This Easy Swiss Steak recipe is made with inexpensive beef, cooked down until tender in a flavorful tomato sauce. Made all in one pot, an impressive steak dinner doesn't have to cost you so much money and effort!

2 pounds bottom round roast (Cut into 1/2" thick slices)
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
½ cup flour (all-purpose)
3 tablespoon olive oil
1 onion (sliced)
4 cloves garlic (minced)
1 tablespoon tomato paste
14.5 ounce diced tomatoes (1 can)
2 cups beef broth (low sodium)
2 teaspoon Italian seasoning
1 tablespoon Worcestershire sauce
1 tablespoon parsley (freshly chopped)

Steps:

  • Swiss the steak: Use a meat tenderizer mallet to poke holes into each slice of steak on both sides. You can also do with a fork or pairing knife.
  • Dredge through flour: Generously salt the beef slices with salt and pepper. Add the flour to a shallow bowl. Dredge each piece of beef well in the flour.
  • Sear the steak: Heat 2 tbsp of the olive oil in large, deep skillet over medium-high heat. Add the dredged beef to the skillet and cook for 4-5 minutes per side, or until seared and well browned. Remove the beef from the skillet and set aside.
  • Sauté onion: Add the remaining tbsp of olive oil to the skillet along with the onions. Cook for 3-4 minutes, until they soften and get translucent. Add the garlic and cook for 30 seconds or until aromatic.
  • Add the rest of ingredients: Stir in the tomato paste and cook for 1 minute, then add the diced tomatoes, broth, Italian seasoning, and Worcestershire sauce. Stir everything together well.
  • Braise: Bring the mixture to a boil, then reduce the heat to a simmer. Add the beef back to the skillet and make sure it's fully submerged. Cover and cook for 1 1/2 hours, or until the sauce has reduced to your liking and the beef is tender. Stir occasionally.
  • Finish & serve: Taste for seasoning and add salt and pepper if needed. Garnish with parsley and serve.

1 tablespoon canola oil
1 medium onion, chopped
1 celery rib with leaves, chopped
1 garlic clove, minced
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large nonstick skillet, brown cube steaks on both sides in oil over medium-high heat; remove and set aside. In the same skillet, saute the onion, celery and garlic for 3-4 minutes or until tender. Add the tomatoes, tomato sauce and bouillon. Return steaks to the pan. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 to 1-3/4 hours or until meat is tender. , Combine cornstarch and water until smooth; stir into tomato mixture. Bring to a boil; cook and stir for 2 minutes or until thickened.

3 tablespoons all-purpose flour
1 teaspoon ground mustard
1/2 teaspoon salt

2 cloves garlic, finely chopped
1 cup water

Steps:

  • Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.
  • In 10-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, turning once, until brown.
  • Add tomatoes and garlic to skillet, breaking up tomatoes with a fork. Heat to boiling; reduce heat. Cover and simmer about 1 hour 15 minutes, spooning sauce occasionally over beef, until beef is tender.
  • Add water, onion and bell pepper to skillet. Heat to boiling; reduce heat. Cover and simmer 5 to 8 minutes or until vegetables are tender.

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

1 cup carrot, sliced
1 large onion, halved and thinly sliced
1 (12 ounce) jar home-style beef gravy
1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon thyme
1/2 teaspoon pepper
garlic instant mashed potatoes, 1 box prepared as instructed on the box
1/4 teaspoon thyme
1 teaspoon dried parsley

Steps:

  • Heat oven to 325 degrees Fahrenheit.
  • Cut beef into serving size pieces and arrange in 2 quart baking dish.
  • Top beef with carrots and onion.
  • In a bowl, combine gravy, tomatoes, 1/4 teaspoon thyme and pepper; mix well.
  • Pour gravy mixture over meat and vegetables.
  • Cover with foil.
  • Bake for 2 hours.
  • Make the instant garlic mashed potatoes as instructed on the package, adding 1/4 teaspoon thyme and dried parsley.

