This is my Grandmothers recipe for macaroni and cheese. Serves about 8 comfortably, more if its served as a side dish. I had to guess at the serving size as she says "depends on how many are eating and how hungry they are". Very tasty! This is creamy, cheesy kid pleasing (and adults love it too)!

3 cups uncooked macaroni (cook to your liking)
3 tablespoons butter
3 tablespoons flour
1 1/2 teaspoons salt
3 3/4 cups milk
4 cups cheddar cheese (shredded, packed)

Steps:

  • In saucepan, melt butter.
  • Remove from heat; blend in flour & salt.
  • Add milk; heat, stirring constantly until sauce thickens a little and is smooth.
  • Add 3 C cheese, heat until melted.
  • Combine macaroni & sauce in casserole pan.
  • Top with remaining cheese.
  • Bake in oven at 350 degrees for 30 minutes or until top of casserole is golden brown.

This is the Macaroni and Cheese that i grew up with. It is very easy to make and will add a delightful side dish to any meat such as Ham or Turkey. NOTE: When adding milk, do not make the noodles float.

1 cup elbow macaroni
1 cup milk (approx)
2 teaspoons salt (during boiling)
1 teaspoon salt (adjust for taste)
1 teaspoon pepper (adjust for taste)
16 ounces cheddar cheese (shredded)
1 large egg

Steps:

  • Boil 4-6 cups of water in a pot on the stove.
  • Add 2 tsp salt.
  • Add in 1 cup Elbow Macaroni noodles.
  • Boil for 7 minutes.
  • Preheat oven to 400F.
  • When finished boiling, pour macaroni into a strainer basket and then add to a 9"x9"x1.5" oven safe (preferably pyrex) dish.
  • Scramble the egg, then add the egg to the 1 cup of milk.
  • Add in salt and pepper, mix well.
  • Add to macaroni the milk, egg, salt, pepper mixture (Ensure the noodles do not float).
  • mix in 6-8 oz of cheese.
  • Add the remaining cheese to the top. Try to cover all the noodles on top.
  • Place dish in center rack in oven and bake for 30 minutes. Top layer of cheese should be slightly golden brown on the sides.
  • Remove from oven and let cool slightly and serve. May be microwaved for enjoyment again and again.

My granny was an amazing cook, but like most great chefs she did not follow any written recipe. Unfortunately, I came into cooking long after her passing and when the hunger pang hit me one Sunday...I began searching far and wide for her macaronni and cheese out there. This is as close as I've come.

1 1/2 cups elbow macaroni
1 cup heavy cream (light cream works fine, too)
1/2 teaspoon white pepper
2 tablespoons butter
2 tablespoons flour
1/4 cup milk
1/4 teaspoon paprika
2 1/2 cups grated sharp cheddar cheese
salt
additional butter

Steps:

  • Preheat oven to 350.
  • Boil elbow macaroni as directed on package. Set aside.
  • Melt butter in saucepan.
  • Blend flour, milk & cream. Cook stirring constantly until boil (2 to 3 minutes).
  • Remove from heat and add papricka, pepper, and 2 C of grated sharp cheddar cheese. Stir until cheese is melted.
  • Stir in cooked elbow macaroni and salt to taste.
  • Spoon final mixture into a small casserole dish.
  • Garnish top with remaining grated sharp cheddar cheese.
  • 'Dot' top with additional butter. (I usually dot with another 2 tbl of butter).
  • Bake uncovered for 25 to 30 minutes.

This is my grandmother's macaroni and cheese recipe that we all crave and only get to have twice a year, if we play our cards right. Fairly simple and straightforward. The key is cooking time more than anything.

1 pound elbow macaroni
4 pounds Cheddar cheese, sliced
1 ½ cups milk
5 eggs, or more to taste
1 tablespoon yellow mustard
ground black pepper to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Layer some of the macaroni in a 5-quart baking dish; top with a layer of Cheddar cheese. Continue layering macaroni and Cheddar cheese into the dish, ending with a Cheddar cheese layer.
  • Beat milk, eggs, and mustard together in a bowl; pour over macaroni mixture, ensuring milk mixture gets to all of the macaroni.
  • Bake in the preheated oven until cheese is melted and just before cheese around the sides gets crisp, 20 to 25 minutes. Season with black pepper.

There may be lots of recipes out there for macaroni and cheese, but this is the first one I ever found that you don't have to cook the macaroni before you bake it. It is also really simple to put together - all in the casserole dish you are baking it in! I got this from a newsletter of an organization. I take this to potlucks all the time and I always come home with none of it left. It's a dish I'm constantly handing out the recipe for; be sure not to use cheese that has been frozen and thawed because it will ruin the consistency of the dish. You can also cut down on the butter if you would like to lose some of the fat. This is not a real creamy cheesy type of macaroni and cheese, which can sometimes be a little too rich for our tastes. I've made those, but my family prefers this kind over any other.

