1/2 cup vegetable oil
3 onions, diced small
8 cloves garlic, minced
Two 10-pound cans ketchup
6 cups amber beer
6 cups cider vinegar
4 cups brewed coffee, such as Folgers
4 cups molasses
4 cups brown sugar
1 cup OJ concentrate
1 cup ancho chile puree
1/2 cup Worcestershire sauce
4 tablespoons ground cumin
2 tablespoons cocoa powder
2 tablespoons New Mexico chile powder
2 tablespoons salt
2 teaspoons ground black pepper
12 ounces tomato paste

Steps:

  • Heat the oil in a large stockpot over medium-high heat. Add the onions and saute, stirring constantly. Add the garlic and saute, about 20 seconds. Add 8 cups water, the ketchup, beer, vinegar, coffee, molasses, brown sugar, OJ concentrate, ancho chile puree, Worcestershire, cumin, cocoa powder, New Mexico chile powder, salt, pepper and tomato paste. Bring the mixture to a simmer. Cook on medium-low heat, stirring occasionally, about 1 hour.
  • Remove the sauce from the heat and puree with a hand blender. Pass the mixture through a mesh strainer into containers. Cool and store the sauce.

100ml cider vinegar
100g dark muscovado sugar
1 tbsp Worcestershire sauce
1 tsp smoked paprika
juice ½ orange
2 tsp liquid smoke (optional, we used Stubb's Hickory Liquid Smoke, available from Waitrose)
1 garlic clove , crushed
15g butter

Steps:

  • Combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar and salt have dissolved and the sauce is glossy. Remove from the heat, transfer to a jar, and leave to cool. Will keep in the fridge for up to 2 weeks.

6 -8 lamb chops, excess fat trimmed
2 teaspoons fresh rosemary, chopped
2 teaspoons fresh thyme, chopped
4 baby carrots
2 parsnips
2 potatoes
6 -8 garlic cloves, whole with skin on
6 small onions (but not shallots)
4 -6 tablespoons olive oil
150 ml stock
salt & freshly ground black pepper

Steps:

  • Pre-heat the oven to gas mark 7/425°F/220°C.
  • Pat dry the lamb chops and place them onto an oiled tray.
  • Season the lamb with salt and pepper and drizzle with olive oil and sprinkle half of the chopped herbs and give it all a good toss.
  • Pop the tray on the middle shelf of the oven for about 10-15 minutes, till you prepare the vegetables.
  • To prepare the vegetables - peel and chop the carrots and parsnips in half lengthways.
  • Peel and chop the potatoes in half lengthways and then cut each half into 4 wedges.
  • With the onions, peel the skin off but do not slice them. Make cuts not all the way down to the roots but about 3/4 way - make cuts into eighths so what you have are onions slightly opened up like water lilies.
  • Leave the garlic cloves whole with their skin on.
  • Put all the chopped vegetables, onions and garlic cloves in a bowl.
  • Add in the rest of the chopped herbs, season with salt and pepper and sprinkle in the oil and toss them well.
  • Remove the chops from the oven, arrange the vegetables all around the meat and return the tray to high shelf of the oven and cook for a further 35 minutes or until both the meat and vegetables are tender.
  • Remove them from the oven and cover the tray with foil to allow the meat to rest for about 20 minutes.
  • Transfer the chops and vegetables onto a serving plate.
  • Scrape and pour the remaining juices from the tray into a saucepan.
  • Pour in the stock and let it simmer and bubble over medium heat for about 5 minutes.
  • Pour the gravy into a jug and serve along with the lamb chops and vegetables.

1 teaspoon cornstarch

Steps:

  • Heat the oil in a saucepan over medium heat, and saute the onion until tender and golden brown. Stir in garlic. Mix in Worcestershire sauce, vinegar, molasses, and mustard. Cook and stir 5 minutes, then mix in ketchup, cold water, and cornstarch. Reduce heat to low, and continue cooking 10 minutes, until thickened.

1 tbsp olive oil
1 onion, finely chopped
400g can chopped tomatoes
3 garlic cloves, finely chopped
85g brown sugar
3 tbsp malt vinegar
2 tbsp Worcestershire sauce
1 tbsp tomato purée

Steps:

  • Heat oil in a saucepan and add the onion. Cook over a gentle heat 4-5 mins, until softened. Add the remaining ingredients, season and mix. Bring to the boil, then reduce heat and simmer for 20-30 mins, until thickened. For a smooth sauce, simply whizz the mixture in a food processor or with a hand blender for a few seconds.
