IRISH SPLIT PEA SOUP

Apparently what distinguishes Irish Pea Soup from German Pea Soup is the addition of a potato and optional cream!

1 c split peas, picked through and rinsed
1 small onion, diced
1 medium carrot, chopped
1 stalk(s) celery, chopped
1 Tbsp crumbled bacon bits (the real kind)
1 1/2 c chicken stock or water
1 sprig(s) fresh thyme (or 1/2 tsp. dried)
1 bay leaf
1 medium potato, diced
4 oz ham, diced (or smoked pork chop- if there's a bone, cut off the meat and put the bone in the soup while it simmers)
1/2 c half and half (or evaporated milk) optional
salt and pepper, to taste

Steps:

  • 1. Spray your pan with Pam® or similar.Add the onion, carrots, and celery to the pan and cook for 3 to 4 minutes until the onion is soft but not brown. Add the bacon crumbles to the pan with the water.
  • 2. Add the peas to the pan with the thyme, bay leaves, potato, and ham or pork bone if you have one and bring to a boil. Lower the heat, cover, and simmer for 1 hour. (Check to see if more water needs to be added.)
  • 3. Remove the thyme, bay leaves and bone. Process the soup with an immersion blender or food processor until desired texture. Return the mixture to the pot, add half and half, if using, and the diced ham/smoked pork. Reheat gently. Season with salt and black pepper. Ladle into soup bowls and serve.

2 -3 lbs pig's feet, cut up
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 cup water
1/8 teaspoon nutmeg
2 tablespoons fat (or Crisco for health nuts) or 2 tablespoons lard (or Crisco for health nuts)
4 -6 cups warm water
1 cup chopped onion, sauteed
4 tablespoons browned flour

Steps:

  • Mix together salt, cinnamon, cloves and nutmeg. Coat pig's feet with mixture.
  • Melt fat in Dutch oven. Brown meat until dark brown (this is the secret to a successful stew.) When meat is well grilled, add warm water and onions. Cover and simmer until meat is tender, about 2 hours. Remove meat.
  • Mix together grilled flour and 1/2 cup water.
  • Pour into broth, stir until sauce thickens.

1/2 cup olive oil
8 ounces pancetta, diced small
1 tablespoon garlic, chopped
1 tablespoon shallot, chopped
1 medium onion, diced small
3 stalks celery, diced small
2 carrots, diced small
1 (16 ounce) bag dried split peas, sorted and rinsed
2 quarts chicken stock
1 tablespoon thyme, fresh and chopped
1 tablespoon salt
1 1/2 teaspoons black pepper
4 -6 ounces fresh spinach

Steps:

  • In a stockpot, heat olive oil over medium heat. Add pancetta and cook out all the fat. Add garlic and shallot, saute until tender. Add onion, celery and carrot, saute until tender.
  • Stir in split peas; combine well. Add chicken stock, thyme, salt and pepper. Bring to a boil. Reduce heat and simmer until peas are soft and are falling apart. Remove from heat and cool slightly.
  • Place a few ladles of soup into a blender and add a couple handfuls of spinach. Blend until spinach is incorporated. Place soup in a second pot. Repeat with remaining soup and spinach. Warm soup over very low heat.

3 tablespoons dark soy sauce
2 tablespoons rice wine
3 slices ginger
3 green onions
1 tablespoon barbecue sauce
1 teaspoon sugar
star anise
1 piece orange rind
1/4 teaspoon pepper
1 pint water

Steps:

  • Combine all ingredients and simmer for 1 1/2 hours.
