These appetizers are simple to make and absolutely delicious. We love seafood here on the East Coast, so I make these often!

1/2 pound processed cheese spread
3/4 cup butter, cubed
1 pound crab meat, shredded
1 can (4 ounces) mushrooms, chopped
2 packages English muffins, toasted lightly

Steps:

  • Melt cheese and butter; add crab meat and mushrooms. Spoon on quartered muffins. Place under broiler until slightly browned.

1 can flakey biscuits
8 ounces cream cheese
1/2 teaspoon seasoning salt
1 tablespoon chopped fresh parsley
1 1/2 cups crabmeat, chopped
1/2 lemon, juice of
1/2 cup cheddar cheese
1/2 cup monterey jack cheese
1 tablespoon fresh dill, chopped fine

Steps:

  • Separate biscuits.
  • Divide each biscuit into 3 parts.
  • You will end up with 30 pieces.
  • Place on a cookie sheet and bake 8-10 minutes.
  • Spread generously with cream cheese.
  • Sprinkle with seasoning salt.
  • Top with crab meat.
  • Top with grated cheeses.
  • Sprinkle with dill.
  • Bake or broil until cheese is melted.

We live in WA State, where Dungeness crab is readily available. Canned crab is okay, but fresh is so much better. Serve on small crackers or melba toast.

curry powder
1 lb crabmeat
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
mayonnaise
1 tablespoon fresh lemon juice

Steps:

  • Use fresh crab if possible.
  • If not, canned or frozen crab meat is acceptable, but not as good.
  • Place crab in bowl, add onion, green pepper, and lemon juice; gently mix, trying not to break up the crab pieces.
  • At this point, begin adding mayo to obtain the texture you seek- it should hold together, but not be mushy.
  • The mayo should just serve as a binder.
  • Then begin to add curry powder to taste; we like it very spicy, so I use about 2 Tblspn curry per pound of crab meat.
  • Start small, taste& add more if you want it hot& spicy.

1 (8 ounce) package alouette baby brie cheese
1 (6 ounce) can crabmeat, well drained
2 tablespoons mayonnaise
1 tablespoon diced pimento, drained (from 2 oz. jar)
1 tablespoon minced shallot
2 (2 1/8 ounce) packages frozen phyllo dough, tartlet shells
1 tablespoon chopped fresh chives

Steps:

  • Heat oven to 350°F.
  • Trim rind from outside edge of cheese.
  • Cut crosswise into 6 strips. Trim rind from each strip.
  • To form 30 pieces, cut the 4 longest strips each into 6 cubes.
  • Cut the 2 shortest strips each into 3 cubes.
  • In small bowl, combine crab meat, mayonnaise, pimiento and shallot.
  • Arrange tartlet shells on large cookie sheet. Spoon crab mixture evenly into tartlet shells, about 1 teaspoons each. Top with cheese cube.
  • Bake 5 minutes or until cheese is soft and melted.
  • Sprinkle with chives.

1 (5 ounce) jar Kraft Old English cheese spread, room temperature

Steps:

  • Split English Muffins in half.
  • In a medium bowl, mix together butter, cheese, mayonnaise, garlic powder, and Old Bay Seasoning.

1 lb cooked crabmeat, drained and picked over
1/4 cup snipped fresh chives
1/4 teaspoon fresh ground pepper
1 cup unsalted butter
1 teaspoon shallot, minced
1/2 cup dry vermouth
3/4 lb assorted fresh wild mushroom (such as porcini and shiitake, stemmed and thinly sliced)
wonton wrapper (1 package)
vegetable oil
12 dried chipotle chiles, stemmed (also remove seeds if you're a wuss like me)
1 teaspoon shallot, minced
1/2 teaspoon garlic, minced
1/2 cup unsalted butter
1 cup dry white wine
2 cups whipping cream
1/2 cup onion, diced
1/2 teaspoon cornstarch, dissolved into
1 teaspoon water
1 tablespoon fresh rosemary, minced
1 1/4 teaspoons fresh ground pepper

Steps:

  • THE FILLING: Melt 1/2 cup butter in heavy large skillet over medium-low heat. Add mushrooms and shallot and cook until tender, stirring frequently, about 10 minutes.
  • Add vermouth and bring to boil.
  • Reduce heat and simmer until almost no liquid remains in pan, stirring occasionally, about 6 minutes.
  • Melt remaining 1/2 cup butter in heavy medium skillet over medium heat.
  • Add crab and stir until heated through.
  • Combine with mushrooms. Mix in 3/4 cup chipotle sauce, chives and pepper and bring to boil, stirring constantly. (Can be prepared 1 day ahead. Cool completely. Cover and refrigerate.) Set aside.
  • Preheat oven to 350°F.
  • Rewarm filling over low heat, stirring occasionally.
  • THE SAUCE: Bring large pot of water to boil. Add chiles and boil until tender, about 15 minutes. Drain, reserving 1/4 cup cooking liquid.
  • Puree chiles with 1/4 cup cooking liquid in blender. Strain through sieve. Set aside.
  • Melt butter in heavy large skillet over medium heat.
  • Add 1 tablespoon chipotle paste, onion, rosemary, pepper, shallot and garlic and stir 2 minutes.
  • Add wine and boil until reduced by half.
  • Add cream and boil until reduced to thin sauce consistency, stirring occasionally, about 10 minutes. Taste, adding more chipotle paste if desire.
  • Add cornstarch mixture and boil 1 minute, stirring constantly. (Can be prepared 1 day ahead. Cool completely. Cover and refrigerate. Rewarm before using.).
  • FILLING & COOKING THE WONTONS: Place 1 - 2 teaspoons filling in each wrapper and seal according to package directions, being careful to remove as much excess air as possible. Place single layer of wontons in hot oil (about 1/4" in bottom of wok) and fry 2 - 3 minutes until golden brown. Drain on paper bags or paper towels, and serve immediately with chipotle cream sauce.