2 tsp. olive oil
1 sweet onion (cut in half and sliced)
3 carrots (peeled and cut into rings)
2 cloves garlic (crushed or minced)
16 oz. cube steaks
salt and pepper or seasoned salt
15 oz. can petite diced tomatoes
6 oz. can tomato paste
16 oz. can beef broth
1 tsp. dried oregano
cooked rice, mashed potatoes, or egg noodles

Steps:

  • Heat oil over medium-high heat in a deep 10" or 12" skillet. Add onions and carrots, and sauté until onions are tender. Stir in garlic, and cook 1-2 minutes longer.
  • Lightly sprinkle both sides of cube steaks with salt and pepper or seasoned salt. Place meat on top of onions and carrots. Pour tomatoes over the meat.
  • Stir tomato paste, beef broth, and oregano together in a small bowl with a fork. Pour over meat.
  • Reduce heat to medium and simmer for 1 1/2 to 2 hours. Cover skillet mostly with a lid, making it a little offset so steam can escape and the sauce can reduce but tomato sauce doesn't splatter all over your stovetop.
  • Serve over rice, potatoes, or noodles.

Instant Pot Swiss steak is an easy and hearty meal with a low prep time. The convenience of an Instant Pot will make this an instant classic in your home.

2 pounds bottom round steak
1 teaspoon garlic powder
1 teaspoon sea salt
1 teaspoon ground black pepper
1½ teaspoons paprika
2 tablespoons corn starch
2 tablespoons olive oil
1 14.5-ounce can fire-roasted tomatoes
1 cup unsalted beef broth
1 medium yellow onion
2 green bell peppers
3 cloves garlic
2 tablespoons Worcestershire sauce
1 tablespoon corn starch

Steps:

  • Thinly slice the steak and set aside.
  • Peel and chop the onion and chop up the green peppers and set aside in a separate bowl.
  • Mince the garlic cloves and set aside.
  • Mix dry ingredients together except the corn starch (1 teaspoon of sea salt, 1 teaspoon of garlic powder, 1 teaspoon of ground black pepper, 1 ½ teaspoons paprika), and season both sides of the steaks. (Reserve extra seasoning mix to season the sauce at the end.)
  • Lightly dredge the steak with corn starch on both sides.
  • Select the sauté setting on the Instant Pot. Add 2 tablespoons of olive oil and when it's hot, brown the steak on both sides, one minute per side. Don't overcrowd the pot; brown the steak in two batches.
  • Transfer the steak back to the Instant Pot, and add the other ingredients in this order: 1 cup of unsalted beef stock, canned tomatoes, the green bell peppers, onion, garlic, and black pepper.
  • Seal the lid on the Instant Pot and select the option to pressure cook on high.
  • Set the timer for 30 minutes.
  • When the timer goes off, do a natural release, which will take around 10 minutes.
  • Hit cancel and twist valve to venting position to release remaining pressure.
  • Open the lid and remove the steak onto a platter.
  • Select the sauté feature on the Instant Pot
  • To thicken the sauce, take half a cup of the cooking liquid and put in another bowl.
  • Whisk in 1 tablespoon of corn starch or flour into cooking liquid. When the mixture is well dissolved, add back into the pot. Stir to combine.
  • Cook until sauce reaches the consistency you like, about 5 minutes.
  • Taste the sauce and adjust the remaining seasoning.
  • Stir the 2 tablespoons of Worcestershire into the sauce.
  • Place mashed potatoes, cooked egg noodles, or rice on a plate if using for serving.
  • Place the Swiss Steak on top with some of the tomato gravy sauce.
  • Chop up parsley and sprinkle over dish for garnish before serving.

