the remaining cottage cheese and follow with the remaining mozzarella. Generously spoon more sauce over this layer.
- Top with 6 more noodles. Spoon sauce over entire top of lasagna noodles and also spoon some down the corners and edges. All the noodles should be covered.
- Sprinkle with some grated parmesan and then cover pan with foil.
- Bake for 45 minutes and then remove the foil and bake, uncovered, for another 15 minutes.
- Let lasagna rest 10 minutes or so before serving. Enjoy.

- Heat 1 tablespoon of olive oil in a large heavy Dutch oven or kettle over medium-low heat. Add onions, 1/2 of the garlic and pancetta; cook and stir 8 minutes, or until onions are translucent and pancetta is lightly browned. Season with kosher salt and pepper. Raise heat to medium-high and add the wine; cook until mostly evaporated, about 10 minutes. Add tomatoes along with their juice. Stir in warm water and tomato paste and bring to boil; reduce heat and simmer 30 minutes, stirring occasionally.
- While the sauce simmers, combine 1/4 cup of the pecorino Romano cheese, 1/4 cup of the chopped parsley, remaining minced garlic and 2 of the eggs in a large bowl. Add ground beef and season with kosher salt and pepper. Combine mixture with your hands until well blended.
- Heat remaining olive oil in a large skillet over medium-high heat. Add Italian sausage and crushed red pepper flakes; cook and stir until lightly browned. Transfer to clean bowl with a slotted spoon and pour off all but enough oil to coat the bottom. To the same skillet, add ground beef mixture (no need to wipe it out); cook and stir, breaking mixture up until lightly browned, but not quite cooked through. - Once the sauce has simmered for 30 minutes, preheat the oven to 350˚F.
- In a large bowl, combine cottage cheese, remaining 2 eggs, remaining pecorino Romano cheese and parsley, and 1/2 of the mozzarella. Season mixture with kosher salt and pepper and thoroughly combine.
- Spoon a thick layer of sauce into a 9-by-12-inch lasagna pan and spread evenly. Cover with one layer of noodles. Spoon 1/4 of the remaining sauce evenly over noodles followed by 1/3 of the cottage cheese mixture. Repeat for 2 more layers. Top with a final layer of noodles, and cover with the remaining sauce. TRADITIONAL LASAGNA
My family first tasted this rich, homemade lasagna recipe at a friend's home on Christmas Eve. We were so impressed that it became our own holiday tradition as well. - In a large skillet over medium heat, cook and crumble beef and sausage until no longer pink; drain. Add next 7 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring occasionally. Adjust seasoning with additional salt and pepper, if desired., Meanwhile, in a large bowl, lightly beat eggs. Add parsley; stir in cottage cheese, ricotta and Parmesan cheese. , Preheat oven to 375°. Spread 1 cup meat sauce in an ungreased 13x9-in. baking dish. Layer with 3 noodles, provolone cheese, 2 cups cottage cheese mixture, 1 cup mozzarella, 3 noodles, 2 cups meat sauce, remaining cottage cheese mixture and 1 cup mozzarella. Top with remaining noodles, meat sauce and mozzarella (dish will be full)., Cover; bake 50 minutes. Uncover; bake until heated through, about 20 minutes. Let stand 15 minutes before cutting.

- Heat oven to 375°F.
- Brown meat with garlic and oregano in large saucepan. Stir in pasta sauce; simmer on medium-low heat 5 min., stirring occasionally. Remove from heat; stir in tomatoes.
- Mix egg, cottage cheese and Parmesan until blended. Spread 1/2 cup pasta sauce mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray. Top with layers of 3 noodles, half the cottage cheese mixture, 1/2 cup mozzarella and 1 cup of the remaining pasta sauce mixture; repeat layers. Top with remaining noodles and pasta sauce mixture; cover.
- Bake 30 min. or until heated through. Top with remaining mozzarella; bake, uncovered, 5 min. or until melted. Let stand 5 min. before serving.

LASAGNA WITH COTTAGE CHEESE

Steps:
- Gather all the ingredients.
- Cut onion into small pieces.
- Cook lasagna noodles. Follow directions on the package. Drain water rinse, and set aside to use later.
- Heat a pot and add ground beef. Break up chunks of meat and cook until browned and no longer pink. Drain off fat and then return to the stove.
- Add onions, garlic powder, salt, and cilantro flakes. Cook for 3-5 minutes. Then add the pasta sauce. Lower heat and simmer for 10 minutes.
- In a bowl add cottage cheese, egg, and 1/2 cup of parmesan cheese. Mix together.
- Add a small amount of sauce to the lasagna pan. Layer lasagna noodles on top, followed by cottage cheese mixture, and meat sauce. Repeat the steps until you get to the top.
- When at the top add meat sauce and then top with the rest of the parmesan and mozzarella cheese.
- Cover and bake for 25 minutes.
- Remove from oven, uncover, and then return to the oven and bake for an additional 25 minutes.
- After done cooking remove the lasagna from the oven and let it sit for 10-20 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
- In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
- Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.
