A delicious spaghetti sauce with red wine, Italian sausage, garlic and onions. The best I have ever had -- easy and delicious! Use a large, flat-bottomed saucepan so that the flavors can mingle.

RESTAURANT STYLE SPAGHETTI SAUCE WITH SAUSAGE
It's easy to make restaurant-style Spaghetti Sauce using just a few ingredients. Adding sausage makes the sauce even more flavorful, but if you don't eat meat its okay to leave it out. This is the recipe I used throughout my long restaurant career.

- In a large heated skillet or saucepot add olive oil and sausage. Saute sausage on both sides until it browns.
- When the sausage has browned add the diced onion and chopped garlic. Continue cooking until the onions are translucent, but do not allow them to burn!
- Add crushed tomatoes, rinse cans with just a little water and add to the sauce (if crushed tomatoes are not available use whole tomatoes and crush by hand or with an immersion blender).
- add chopped basil, sea salt and black pepper to taste (don't over season, you can always add more later). If you choose to add sugar now is the time to add it.
- After your sauce has reached a boil, reduce the heat to simmer and continue to cook for at least two hours. If you've got the time let it simmer for 4-6 hours for an amazingly rich tomato sauce.

- Heat a large dutch oven or soup pot to medium-low heat (You want to preheat the pot well, so be patient. Long moderate heat will create a pan hot enough to brown, without being so hot that it sizzles and pops).
- Thoroughly salt the pork neck bones with 1 1/2 Tablespoons of salt and add 1 Tablespoon of olive oil to the pan. Brown pork bones in batches. You do not have to cook through. Just get some color on all sides. Be patient. This takes time, usually about 40 minutes for me. I add a little more olive oil with each batch as it tends to disappear. Don't overcrowd your pan or they won't brown. Set aside the browned bones.
- In the now empty pot (wonderfully laden with pork drippings), add a little more oil if your pan is dry and then your minced garlic. Cook gently for less than a minute and then return pork bones to the pot.
- Pour in 4 cans of crushed tomatoes, basil, oregano, red pepper flakes, water and another 1/2 teaspoon of salt.
- Bring to a bubble and then reduce to a gentle simmer. Simmer for 4 hours. Remove the lid and simmer an additional 30 minutes to an hour.
- Remove pork bones to a cutting board to cool. Taste sauce and adjust seasoning (i.e. add more salt most likely).
- Once the pork bones have cooled, pick the meat from the bones. You can either add the meat back to the sauce or reserve it for one especially meaty ragu-style sauce.

- Crush the garlic with the flat side of a knife.
- Bring the extra virgin olive oil (and lard, if using) to medium high heat, then add the garlic and chopped parsley.
- After a minute, add the ground beef and break up with a wooden spoon. Add some salt, and cook until it begins to dry up, then add the tomato passata/purèe/chopped tomatoes of your choice.
- If using Mutti, they tend to be thick, so add about ¾ cup (6 oz) of water or until the bottom line of the jar (shake to rinse) then add to the pot. If you're using another brand, rinse the can/jar with a little less water, unless it's very thick.
- Put the burner on high to bring the sauce to a simmer, and add more salt. Don't be afraid to add Kosher/sea salt as I can guarantee you will have much less sodium in this sauce than a jar of store-bought.
- Lower the heat so that the sauce simmers gently for about an hour, stirring occassionally (so that the sauce won't stick). Taste for seasoning after about 30 minutes, and add salt if needed.
- When the sauce is ready, check once again for seasoning. Add salt and pepper as desired, and a generous amount of fresh basil, torn into pieces.

BEA'S ITALIAN STYLE SPAGHETTI SAUCE
This is a family favourite. I've been making this for years, but had never taken the time to write it down. I finaly decided to take the time to type it up on my laptop as I was putting it together. I'm glad I did, now whenever someone asks for my recipe, I'll send them here, lol. I use the UNICO brand name sauce in this recipe, I have tried others but the sauce does not turn out as good. The amount of ml is per can, so 4- 680 ml cans sauce = 680 ml x 4, NOT 680 ml total for recipe. My appalogies to gertc96 for the confusion about the pepper. I typed in that ingredient twice without reallizing it. It is fixed now for others who will make this recipe. ;)

HOMEMADE CHUNKY SPAGHETTI SAUCE
We used to have this incredible Russian restaurant here and they used to make something similar to this. I decided when they went out of business that I would try to replicate one of their fabulous dishes. You may add or subtract any of the veggie ingredients to you liking. It seems to be if you add more veggies of various kinds, you may get a pasta primavera, without the tomato paste.

- Get a skillet deep enough to hold the contents and the liquid of the sauce. Remember that the veggies will cook down so you need not use a pot unless you are doubling the recipe
- Quarter your mushrooms.
- Use about ½ a green pepper. You may use more or less depending on your taste for green pepper.
- Chunk the onion. Kind of like strips then cut the strips in half. This gives the sauce a great flavor.
- Heat your pan and add the olive oil. Make sure that the olive oil covers the bottom of the pan.
- Add your onion and sauté until they are almost clear.
- Add your green pepper and sauté until they are almost soft.
- Add your mushrooms and sauté until they are almost soft.
- If you are using zucchini, add now. This will take awhile to cook down so be patient.
- At this point you may need to add more oil or butter.
- When your veggies are at a good constancy, add 1-2 cans of diced tomatoes, 2 cans of sliced black olives, 2 pinches of dried basil, and the jalapeno or red pepper if you chose to use.
- Cover and let simmer for 30-45 minutes on low.
- Start cooking linguine
- By the time the linguine is done, so should be your sauce.
- Drain and serve linguine and cover with sauce.
RESTAURANT-STYLE PASTA SAUCE WITH ITALIAN SAUSAGE AND RED WINE
This sauce can also be made in your slow cooker. Simmer it on low for 4 to 6 hours. Serve the sauce over spaghetti, spaghetti squash, your favorite dairy-free ravioli, or other pasta. Keep in mind, the taste of this sauce depends a lot of the sausage you use. Choose a good quality sausage with a flavor that you enjoy.

- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.

- Use a sharp vegetable peeler and with a gentle, back and forth sawing motion, peel the tomato skin. Tip: the sawing motion should be very slight, just a quick back and forth motion moving along tomato. Cut the tomatoes in half and use your finger to flick out the seeds.

Heat a small saucepan over low heat with 1/4 cup olive oil, garlic cloves, basil leaves and pepper flakes until the garlic is lightly browned. Keep the heat on low to allow the ingredients to warm slowly and release their flavors. Turn heat off and let cool for 10 minutes. The longer you let the oil sit, the more infused the oil. Strain the oil, discarding the solids.

- Make the sauce: one day ahead, if possible. Drizzle some olive oil in a large pot and heat over medium. Salt the beef and add to pot along with the chopped salt pork, and brown, about 10 minutes. Add onions, garlic and a generous pinch of salt, continue cooking until onions are softened, about another 10 minutes. Repeat with another layer of spaghetti, more sauce, the rest of the cheddar. Cover cheddar with remaining spaghetti. Ladle some more sauce over the top and then sprinkle with grated Romano cheese. So here's what you have, sauce, spaghetti, sauce, cheese, spaghetti, sauce, cheese, spaghetti, sauce, Romano.
- Cover with foil and bake in 350º oven for 45 minutes. Remove foil and bake another 15 minutes, until heated thoroughly and cheese is melted.
