Broccoli & pea soup with minty ricotta image

1 tbsp olive oil , plus extra for drizzling
1 onion , finely chopped
2 celery sticks, chopped
1 garlic clove , crushed
200g broccoli , broken into florets
150g fresh or frozen peas
500ml hot low-salt vegetable stock
1 lemon , zested and juiced
100g ricotta
1 tbsp finely chopped mint , plus a few whole leaves to serve
1 tbsp toasted pine nuts
2 slices bread , to serve (optional)

Steps:

  • Heat the oil in a flameproof casserole pot and fry the onion and celery for 10 mins. Add the garlic and fry for 1 min more.
  • Add the broccoli, peas and stock, bring to a simmer and cook, covered, for 10-15 mins, or until the broccoli is tender. Tip the mix into a blender and blitz until smooth, or use a hand blender. Season. Stir in half the lemon zest and juice, then taste, and add the rest, if you like.
  • Mix the ricotta with the mint and a pinch of salt. Ladle the soup into bowls, then top with the minty ricotta and the pine nuts. Drizzle over the extra olive oil and scatter with mint leaves, then serve with sliced bread, if you like.

1 tablespoon butter
3 leeks (white and pale green parts only), thinly sliced
5 pounds potato, peeled and thinly sliced
2 quarts chicken broth
3 cups frozen peas
1 pinch dried tarragon
3 cups milk
salt and ground black pepper to taste

Steps:

  • Melt butter in a large pot over medium-high heat. Cook and stir leeks in the melted butter until tender, 5 to 7 minutes.
  • Stir potatoes and chicken broth into the leeks and bring to a boil; reduce heat to medium-low, cover the pot, and simmer until potatoes are tender, about 12 minutes.
  • Stir peas and tarragon into the soup; simmer until peas are tender, about 5 minutes.
  • Pour the soup into a blender, filling the pitcher no more than half full.
  • Hold down the lid of the blender with a towel and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup in the pot.
  • Pour milk into the pureed soup and bring to a simmer over medium heat until heated through. Season with salt and black pepper.

1 tbsp rapeseed oil
1 onion , finely chopped
1 large garlic clove , crushed
400g broccoli , chopped into small florets
300g frozen peas
200g chard , chopped
1l low-salt veg stock
½ small bunch of basil , chopped
small bunch of dill , chopped
1 lemon , zested and juiced
2 tbsp pumpkin seeds , toasted

Steps:

  • Heat the oil in a large saucepan. Add the onion and fry for 8 mins until soft and translucent. Add the garlic and cook for 1 min more. Tip in the broccoli, peas and chard, then pour over the stock and bring the mixture to the boil. Reduce the heat to a simmer, cover and cook for 25 mins.
  • Stir through the herbs, lemon zest and juice, then blitz the soup with a stick blender until completely smooth. Ladle into bowls and serve with the toasted pumpkin seeds scattered over the top.

My Broccoli and Pea Soup is colourful, nutritious and full of fresh flavour. The sweetness of the peas mellows the earthy taste of broccoli, complemented by the addition of fresh-tasting lemon and fragrant basil. It is quickly and easily made, as well as being warm and nourishing. In addition, it is gluten-free and vegan, making it ideal for many people with specific dietary requirements.

1 tbsp extra virgin olive oil (See Notes 1 and 2)
1 medium brown/yellow onion - finely chopped
1 large garlic clove - crushed (See Note 3)
1 large broccoli head - broken into florets and the stalk finely chopped. (See Notes 4 and 5)
2 cups (240 g) frozen peas
3 cups (750 ml) vegetable stock (See Note 6)
1/4 cup fresh basil leaves
1 tsp lemon zest (See Note 7)
1 tsp lemon juice
sea salt and freshly ground black pepper - to taste (See Note 8)
lemon zest and shredded fresh basil to garnish - optional.

Steps:

  • Add the finely chopped onion and oil to a medium-sized saucepan. Cook the onion in the oil over medium heat for 5 - 7 minutes, until the onion is soft.
  • Add the crushed garlic and finely chopped broccoli stalk and cook for two minutes taking care the garlic does not burn.
  • Add the broccoli florets and stock and bring to the boil. Turn the heat down and cook for 2minutes.
  • Add the frozen peas and cook for 3 minutes, until the broccoli is tender. Do not over boil or the broccoli will lose its vibrant colour.
  • Take off the heat, add the lemon zest and fresh basil and blitz with a hand-held blender until the soup is smooth. See Note 9.
  • Check that the seasoning is to your taste. Stir through the lemon juice just before serving.
  • If you prefer a thinner soup add an extra 120 ml (1/2 cup) of stock. (See Note 9.)To serve, sprinkle with extra lemon zest, fresh basil leaves and freshly ground black pepper.

1 onion, chopped
2 cups leeks, sliced
8 ounces unpeeled potatoes, diced
4 cups vegetable stock
1 bay leaf
2 cups broccoli florets
1 1/2 cups frozen peas
2 -3 tablespoons chopped fresh parsley
salt
pepper
fresh parsley leaves, to garnish

Steps:

  • Put the onion, leeks, potatoes, stock and bay leaf in a large heavy saucepan and mix together well. Cover and bring to a boil over medium heat. Lower the heat and simmer, stirring frequently, for 10 minutes.
  • Add the broccoli and peas, cover and return to a boil. Lower the heat and simmer, stirring occasionally, for another 10 minutes.
  • Set aside to cool slightly. Remove and discard the bay leaf. Process the soup in a blender or food processor in batches if necessary, until you have a smooth puree.
  • Add the parsley, season to taste with salt and pepper and process again briefly. Return to the saucepan and reheat gently until piping hot. Ladle into heated soup bowls and garnish with parsley leaves. Serve immediately.
  • Note: If you prefer, cut the vegetables finely and leave the cooked soup chunky rather than pureeing it.
  • Note: Substitute frozen or drained, canned corn kernels for the frozen peas.

