Steps:
- Dissolve yeast and 1 tbsp sugar in warm water.
- Scald milk, then add butter, sugar and salt.
- Cool to lukewarm.
- Add two cups flour.
- Add yeast and eggs.
- Stir in the remainder of the flour and knead lightly.
- Let rise until double.
- While dough is rising, boil all syrup ingredients for two minutes.
- Divide syrup into six 8-inch square pans (or I sometimes use 3- 9x13 pans).
- When dough is doubled, punch down and divide into two parts.
- Roll each part (one at a time) into a 12x18-inch rectangle on a well floured board or table.
- Sprinkle with brown sugar and cinnamon.
- Roll up tightly, beginning at the wide side.
- Cut into 1 inch slices, and lay slices on top of the syrup in the pans.
- Repeat with all dough.
- Bake at 375°F for 15 minutes.
STICKY BUNS

- For the dough: Heat the milk, oil and granulated sugar in a medium saucepan over medium heat to just below a boil. Set aside and let cool to warm.
- Sprinkle the yeast on top and let it sit on the milk mixture for 1 minute. Add 4 cups of the flour. Stir until just combined, then cover with a clean kitchen towel and set aside in a relatively warm place for 1 hour.
- After 1 hour, remove the towel and add the salt, baking powder, baking soda and remaining 1/2 cup flour. Stir thoroughly to combine. Use the dough right away or place in a mixing bowl and refrigerate for up to 3 days, punching down the dough if it rises to the top of the bowl. (The dough is easier to work with if it's been chilled for at least an hour or so beforehand.)
- To assemble the rolls: On a floured baking surface, roll the dough into a large rectangle, about 30 inches by 10 inches. The dough should be very thin.
- Preheat the oven to 325 degrees F.
- For the filling: Pour the melted butter over the surface of the dough. Use your fingers to spread the butter evenly. Sprinkle over the granulated sugar and cinnamon. Don't be afraid to drizzle on more butter or more sugar! Gooey is the goal.
- Now, beginning at the end farthest from you, roll the rectangle tightly towards you. Use both hands and work slowly, being careful to keep the roll tight. Don't worry if the filling oozes as you work; that just means the rolls are going to be divine. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. You'll wind up with one long buttery, cinnamony, sugary, gooey log. Slip a cutting board underneath the log and, with a sharp knife, make 16 equal slices.
- For the smear and base: Cream together the brown sugar, butter, honey and salt until lightened, then slowly add the whiskey and vanilla while mixing.
- Butter a 12-inch cast-iron skillet, layer the bottom with the pecan pieces and then scoop 5 large scoops of the smear on top. Heat in the oven until the smear is slightly foamy and bubbling, 10 to 15 minutes.
- Remove the skillet from the oven and place the sliced rolls on top of the melted smear (it's fine to put them on the hot smear). Allow the rolls to rise for 20 minutes.
- Return the skillet to the oven and bake until the rolls are golden brown and the smear is brown and sticky, 20 to 30 minutes. Take another 12-inch skillet and place it on top of the hot skillet. Flip over quickly and carefully. All of the caramelly, boozy goodness will be on top.
LANCASTER COUNTY HAM LOAF WOW WOW WOW
Now THIS is Lancaster County cooking! This is an Amish/Mennonite specialty dish! You will NOT be disappointed! Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own! This is SO delicious! ENJOY!

- Grind meat (if necessary).
- Mix ground meats, breadcrumbs, egg, salt, pepper and milk together.
- Shape into a loaf.
- Bake at 350 degrees Fahrenheit for one hour.
- For the sauce, mix the brown sugar, dry mustard, water and vinegar together.
- Pour sauce over loaf.
- Continue to bake for another hour.

- Soften the yeast in the warm water and let stand 5-10 minutes.
- Add milk to sugar and salt; mix thoroughly and cook to lukewarm.
- Add 1 cup of flour and mix until smooth.
- Stir in yeast mixture and add remaining flour gradually, mixing well.
- On a floured surface, knead dough until smooth.
- Place in a greased bowl and grease top of dough.
- Cover and let rise in a warm place until dough is doubled; about 45 minutes.
- Punch down and roll into a rectangle about 1/4 inch thick.
- Brush with softened butter and spread evenly with raisins, currants and citron, 1/4 cup brown sugar and cinnamon.
- Roll up, starting at long side, as for a jelly roll and cut into 1 inch slices.
- Place slices cut side down in a buttered 13x9x2 inch pan.
- Cover and let rise until doubled.
- Sprinkle top with remaining brown sugar and bake at 375* for 20 to 30 minutes.
ENSAIMADA- SWEET ROLLS/BUNS
My version of the wonderful Filipino bread. Soft, very rich, sweet...perfection! The cheese seems like a strange addition, but you must try it to believe it. This looks like a wildly complicated recipe--in a way it is- but making bread is very soothing to me. Just be sure to read the recipe through a few times before you start.

Steps:
- Sprinkle yeast over warm water and stir to dissolve.
- Add rest of (A) ingredients.
- Mix with a wooden spoon until smooth.
- Scrape down the bowl of the mixer to 'clean it up' and just cover this bowl and let the dough rise in it.
- Cover and let rise about 30 minute.
- Mix together (B) and add to first dough mixture. Knead and shape into a ball using the mixer. Scrape down the bowl and rest the dough in it for another rise.
- Let rest until double. (about 40 min.).
- Finally, mix together (C)EXCEPT melted butter and cheese and add to the dough.
- Knead until smooth and satiny (about 5-10 min).
- Cover and let rise AGAIN for 60 minute.
- Divide the dough into golf ball sized balls and roll into thin ropes. Coil into 'beehives', place on greased sheet and brush with butter. Heap with grated cheese. Place rolls 2" apart.
- Let rise ONE last time (about 40 min).
- Bake 18-20 minute at 400 until nice and brown.
