2 limes, juiced
1 teaspoon minced fresh ginger
1 teaspoon coarse ground black pepper
3 tablespoons extra-virgin olive oil
1 1/4 cups tropical fruit salsa

Steps:

  • Preheat a grill.
  • Place the red snapper fillets in a shallow dish and reserve. In a small bowl, combine lime juice, ginger, pepper, and olive oil. Pour the mixture over the fish and let sit for 15 minutes.
  • Grill the fish over medium heat until the flesh is cooked through and opaque, about 4 minutes per side, depending on the size of the fish. Top with tropical fruit salsa and serve.

Xec (pronounced "shek") is a sweet, sour, juicy citrus salsa from Mexico's Yucatán Peninsula, and it makes a brilliant match with almost any kind of fish, cooked almost any kind of way. The combination here - orange, grapefruit, lemon - is not traditional to Mayan cooking, nor is it a mandate. Add lime if you have it, a bitter orange if you can find it. Don't skip the minced habanero, though, which adds a bit of heat and yet more flavor. The fish starts on the stove for a few minutes, and is soon moved to the oven to finish cooking, for a total time of less than 10 minutes.

Steps:

  • Heat oven to 450 degrees. Cut orange in half horizontally and section it as you would a grapefruit; do this over a bowl to capture all its juice. Remove seeds and combine flesh and juice in bowl. Repeat with grapefruit and lemon. Stir in cilantro, habanero and salt.
  • Put oil in a nonstick or cast-iron skillet over medium high heat. A minute later, add fish, skin side down; season top with salt. Cook until skin begins to crisp, 3 or 4 minutes, then transfer to oven. Cook another 3 or 4 minutes, or until a thin-bladed knife meets little resistance when inserted into thickest part of fish. Serve fish with xec, immediately.

1 lb red snapper fillets (or other mild white fish of your choice)
Juice of 1 lemon (divided)
2 tablespoons extra virgin olive oil (divided)
Salt and freshly ground black pepper
1 tablespoon butter
3 tablespoons red onion (chopped)
3 plum tomatoes (seeded and cut into 1/4-inch pieces)
2 tablespoons fresh parsley (finely chopped)
2 tablespoons capers (well drained)
Fresh parsley and lemon wedges for garnish

Steps:

  • Preheat the oven to 425°F, line a shallow baking pan with foil and coat with nonstick spray.
  • Place the snapper, skin side down on the prepared pan. Drizzle with about 1-1/2 tablespoons of the lemon juice and 1 tablespoon of the olive oil. Season with salt and pepper and set aside.
  • Heat the remaining tablespoon of olive oil along with the butter in a pan over medium heat. Add the red onion and cook just until softened, about 2 minutes.
  • Stir in the tomatoes and capers. Season to taste with salt and pepper and remove from the heat. Stir in the parsley and remaining lemon juice and set aside.
  • Roast the fish for 8 to 12 minutes (depending on thickness), until opaque in the center, but still moist. Do not overcook.
  • To serve, transfer the fish to a platter and garnish with sprigs of parsley and lemon wedges.

3 5-6oz. skin-on snapper fillets
1 small garlic clove, grated and mashed
1 cup chopped herbs (such as parsley & cilantro)
2 TableSpoons chopped capers from Flora Fine Foods
2 TableSpoons fresh lemon juice from 1 lemon
7 TableSpoons (or more) extra-virgin olive oil, divided
1 teaSpoon chili paste (sambal oelek)
Kosher salt, and freshly ground pepper

Steps:

  • Grate the garlic with a microplane
  • Chop the parsley & cilantro and rough chop the capers
  • In a medium bowl, mix the chopped herbs, capers, lemon juice, and 6 TableSpoons extra virgin olive oil. If needed, season the herby sauce with ½ teaSpoon of kosher salt and pepper.
  • Rinse, and pat dry the fish: Line a plate with a paper towel and put the fish skin side down. Take more paper towel and dry the other side. Repeat this step on the skin side.
  • Place the fish on a dry clean plate and sprinkle both sides with salt, pepper, and extra virgin olive oil. Be generous with the salt, but don't overdo it.
  • In a COLD nonstick skillet, brush on a TableSpoon of olive oil to coat the surface of the pan. Place the snapper skin side down and turn the stove on medium heat. The skillet will heat up gradually and the fat will start to cook out of the fish.
  • When the fat starts to cook, take a flexible spatula and press the fish against the pan for a few seconds. This step is very important because it will help cook the whole skin completely. This first side takes around 4-5 minutes. If your fish is thick, you may want to cook for 6 or 7 minutes. The key here is to make sure the skin is crispy, and the flesh is mostly opaque.
  • Flip the fish over to the other side and cook for about a minute or two.
  • To plate the snapper, spoon the caper salsa onto the plate and place the fish skin side up on top of the salsa.

