This cold tortellini salad is the ultimate side dish for bbq and potlucks! With tortellini, spinach, tomatoes, olives, and parmesan tossed in Italian dressing, this Tortellini Spinach Salad is packed with all the best flavors!

1 9 oz. package cheese-filled tortellini
1 10 oz. package frozen, chopped spinach (thawed and drained)
1/2 cup grated Parmesan cheese
2 cups cherry tomatoes (halved)
1 2 oz. can sliced black olives
1 cup Italian dressing
salt and pepper to taste

Steps:

Cook tortellini pasta according to package directions. Rinse under cold water and drain.
In a large bowl, combine the tortellini, spinach, cheese, tomatoes and olives. Toss with Italian dressing and season with salt and pepper. Refrigerate until ready to serve.

1/8 cup white wine vinegar
3/4 cup oil
3/4 cup sugar
1 teaspoon salt
1 teaspoon poppy seed
1 red onion, diced
1 cup mushroom, sliced
1 (16 ounce) bag Baby Spinach, remove stems
1 head lettuce, broken
8 ounces swiss cheese, shredded
1 cup cottage cheese, rinsed
8 ounces bacon, cooked to crisp and crumbled
1 cup slivered almonds

Steps:

Combine first 5 ingredeints.
Pour over onion and mushrooms.
Let marinate in fridge until ready to serve.
Combine remaining indgredients, just before serving toss with dressing.

1/4 cup thickly sliced and chopped prosciutto
5 garlic cloves, chopped
6 tablespoons white wine
6 tablespoons fresh lemon juice
2 tablespoons sugar
Salt and freshly ground black pepper
1 bag fresh spinach, stemmed
1 1/2 cups sliced mushrooms
1/2 cup chopped walnuts, toasted
1/2 cup freshly grated Parmesan

Steps:

Heat oil in a heavy skillet over medium heat. Add prosciutto and garlic and saute for a couple of minutes. Add wine, lemon juice and sugar and simmer for 5 minutes. Transfer to a bowl and cool completely. Add salt and pepper, to taste. Toss together spinach, mushrooms, walnuts and cheese in a bowl. Give dressing a quick stir before tossing with the salad.