2 leeks , finely sliced
4 small garlic cloves , crushed
650-800ml hot veg stock
80g watercress
400g frozen peas
1 small lemon , zested and juiced
small bunch of parsley , finely chopped
dairy-free crème fraîche and crusty bread, to serve (optional)

Steps:

  • Heat the oil in a large saucepan over a medium heat. Add the leeks and garlic and fry for 7-10 mins or until softened and translucent.
  • Pour in the hot stock and simmer for 5-10 mins. Stir through the watercress, reserving a few leaves for garnish, then the peas, and cook for 5 mins until wilted. Use a hand blender or processor and whizz until smooth. Stir through the lemon juice and zest, then season to taste. Stir through half the parsley. Ladle into bowls and top with the remaining parsley, reserved watercress and a drizzle of olive oil. Swirl through some crème fraîche, then serve with crusty bread, if you like.

1 tablespoon olive oil
1 tablespoon unsalted butter
2 medium leeks, white and light green parts only, thinly sliced
1 medium baking potato, peeled and cut into 1-inch pieces
1 garlic clove, thinly sliced
3 cups low sodium chicken broth or 3 cups vegetable broth
3/4 teaspoon salt
1 pinch fresh ground pepper
1/4 cup half-and-half (optional)
1/4 cup snipped chives

Steps:

  • 1. Separate broccoli stems from florets. Using a vegetable peeler, peel stems to remove tough outer layer, then slice into 1/4 inch thick "coins." Break or cut the florets into small pieces. Reserve stems and florets separately.
  • 2. In a medium saucepan, heat oil and butter over medium heat. Add leaks and cook, stirring often, until softened and fragrant, about 3 minutes.
  • 3. Add broccoli stems, potato, and garlic, and cook 2 to 3 minutes.
  • 4. Add 3 cups of water, broth, salt, and pepper; bring to a boil.
  • 5. Reduce heat; cover partially, and simmer until broccoli and potato are tender, about 12 minutes.
  • 6. Add florets, bring to a boil and then simmer 5 minutes. Transfer soup in batches to a blender or food processor, and puree until smooth.
  • 7. Return soup to saucepan; add half and half and chives, and reheat briefly.

375g leeks, thinly sliced
400g potatoes, peeled and cut into medium chunks
2 garlic cloves, chopped
2 tsp vegetable bouillon powder
340g broccoli, roughly chopped
250ml milk
165g plain wholemeal flour
1 tsp baking powder
20g parmesan or vegetarian alternative, finely grated
1 tsp mustard powder
100ml milk
½ tbsp olive oil
65g soft goat's cheese
4 tomatoes, sliced, to serve

Steps:

  • Tip the leeks, potatoes and garlic into a large pan with the bouillon. Pour over 800ml boiling water, stir well, cover and simmer for 15 mins.
  • Add the broccoli to the pan, then cover and cook for 5 mins more until just tender. Blitz with a hand blender until smooth, then pour in the milk and blitz again. Add a little stock if the soup looks too thick.
  • To make the scones, heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Put the flour and baking powder in a bowl with the all but 1 tbsp of the parmesan and all the mustard powder. Gradually add the milk and oil, stirring with a cutlery knife until the mixture comes together. Shape into a log, about 16cm long and 6cm wide, and press the remaining parmesan on top. Cut in half along the length, then halve each of those pieces again to create four wedge-like scones. Arrange the scones on the tray and bake for 10-12 mins until golden.
  • If you're following the Healthy Diet Plan, reserve two of the scones for another day. Will keep covered for up to three days. Halve the remaining two and top with half the goat's cheese and half the tomato. Ladle half the soup into two bowls and serve with the scones. The remaining soup will keep chilled for up to three days.

2 medium leeks, finely chopped (white and tender green part only)
1 tablespoon butter
2 bunches broccoli (about 2 lbs)
8 garlic cloves, sliced
1/2 cup olive oil
6 cups vegetable broth
1/2 teaspoon dried thyme
1/4 cup dry white wine
4 tablespoons fresh lemon juice, divided
1/2 cup sour cream
1 lemon, zest of
1/4 cup fresh chives, chopped
1/4 cup parmesan cheese, freshly grated
1/4 cup shredded cheddar cheese

Steps:

  • Melt butter in skillet over medium heat. Add leeks and cook for 3 minutes until soft. Add garlic and cook 1 minute more. Scrape leeks and garlic into slow cooker.
  • Cut off the broccoli florets and chop them. Cut two inches off bottom of the stem. Peel the remainder of the stems and then slice and chop them. Add chopped broccoli to the slow cooker, along with the olive oil, vegetable broth, thyme, white wine and 2 tablespoons of lemon juice. Add salt and pepper to taste. Cover and cook on LOW for 5-6 hours.
  • Meanwhile, in a small bowl, mix the sour cream, remaining 2 tablespoons lemon juice, lemon zest, chives and Parmesan cheese. Season it with salt and pepper. Refrigerate until ready to use.
  • When the soup is finished, transfer it in batches to a food processor or blender and puree until smooth. Taste the soup and adjust seasonings if necessary. Stir in half of the lemon chive cream. Ladle into bowls and serve with a dollop of remaining cream and some shredded cheddar cheese, if desired.
