LIGHT AND FLUFFY MASHED POTATOES RECIPE BY TASTY

Here's what you need: russet potato, cold water, kosher salt, unsalted butter, heavy cream, whole milk, freshly ground black pepper, fresh chives

5 lb russet potato, peeled and cut into large chunks
cold water
1 tablespoon kosher salt, plus more to taste
8 tablespoons unsalted butter, cubed
1 cup heavy cream
½ cup whole milk
freshly ground black pepper, to taste
1 tablespoon fresh chives, chopped, for garnish

Steps:

  • Place the potatoes in a large pot and cover with cold water. Add the salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 20 minutes longer.
  • Drain the potatoes and press through a potato ricer into a large bowl. Set aside.
  • Heat the butter, cream, and milk in a small pot over low heat until simmering.
  • Pour the cream mixture over the potatoes and stir to combine. Season to taste with salt and pepper.
  • Garnish with chives, if desired.
  • Note: A potato ricer gives these potatoes a super fluffy texture, but you can use a hand masher if you don't own one.

Steps:

  • Peel and cut potatoes into small chunks.
  • Boil in salted water until you cannot pick up a piece with a fork.
  • Drain all the water from the potatoes and place all ingredients in a large mixing bowl.
  • Beat until creamy smooth.
  • Serve hot.

1 tablespoon margarine or 1 tablespoon butter

Steps:

  • In 4-quart saucepan, combine potatoes and enough water to cover; heat to boiling on high.
  • Reduce heat to low; cover and simmer 8-10 minutes or until potatoes are fork-tender.
  • Reserve 1/4 cup cooking water; drain potatoes.
  • Return potatoes to saucepan.
  • Mash with margarine and 3/4 teaspoon salt.
  • Gradually add warm half-and-half, continuing to mash potatoes until smooth and well blended; add reserved cooking water if necessary.
  • Transfer to serving dish.

1 (40-ounce) can cut sweet potatoes in light syrup
7 ounces sweetened condensed milk
4 tablespoons melted butter
2 large eggs
1 teaspoon pumpkin pie spice
1 teaspoon pure vanilla extract
1 lemon, zest grated
1/2 lemon, juiced
1/2 teaspoon sea salt
2 tablespoons heavy cream
1 (8 or 9-inch) frozen deep-dish pie crust shell
1 cup raw pecans
1/2 cup heavy cream
1/2 cup brown sugar
Pinch salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Drain sweet potatoes of their juice. Place sweet potatoes in an 11-cup food processor. Add the rest of the ingredients, except heavy cream, to food processor. Process mixture until smooth. Using a pastry brush, brush heavy cream over the surface of the frozen pie shell. Spoon sweet potato mixture into pie crust smoothing the top over. (Stop here and look below if using pecan topping.) Place on baking sheet and bake in the middle lower third of the oven for 45 minutes. Remove from oven and allow to cool in the refrigerator for several hours or overnight.
  • In a medium saucepan place all ingredients over medium heat. Bring to a boil, reduce heat and cook, stirring constantly for 8 minutes. Remove from heat, allow to cool slightly but still warm and pliable.
  • Add sweet potato filling to piecrust, spreading evenly over bottom of crust. Next, carefully spoon pecan mixture over sweet potato filling. Place on a sheet pan in the lower third of a 350 degree F oven and bake for 45 minutes to 1 hour. Remove from oven allow to cool in the refrigerator for several hours or overnight.

4 pounds Yukon Gold potatoes, peeled, cut into 2" pieces
6 large garlic cloves, peeled
1 tablespoon plus 2 teaspoons kosher salt, divided, plus more
1 1/4 cups whole milk
4 thyme sprigs
3/4 cup (1 1/2 sticks) plus 2 tablespoons unsalted butter, divided
3/4 teaspoon freshly ground black pepper, plus more
1/2 cup sour cream
Special Equipment
A potato ricer or food mill

Steps:

  • Cover potatoes, garlic, and 1 Tbsp. salt with cold water in a large pot. Bring to a low boil, then reduce heat and simmer (do not boil) until potatoes are very tender when pierced with the tip of a paring knife but not falling apart, 20-25 minutes.
  • Meanwhile, heat milk, thyme, and 3/4 cup butter in a small pot over medium, stirring, until butter is melted. Remove from heat; set aside.
  • Drain potatoes and garlic; return to pot. Toss over low heat until moisture evaporates, 1-2 minutes. Using potato ricer or food mill, immediately press potatoes and garlic into a large bowl (do not let cool).
  • Discard thyme from milk mixture and gradually stir into potatoes, reserving about 1/2 cup if you plan to make in advance (see Do Ahead). Season with 2 tsp. salt and 3/4 tsp. pepper. Fold in sour cream and stir with a spoon until incorporated and very smooth (do not overmix or potatoes will become gummy). Taste and adjust seasonings. Serve topped with remaining 2 Tbsp. butter and more pepper.

  • Mashed potatoes can be made 2 hours ahead; cover and store at room temperature. Or chill, covered, up to 8 hours; reheat over medium with reserved 1/2 cup milk mixture.

1 shallot, diced
1 garlic clove, minced
1/4 teaspoon dried rosemary, chopped
1 tablespoon light margarine (preferably I Can't Believe It's Not Butter, Light)
2 teaspoons olive oil
1/4 cup nonfat milk
salt and pepper, to taste

Steps:

  • Cut and rinse the potatoes (skin may be left on). Boil them in enough salted water until they are fork tender (time depends on size of dice or cubes).
  • Saute the shallot in the olive oil for 1-2 minutes.
  • Add the minced garlic to the shallot, and saute for 2 minutes until lightly browned.
  • Add in the rosemary. Saute for 30 seconds.
  • Drain potatoes and return to same pot to keep warm while you mash them.
  • Add in enough margarine and milk to make the potatoes to your favorite consistency.
  • Add the shallot mixture, and mix well.
