DUCK SOUP (CZARNINA)



Duck Soup (Czarnina) image

This is an old Polish recipe that was used at Easter time. This recipe is traditionally served with home made noodles. If desired the fruit can be removed, leaving broth to serve with noodle. If you do not know where to purchase a duck, contact a local farmer or butcher. If you prepare your own poultry be sure to add 1/2 cup vinegar to duck blood to prevent coagulation.

1 (4 pound) wild duck, whole
4 cups duck blood
8 cups water
1 teaspoon salt
1 stalk celery, cut into 2 inch pieces
1 sprig chopped fresh parsley
1 cup heavy cream
5 whole allspice berries
2 whole cloves
16 ounces pitted prunes
½ cup raisins
1 tart apple - peeled, cored and chopped
2 tablespoons all-purpose flour
1 tablespoon white sugar
salt and pepper to taste
1 tablespoon fresh lemon juice

Steps:

  • Cover whole duck with water in large stock pot. Add salt, and bring to a boil. Skim off foam.
  • Place celery, parsley, allspice, and cloves in a cheese cloth bag, and add to stock pot. Cover and cook over low heat until meat is tender, approximately 1 1/2 hours.
  • Remove cheese cloth bag from stock pot. Remove duck. Discard bones, cut up meat, and return to the broth.
  • Mix in prunes, raisins and apple. Simmer for 30 minutes.
  • In a medium bowl, beat flour and sugar into cream until smooth. Beat in duck blood gradually. Add 1/2 cup hot soup stock to blood mixture, blending thoroughly. Pour mixture slowly back into stock pot, stirring constantly until soup comes to a boil. Season to taste with salt, pepper, lemon juice and vinegar.

Czernina is one of the oldest Polish soups, it's a regional speciality of Greater Poland and Pomerania. Czernina is brewed on duck stock, root vegetables, dried fruit and then enriched with duck blood. You may stumble upon this soup under another name, such as: czarnina, czarna polewka, czarna zalewajka, mała czarna.

1 duck carcass (including wings and neck)
3 medium (roughly 6 oz, 170 g) carrots
2 parsley roots (roughly 5.5 oz, 160 g)
1/2 celery root (roughly 5.5 oz, 160 g)
1 leek
1 onion (roughly 6oz, 170 g)
5 bay leaves
5 all-spice berries
3 black peppercorns
1 gallon of water (3.7 litres)
1 cup (250 ml) duck blood, fresh or frozen
3.5 oz (100 g) dried fruit: prunes, pears, apricots
½ cup (50-60 g) frozen pitted cherries
2-3 tbsp sour cream
1 tbsp all-purpose flour
1 tbsp wine vinegar
½ tsp sugar
½ tsp dried marjoram
Salt, to taste
Pepper, to taste
egg pasta noodles
springs of fresh marjoram

Steps:

  • [The day before] If you've purchased frozen duck blood, move it from the freezer to your fridge to let it thaw.
  • Prepare the vegetables, wash them and peel them. Peel the onion and char it directly over the burner grate, until fully charred.
  • Place the meat into a large cooking pot (5 qt/5 litre), turn on the heat to medium. Bring to boil, then reduce the heat significantly, so that the stock only simmers.
  • When a layer of scum appears, remove it with a spoon or a small strainer.
  • Add in the vegetables you've prepared, onion too. Then add the spices - 5 bay leaves, 5 all-spice berries, 3 black peppercorns and a teaspoon of salt. Cook for 1 hour on a low heat.
  • As you wait, grab a smaller cooking pot and drop in the dried fruit. Cover with water and leave for 30 minutes to soak. Add cherries in and cook until soft. Strain and set aside.
  • Let's return to the large pot of stock. Remove meat and vegetables from the pot and strain the stock into a smaller pot. Add in the fruit.
  • Make sure that the duck blood is at room temperature. Add 1 tablespoon of vine vinegar and half a tablespoon of sugar. Add one tablespoon of flour and 2-3 tablespoons of sour cream and mix together with a spoon, until well combined and the texture is smooth.
  • Start reheating the stock again. Slowly, gradually, pour in the blood mixture, stirring constantly. Make sure not to bring the soup to boil.
  • Season the soup with half a teaspoon of dried marjoram and some ground pepper. Have a taste - if you feel it needs more salt, it's a good moment to add more in.
  • Serve with pasta or dumplings, dried fruit pieces and garnish with fresh herbs, such as fresh marjoram.

1 1/2 -2 lbs pork neck bones
chicken broth to cover
1 qt prune juice
1 1/2 cups apple butter
1 lb prunes
1 Cup Raisins
1/4 cup vinegar
1 cinnamon stick

Steps:

  • Cook neckbones in chicken broth and skim fat that rises. cook on low heat for 2- 2 1/2 hours. Add prune juice, prunes, apple butter and cinnamon stick. Add 1/4 cup vinegar or more to taste. Continue to cook until neckbones are tender. Remove neckbones from soup. Serve with noodles.

This is Russell's speciality. This soup is easy to make, though it takes a bit of planning. It is a complete and filling meal made the way we do. The original recipe came from an Ian Parmenter cookbook, but I doubt he'd recognise his recipe now! Prep and cooking time are just a guess-and don't include overnight refrigeration of the stock or marinated meat-sorry about that! I like to add snow peas or asparagus to this sometimes too.

1 1/2 kg duck, breasts filleted and legs removed
1 (375 g) can chicken consomme
water (see step #4)
3 tablespoons soy sauce
2 tablespoons mirin
3 garlic cloves, crushed
1 medium onion, roughly chopped
1 cinnamon stick
1 whole star anise
1 teaspoon szechwan pepper, lightly crushed
2 tablespoons soy sauce
1 tablespoon mirin

1 whole star anise

3 -4 green onions, finely sliced
1 cup bean sprouts
2 cups cooked noodles (Hokkien are good)
100 g button mushrooms, halved and cooked
ginger, finely julienned
1 tablespoon thai-style sweet chili sauce

Steps:

  • Mix the ingredients of the marinade, and add the breast fillets and legs.
  • Refrigerate overnight.
  • To make the stock, put carcass portions and other stock ingredients into a large saucepan.
  • Add water to cover and bring to the boil.
  • Simmer gently for 45 minutes.
  • Strain, return stock to a clean pot and reduce over medium heat for 15 minutes.
  • Remove any remaining meat from the carcass and reserve.
  • Cool reduced stock, and refrigerate overnight.
  • When stock is cold, skim fat from the surface.
  • The stock is ready for use.
  • For the duck portions: remove from marinade, and cook in a hot oven (about 200c) for about 20 minutes for the breasts, and about 30 minutes for the legs.
  • You want the meat to be pink and juicy still, and the skin crispy.
  • Cool a little then shred the meat.
  • For the soup: Put stock in a large saucepan and bring to the boil.
  • Reduce heat, and add remaining soup ingredients including both lots of reserved duck meat.
  • Warm through and season to taste.