4 ( 6 ounce) snapper filets
2 Tbsp olive oil
salt and pepper to taste
OLIVE AND CAPER SALSA
1 Tbsp olive oil
1 Tbsp finely chopped onion/shallot
1/4 tsp garlic, finely minced
1 Tbsp balsamic vinegar
2 c tomatoes, chopped and seeded
1 Tbsp capers
1 1/2 tsp kalamata olives, chopped
1/2 tsp fresh thyme
salt and pepper to taste

Steps:

  • 1. Heat Grill to medium high Brush snapper filets with olive oil and season with salt and pepper.
  • 2. Grill snapper until fish flakes easily. Remove from heat * careful don't overcook the fish**
  • 3. For the Salsa : Heat the olive oil in a saute' pan. Add the onions and garlic, saute for 30 sec. Immediately add the vinegar, tomatoes, capers, olives and thyme. Simmer for 3 min. Season with salt and pepper.
  • 4. Serve the Salsa over the snapper on a bed of white rice . Lovely and sooo darn good !

½ tablespoon crushed red pepper flakes

½ cup white wine

Steps:

  • In a large skillet, heat olive oil. Add onion, garlic, red pepper and capers. Saute over medium heat until onion is soft.
  • Add the tomatoes with juice, and the wine. Reduce heat to low and simmer. Break up the tomatoes with a spoon as the sauce cooks.
  • Once sauces begins to thicken add the snapper fillets and push them down into the pan. Cover and cook over low heat until the fish flakes with a fork, about 15 to 20 minutes.

16 grape leaves, rinsed and patted dry
2 tablespoons vegetable oil
¼ cup butter
2 cloves garlic, minced
1 tablespoon grated lemon zest
1 tablespoon drained capers
1 teaspoon lemon juice
1 tablespoon cooking sherry
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven's broiler.
  • Season the snapper fillets with sea salt and pepper. Place two grape leaves on a clean surface so that they overlap slightly. Place a fillet in the center. Fold the leaves over the center of the fillet to enclose completely. Brush with oil on the top and bottom to keep the leaves from sticking, and place on a broiler pan. Repeat with the remaining fillets and leaves.
  • Place the fish under the preheated broiler about 6 inches from the heat source. Broil for 4 minutes per side, turning once, or until fish is opaque.
  • While the fish is broiling, melt the butter in a small saucepan over medium heat. Stir in the garlic, lemon zest, capers, sherry and parsley. Season with salt and pepper.
  • To serve, remove the fish packets to a platter, and spoon the sauce over the top.

2 limes, divided
2 tbsp. extra-virgin olive oil
1 white onion, peeled and chopped
6 garlic cloves, peeled and chopped

2 large tomatoes, chopped
⅓ cup large green olives, pitted and chopped

1 small yellow onion, diced
12 gaetta olives or oil cured black olives, pitted and chopped

4 Red Snapper fillets
1 cup marinara sauce

  • Preheat the oven to 350°F.

10 large basil leaves, roughly chopped

Steps:

  • In large bowl stir together olives, capers, red onion, tomatoes, basil, 3 tablespoons parsley, and olive oil. Add 2 teaspoons salt, 1/2 teaspoon pepper, and red pepper flakes, and let stand at room temperature 30 minutes.
  • Holding very sharp paring knife at 30-degree angle from fillets, cut 2 diagonal slits through skin and partially into flesh, making slits 1/2 inch apart.
  • In large heavy skillet over high heat, heat 1/3 cup canola oil until hot but not smoking. Working in 3 batches, sprinkle fillets with 1 tablespoon salt and 1 teaspoon pepper and place skin-side down in hot pan. Transfer to platter and loosely cover with foil to keep warm. Cook remaining two batches in same manner, wiping pan clean between batches and starting with fresh oil for each batch.
  • After removing last batch of fish, pour lemon juice into pan and swirl around to combine with pan juices. Drizzle over fish, then sprinkle with remaining 1/2 cup parsley. Garnish with tomato-olive mixture.

  • Dry the snapper very well inside. and out. Score the skin twice on each side. Season inside and out with 1 1/4 teaspoons salt. Stuff the cavity with the rosemary, oregano and orange slices and close the belly around the filling.
  • On a rimmed baking sheet, toss together the capers, orange and red bell peppers, onions, red pepper flakes, 1 tablespoon olive oil and 1/2 teaspoon salt. Place the fish in the middle of the vegetables and rub the skin with 1 tablespoon olive oil.

  • Remove skillet from heat; add the lemon juice, capers, and pepper. Pour sauce over fish to serve. If desired, serve with lemon wedges.
