GOOEY RED VELVET CHEESECAKE BARS
A special occasion dessert that's made with cheesecake and box cake mix. It's a small serving dessert, but pretty delicious! Add sprinkles before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking pan with parchment paper.
- Mix red velvet cake mix, butter, 1 egg, and 1 egg yolk together in a large bowl. Press evenly into the bottom of the prepared pan.
- Whisk cream cheese, sour cream, sugar, and vanilla extract together in a separate bowl. Beat in 1 egg until smooth. Beat in 1 egg yolk.
- Spread cream cheese mixture over the red velvet layer in the pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pan, about 30 minutes. Cut into bars.

- Instructions Preheat oven to 350°F. Grease a 9x13-inch baking dish and set aside. In a medium bowl, mix the dry cake mix, egg and butter until well combined. Press into the bottom of the prepared pan. Set aside. In a separate medium mixing bowl, beat the cream cheese with an electric mixer until smooth. Add the eggs and beat until thoroughly combined. Add the powdered sugar and beat until combined. Evenly pour the cream cheese mixture over the cake mix layer, spreading and leveling with a spatula. Top with sprinkles. Bake 27-35 minutes, or until set but still "gooey" in the middle.

- Set your oven rack to the center position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13 baking pan* with aluminum foil (or use parchment), leaving an overhang on all sides. Set aside.
- Whisk the flour, cocoa powder, baking powder, and salt together in a large bowl until combined. Set aside.
- In a large bowl using a hand-held mixer or stand mixer with paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the granulated sugar and beat on medium high speed until fluffy and light in color. Beat in egg and vanilla on high speed until combined. Scrape down the sides and bottom of the bowl as needed. Beat in the food coloring until combined. With the mixer running on low speed, slowly mix the dry ingredients into the wet ingredients until combined. The red velvet dough will be quite thick and sticky.
- Using a rubber spatula, spread dough in an even layer into the prepared baking pan. It’s very sticky, so take your time pushing it to each corner of the pan. Bake for 8 minutes. Remove from the oven and leave the oven on.

- To make the first layer, mix together cake mix, oil, and egg. Press into greased 8-inch pan. Bake at 350 degrees for 10-12 minutes.
- For the second layer, remove the cake mix cookie crust layer from the oven and put spoonfuls of the marshmallow cream on top of the hot bars. Allow the marshmallow cream to melt and soften and then slowly spread it out over the bars using a greased spatula.
- For the top layer, melt the butter in the microwave for about 20 seconds. Add the mini marshmallows and stir to coat. Microwave for 45 seconds and stir until smooth. - Do not make this cake according to the directions on the cake mix box. Mix the cake mix, eggs, melted butter and vanilla extract by hand in a mixing bowl. Spray a 9 x 13 cake pan with cooking spray and press the cake mixture into the pan. This makes the bottom layer of the cake bars.
- Mix the topping ingredients with a mixer and spread over bottom cake layer. Bake in a preheated 350 degree oven for 40 to 45 minutes until top is golden brown. Let cool and then cut in squares to serve.
