These appetizers are simple to make and absolutely delicious. We love seafood here on the East Coast, so I make these often!

- Separate biscuits.
- Divide each biscuit into 3 parts.
- You will end up with 30 pieces.
- Place on a cookie sheet and bake 8-10 minutes.
- Spread generously with cream cheese.
- Sprinkle with seasoning salt.
- Top with crab meat.
- Top with grated cheeses.
- Sprinkle with dill.
- Bake or broil until cheese is melted.

CURRY CRAB APPETIZERS
We live in WA State, where Dungeness crab is readily available. Canned crab is okay, but fresh is so much better. Serve on small crackers or melba toast.

Steps:
- Use fresh crab if possible.
- If not, canned or frozen crab meat is acceptable, but not as good.
- Place crab in bowl, add onion, green pepper, and lemon juice; gently mix, trying not to break up the crab pieces.
- At this point, begin adding mayo to obtain the texture you seek- it should hold together, but not be mushy.
- The mayo should just serve as a binder.
- Then begin to add curry powder to taste; we like it very spicy, so I use about 2 Tblspn curry per pound of crab meat.
- Start small, taste& add more if you want it hot& spicy.

BABY BRIE CRAB APPETIZERS
This appetizer is so... good! Very easy and equally impressive to guests at your next party or for a great evening at home.

Steps:
- Heat oven to 350°F.
- Trim rind from outside edge of cheese.
- Cut crosswise into 6 strips. Trim rind from each strip.
- To form 30 pieces, cut the 4 longest strips each into 6 cubes.
- Cut the 2 shortest strips each into 3 cubes.
- In small bowl, combine crab meat, mayonnaise, pimiento and shallot.
- Arrange tartlet shells on large cookie sheet. Spoon crab mixture evenly into tartlet shells, about 1 teaspoons each. Top with cheese cube.
- Bake 5 minutes or until cheese is soft and melted.
- Sprinkle with chives.

- Split English Muffins in half.
- In a medium bowl, mix together butter, cheese, mayonnaise, garlic powder, and Old Bay Seasoning.
- CAREFULLY add crab meat, being careful not to break it up to much.
- Spread crab mixture on muffins.
- Place muffin halves on cookie sheets and freeze.
- When ready to serve, remove from freezer and cut into quarters.
- Place under broiler until bubbly and lightly browned on top.

CRABPETIZERS - CRAB APPETIZERS, OF COURSE!
These little yummies are wrapped in wonton skins, fried, and served with a chipotle cream sauce. It's sort of like bites of crab enchiladas in wontons. *Helpful Nutritional Info:* One Billion Calories. ;) I honestly have no clue how many this turns out, but the sauce yield is 3 3/4 cups.

Steps:
- THE FILLING: Melt 1/2 cup butter in heavy large skillet over medium-low heat. Add mushrooms and shallot and cook until tender, stirring frequently, about 10 minutes.
- Add vermouth and bring to boil.
- Reduce heat and simmer until almost no liquid remains in pan, stirring occasionally, about 6 minutes.
- Melt remaining 1/2 cup butter in heavy medium skillet over medium heat.
- Add crab and stir until heated through.
- Combine with mushrooms. Mix in 3/4 cup chipotle sauce, chives and pepper and bring to boil, stirring constantly. (Can be prepared 1 day ahead. Cool completely. Cover and refrigerate.) Set aside.
- Preheat oven to 350°F.
- Rewarm filling over low heat, stirring occasionally.
- THE SAUCE: Bring large pot of water to boil. Add chiles and boil until tender, about 15 minutes. Drain, reserving 1/4 cup cooking liquid.
- Puree chiles with 1/4 cup cooking liquid in blender. Strain through sieve. Set aside.
- Melt butter in heavy large skillet over medium heat.
- Add 1 tablespoon chipotle paste, onion, rosemary, pepper, shallot and garlic and stir 2 minutes.
- Add wine and boil until reduced by half.
- Add cream and boil until reduced to thin sauce consistency, stirring occasionally, about 10 minutes. Taste, adding more chipotle paste if desire.
- Add cornstarch mixture and boil 1 minute, stirring constantly. (Can be prepared 1 day ahead. Cool completely. Cover and refrigerate. Rewarm before using.).
- FILLING & COOKING THE WONTONS: Place 1 - 2 teaspoons filling in each wrapper and seal according to package directions, being careful to remove as much excess air as possible. Place single layer of wontons in hot oil (about 1/4" in bottom of wok) and fry 2 - 3 minutes until golden brown. Drain on paper bags or paper towels, and serve immediately with chipotle cream sauce.
