We were feeling festive when we started our holiday cooking, but a bottle of wine was a bit more than we wanted to drink. I added half a cup to the cranberry sauce, in place of juice, and a new recipe was born! -Helen Nelander, Boulder Creek, California

1 package (12 ounces) fresh or frozen cranberries
1 cup sugar
1 cup water
1/2 cup dry red wine or grape juice

Steps:

  • In a large saucepan, combine all ingredients; bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until most of the berries pop, about 15 minutes, stirring occasionally., Transfer to a bowl; cool slightly. Refrigerate, covered, until cold (sauce will thicken upon cooling).

This recipe was inspired by Cindy Pawlcyn, the Napa Valley chef and cookbook author, and includes smashed fresh ginger for extra verve. It's more tart than most cranberry sauce recipes, so if you like yours sweeter, feel free to add more sugar or a little more honey.

2 (12-ounce) packages fresh cranberries (6 cups)
1 3/4 cups dark brown sugar
1 cup dry red wine
3 tablespoons honey
4 (1/4-inch-thick) slices fresh gingerroot, smashed
Pinch of kosher salt
1/2 teaspoon black pepper

Steps:

  • In a medium pot over medium heat, combine the cranberries, sugar, red wine, 1/2 cup water, honey, ginger and salt. Simmer gently until most of the cranberries have popped and the sauce is thick and syrupy, 20 to 30 minutes. Stir in the black pepper. Chill thoroughly before serving.

1 1/3 cups sugar
3/4 cup dry red wine
1 12-ounce package fresh or frozen cranberries
3 tablespoons pomegranate molasses*
1/4 teaspoon (scant) dried basil
2 1/2 tablespoons chopped fresh cilantro
2 1/2 tablespoons sliced fresh mint

Steps:

  • Stir sugar and wine in heavy deep medium saucepan over medium heat until sugar dissolves. Boil over medium-high heat until syrup is reduced to 3/4 cup, about 8 minutes. Add cranberries; boil until berries begin to pop, about 5 minutes. Stir in pomegranate molasses and basil. Cool completely. do ahead Can be made 1 week ahead. Cover and chill.
  • Stir in chopped cilantro and sliced mint. DO AHEAD: Can be made 4 hours ahead. Cover and chill.

1 cup raw bacon, chopped (about 1/2 pound or 6 to 8 slices)
3 (2 to 3 pound) pheasant, separated into legs, breasts, and thighs
1 cup dry red wine
1 pound pearl onions, blanched for 2 minutes in boiling water and skins slipped off
1 teaspoon cracked peppercorns
2 bay leaves
1 tablespoon chopped fresh tarragon leaves
Salt, to taste (about 1 teaspoon)
1 tablespoon chopped fresh mint leaves
1/4 cup honey
1/4 cup sour cream
6 small sprigs fresh mint, for garnish

Steps:

  • Render bacon in a Dutch oven over medium heat. Add pheasant parts and sear on all sides, then add red wine and onions. Sprinkle cracked pepper, bay leaves, tarragon, salt and mint over pheasant parts. Reduce heat to low and cover pot. Cook until tender and juices run clear (no longer pink), about 25 minutes. Remove pheasant carefully to a utility platter, cover and set aside to keep warm. Transfer liquids from pot to a heat resistant glass container (such as a 2 or 3 cup measuring vessel) and allow the layer of fat to rise to the top. Spoon or pour off most of the fat and return the rest of the juices, herbs, bacon and onions to the pot over medium heat. Add cranberries to the sauce and cook until the berries pop to make a rustic sauce. Remove from heat, discard bay leaves, and whisk in honey and sour cream.
  • Arrange pheasant on serving dish, spoon sauce over, and garnish with mint.

No one will be able to detect the red wine in the recipe. It just adds this wonderful fruitiness and a very deep flavor. The peppercorns may sound odd, but they add a wonderful spiciness that is complemented by the cinnamon. If you are skeptical abotu using them, you can leave them out. This is my first year to cook Christmas dinner and this is the cranberry sauce recipe I plan to use! It beats all the others I've made in the past.

1 cup dry red wine
1 1/2 cups sugar
1 cinnamon stick, halved
1 slice orange zest, 1 inch thick
3 black peppercorns (optional)
1 cup walnuts, coarsly chopped
1 lb fresh cranberries or 1 lb frozen cranberries (thawed)

Steps:

  • Combine the first 5 ingredients and one cup water in a medium saucepan.
  • Bring to a boil, and cook 1 1/2 minutes.
  • Add cranberries and walnuts and reduce heat to medium-low.
  • Simmer, stirring frequently, until berries burst and the mixture is reduced to 4 cups, about 15 minutes.
  • Place in an airtight container and let cool completely.
  • Remove the cinnamon stick, zest and peppercorns.
  • Refrigerate until ready to serve.
  • Especially tasty with ham and turkey, but also delicious chicken and beef!
  • Enjoy!

1/4 cup red wine (cabernet sauvignon works well)
3/4 cup orange juice
1 1/2 teaspoons cinnamon

Steps:

  • Place all ingredients except cranberries in saucepan and bring to a boil.
  • Reduce heat and simmer 3 min or until sugar is dissolved.
  • Add cranberries and simmer 10-12 minute.
  • Remove from heat and cool to room temperature, than place in fridge.
  • NOTE: sauce will be thin -- it thickens as it cools.

Steps:

  • Put the wine, sugar, cloves, star anise and cinnamon stick into a large, shallow pan. Bring to a simmer and cook until the liquid has reduced by half. Add the cranberries and cook for 5 mins or until the cranberries burst and start to look jammy. Set aside to cool. Can be frozen or spoon into a jar and keep in the fridge for up to a week.

1 ½ cups white sugar
1 cup dry red wine
1 (12 ounce) package fresh cranberries, rinsed and sorted
1 cinnamon stick
2 tablespoons orange zest, cut into slivers

Steps:

  • Combine sugar with red wine in a medium saucepan, and bring to a boil over medium heat. Add the cranberries, cinnamon stick and orange peel. Bring the mixture back to a boil, reduce heat, and simmer, stirring often, for 10 to 15 minutes, until most of the cranberries have burst.
  • Remove from heat, allow relish to cool slightly, and spoon into sterilized glass jelly jars with tight-fitting lids. Store in refrigerator.

12 ounces fresh or frozen cranberries
6 ounces fresh or frozen raspberries
1/2 cup honey + more to taste (can substitute granulated sugar [will not be refined-sugar free] or pure maple syrup)
3/4 cup red zinfandel wine (not white zinfandel!)
1/2 teaspoon ground cinnamon

Steps:

  • Rinse cranberries and discard any unripe or shriveled berries. Pick over raspberries and do the same. Place in a medium saucepan over medium heat. Add 1/2 cup honey, zinfandel, and cinnamon.
  • Cook uncovered, stirring occasionally, until cranberries pop and the sauce has thickened, about 20 minutes. Taste and add additional honey until the sauce has reached your desired level of sweetness. Remove from heat and let cool. Serve.
  • Keeps for up to one week refrigerated in an airtight container, or for up to two months in the freezer.