3 tablespoons butter, melted
1/4 teaspoon pepper

  • Add milk. Do not stir.

From Southern to the Core a beautfful cookbook I received in the 2011 Cookbook Swap fro, BusyMomof3, this reminds me of the cheese and mac I learnt in high school nearly 40 years ago from an American teacher the only difference was we used Australian cheddar as American cheese, the only addition I personally made was to add a sprinkle of paprika, unfortunately due to dietary restrictions it is no longer made. In the cooking time I have included cooking the pasta (this could vary a little on variety - I allowed 15 minutes which would I think be the maximum)

3 tablespoons butter
3 tablespoons flour
2 cups milk
salt and pepper (to taste)
8 ounces American cheese (grated)

Steps:

  • Preheat oven to 325°F.
  • Cook macaroni in boiling saltged water until tender, drain and rincse.
  • Make white sauce of butter, flour, milk, salt and pepper (do this by blending these ingredients over a low heat ) - o'kay what I do - melt butter and add flour and cook off for a minute or two over low heat and then add warmed milk and whisk till smooth and let thicken over heat and then add 2/3 of the cheese into this mixture and stire until melted.
  • Pour the entire cobmination over the cooked macaroni in a greased baking dish and sprinkle with remaining cheese over the top and bake for 30 minutes.

My Grandmother's delightful and VERY TASTY recipe for macaroni in cheese, which is FAR better than the kind right out of the box. Our whole family enjoys this recipe, especially the kids. She often has to make twice the recipe to satisfy just my grandpa and uncles!

2 cups macaroni (uncooked)
1 1/4 cups cheddar cheese (shredded)
2 eggs
2 1/2 cups milk
1/4 teaspoon pepper
1 teaspoon salt

Steps:

  • Cook macaroni until soft.
  • Use a large roast-pan or bowl which you would cook casseroles in the oven, and put a thin layer of macaroni upon the bottom, and then spread cheese over that layer, and repeat this layering process until the cheese and macaroni are gone (makes about 3-4 layers each).
  • Mix salt, pepper, eggs and milk together.
  • Pour into layered macaroni & cheese, until filled at the top (or until it is gone).
  • Sprinkle w/ paprika on top.
  • Place in oven, Bake at 350 degrees for about 45 minutes (covered).
  • Enjoy!

My brother-n-law, nephew and cousin always fight over this...They all want to get the corners where the cheese crusts up, they say that's the best part. I call it "Me and Granny's" because she gave me the recipe and I added my own touches over the years...

1 pkg 8 oz elbow macaroni
1 box kraft deluxe macaroni and cheese dinner
1 can(s) evaporated milk (12oz)
1 c milk, 2%
1 can(s) campbells cheddar cheese soup
1 bag(s) 8 oz shredded mozzarella cheese (may substitute low fat)
1 lb colby cheese (i like to shredd this myself, it melts better to me)
2 large eggs, beaten
2 Tbsp butter, unsalted
salt and pepper, to taste

Steps:

  • 1. I like to prep first; Preheat oven at about 300 degrees; shredd your colby and divide it (half/half); beat your eggs and mix with evaporated milk; measure out your butter and 2% milk and set aside in fridge.
  • 2. In a large pot add about 8 cups of water; about a teaspoon of salt and about 1/4 cup of cooking oil and bring to a rolling boil. Add elbow macaroni from the 8 oz bag and from the kraft box; stir to make sure the noodles are not sticking to pot; return to a boil stirring occasionally until noodles are tender. Drain and rinse noodles in a collander with warm water, then rrinse again with cold water to stop the cooking process.
  • 3. place noodles in a large mixing bowl and add the cheese sauce from the kraft deluxe, the can of cheddar cheese soup, and the cup of milk. Stir until ingredients are well combined and cheese soup is coating the noodles.
  • 4. in a large casserole dish or glass baking dish (13x9) spread half the pasta mixture, sprinkle lightly with salt (if desired) and place about four pats of butter around this layer. Next, cover the layer with half of the mozzarella cheese and half of the colby cheese; repeat the steps for the second layer.
  • 5. next, take the evaporated milk mixture and pour over your macaroni evenly (make sure that it is not too much that it will overflow in the oven). You can cover this loosely with foil (I like to bake mine uncovered) and bake at 300 degrees for about 45 minutes (please note that the time is not exact, it may be a little more or a little less depending on your oven). You want the cheese to be bubbly and golden brown. I like mine a little darker because I like the taste of crusted cheese.
  • 6. Please note that I really do not measure anything when I cook so feel free to play around with this to suit your taste.