2 Tbsp salted butter, divided
¼ c unbleached all-purpose flour
½ tsp salt
¼ tsp ground black pepper
1 lb cubed steak, cut into serving-sized pieces
2 celery stalks, sliced
1 onion, halved and sliced
1 garlic clove, minced
1 (14.5 oz) can diced tomatoes, un-drained
1 ½ tsp Worcestershire sauce
1 Tbsp unbleached all-purpose flour
1 tsp thyme
Salt and pepper, (to taste)

Steps:

  • Preheat your oven to warm (roughly 200F).
  • Melt 1 Tbsp butter in a large, cast iron skillet over medium high heat.
  • Mix the flour, salt, and pepper together on a large plate. Dredge the cube steak by pressing it into the flour to coat it lightly.
  • Place the dredged steak into the hot skillet and cook the steak 3-4 minutes on each side, reducing the heat to medium if the pan gets too hot. Once the steak is cooked, transfer it to a serving platter (or 8x8 baking dish) and place it in the oven to stay warm.
  • Add the remaining 1 Tbsp butter to the skillet. Once the butter is hot, add the sliced celery, onion, and garlic. Sauté over medium heat 5 minutes, or until softened.
  • Add the tomatoes (with their juice), Worcestershire sauce, flour, and thyme. Mix well and bring the sauce to a simmer over medium high heat. Simmer the sauce until thickened 3-5 minutes. Season with salt and pepper to taste.
  • To serve, spoon the vegetable mixture over the cooked steak.
  • Serve with mashed potatoes*, pasta, or rice.

1/3 cup flour
1/2 teaspoon garlic salt
1/4 teaspoon pepper
2 lbs cube steaks
3 tablespoons vegetable oil
2 (8 ounce) cans tomato sauce
1 (1 1/3 ounce) package dry onion soup mix
1 cup sour cream

Steps:

  • Combine first 3 ingredients.
  • Dredge cube steak in flour mixture.
  • Heat oil in a dutch oven over medium-high heat; add steak, in batches, and cook until no longer pink.
  • Return all steak to pot.
  • Stir in tomato sauce and soup mix; bring to a boil.
  • Cover, reduce heat, and simmer 15 minutes.
  • Remove steak to serving platter, reserving liquid in pot; keep warm.
  • Stir sour cream into tomato mixture; simmer, stirring constantly, until heated. Do Not Boil.
  • Serve over steak.
  • To Freeze: Combined the flour, garlic and pepper and dredged the cube steaks.
  • Fry the meat quickly in the oil to brown and crisp rather than cooking.
  • Set aside to cool.
  • Add the tomato sauce and soup mix to the pan and cool.
  • Freeze the meat and sauce in separate ziplok bags.
  • To Serve: After thawing add the meat and sauce to the pan.
  • Simmer for 15 minutes or until the meat is heated through.
  • Remove the meat and add the sour cream.

1 (14.5 oz) can (use can and add 1 can of water) diced tomatoes
2 cloves crushed garlic
1/3 cup vegetable oil
for dusting all purpose flour
to taste salt and pepper
1 teaspoon garlic powder
1 (approximately 1 1/2 pounds) (see Note) round steak
1 medium cut into strips onion
1 medium cut into strips bell pepper

Steps:

  • Cut steak into serving-size pieces. Season, to taste, with garlic powder, salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours, adding water if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 °F and high heat on a slow cooker is about 300 °F.
  • Note: to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber.

2 lb cubed steak cut into large pieces
1 large onion, sliced
1 pkg dry onion soup mix (1 envelope)
2 c water
1 14.5 oz can(s) diced tomatoes
2 minced garlic cloves
1 tsp black pepper
1 tsp salt
1 tsp garlic powder
1/2 c all purpose flour
1/3 c vegetable oil

Steps:

  • 1. Cut cubed steaks into large serving pieces. Mix together salt, pepper and garlic powder. Season steaks on both sides.
  • 2. Dredge steaks through the flour. Shake off excess flour. Heat 1/3 cup cooking oil in large skillet.
  • 3. Brown steak pieces on both sides in the oil. Remove to a clean platter. Turn heat to medium in the same skillet.
  • 4. To the warm skillet, add minced garlic, onions and can of diced tomatoes. Mash the tomatoes, slighty, with a fork. Add the onion soup mix and water. Stir to combine. Add browned steak pieces along with any juices back to the skillet. Stir to coat the meat with tomato mixture. Cover and lower heat to low.
  • 5. Simmer the steaks on low for 1 and 1/2 hours stirring frequently.
  • 6. Season with more salt and pepper if desired. Serve with rice, mashed potatoes or noodles.
