¼ cup margarine
2 tablespoons olive oil
½ medium chopped onion
2 tablespoons minced garlic
1 pound small frozen shrimp, thawed
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup shredded mozzarella cheese

Steps:

  • Bring a pot of water to a boil, and cook the broccoli 5 minutes, just until tender. Drain, and set aside.
  • Bring a large pot of lightly salted water to a boil. Add angel hair pasta, cook for 4 minutes, until al dente, and drain.
  • Heat the margarine and olive oil in a skillet, and cook the onion and garlic until tender. Mix in broccoli and shrimp, and cook until heated through. Toss with the cooked pasta, season with salt and pepper, and top with cheese to serve.

Kosher salt
8 ounces whole-wheat spaghetti
4 teaspoons vegetable oil
2 tablespoons finely chopped scallions (white and light green parts only)
2 tablespoons minced peeled ginger
3 cloves garlic, minced
1 pound medium shrimp, peeled and deveined
1 bunch broccoli, cut into florets, stems peeled and thinly sliced
2 cups low-sodium mushroom or vegetable broth
1 tablespoon cornstarch
1 tablespoon low-sodium soy sauce
2 teaspoons toasted sesame oil

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and transfer to a large bowl.
  • Meanwhile, heat a large nonstick skillet over medium heat. Add 2 teaspoons vegetable oil, then add half each of the scallions, ginger and garlic; stir-fry until the scallions are wilted, 1 to 2 minutes. Add the shrimp and stir-fry until just cooked through, about 5 minutes. Transfer the shrimp mixture to a plate using a slotted spoon.
  • Add the remaining 2 teaspoons vegetable oil to the skillet. Add the remaining scallions, ginger and garlic; stir-fry 1 to 2 minutes, then add the broccoli and cook, tossing to coat, 1 to 2 more minutes. Add 1/2 cup broth. Cover and cook until the broccoli is just tender, 5 to 7 minutes.
  • Whisk the cornstarch and 1 tablespoon water in a bowl, then whisk in the remaining 1 1/2 cups broth, the soy sauce and sesame oil. Return the shrimp to the skillet; add the broth mixture. Bring to a simmer and cook, stirring, until thickened, 1 to 2 minutes. Add the pasta and toss to coat.

2 lbs broccoli, cut into bite-size florets
4 tablespoons extra virgin olive oil
1 teaspoon whole coriander seed (or 1/2 teaspoon ground)
1 teaspoon whole cumin seed (or 1/2 teaspoon ground)
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1/8 teaspoon hot chili powder
1 lb large shrimp, shelled and deveined
1 1/4 teaspoons lemon zest (from 1 large lemon)
lemon wedge, for serving

Steps:

  • 1. Preheat oven to 425 degrees. In a large bowl, toss broccoli with 2 tablespoons oil, coriander, cumin, 1 teaspoon salt, 1/2 teaspoon pepper and chili powder. In a separate bowl, combine shrimp, remaining 2 tablespoons oil, lemon zest, remaining 1/2 teaspoon salt and remaining 1/2 teaspoon pepper.
  • 2. Spread broccoli in a single layer on a baking sheet. Roast for 10 minutes. Add shrimp to baking sheet and toss with broccoli. Roast, tossing once halfway through, until shrimp are just opaque and broccoli is tender and golden around edges, about 10 minutes more. Serve with lemon wedges, or squeeze lemon juice all over shrimp and broccoli just before serving.

1 tablespoon lemon rind (grated and divided)
1 tablespoon fresh lemon juice
1/2 teaspoon salt (divided)
1/2 teaspoon fresh ground black pepper (divided)
1/2 teaspoon garlic (minced)
1 1/2 lbs large shrimp (peeled and deveined)
cooking spray
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 lemon, cut into wedges (optional, to serve)

Steps:

  • Preheat oven to 425°F.
  • Microwave broccoli florets for 1-2 minutes (depending on your microwave wattage). Immediately arrange broccoli florets in a single layer on a jelly-roll pan coated with cooking spray.
  • Combine 1 1/2 teaspoons lemon rind, juice, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and minced garlic in a medium bowl. Add shrimp; toss to combine.
  • Arrange shrimp among the broccoli florets already in a single layer on the jelly-roll pan. Roast at 425° for 8 minutes, or until shrimp is done.
