Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Place potatoes in a saucepan, and add enough water to cover. Bring to boil, and cook until tender but still firm, about 10 minutes. Drain, and cool in a bowl of cold water.
- Cook bacon in a skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
- Remove cooled potatoes from water. Pat dry with a paper towel, and cut in half. Using a small spoon, carefully remove a small amount from center, leaving approximately 1/4 inch rim around each potato. Set reserved potato aside.
- In a bowl, mix together reserved potato, sour cream, bacon, seasoned salt, pepper, and chives. Spoon a small amount of mixture into each potato half and place on a baking sheet. Top each potato off with some shredded cheese.
- Bake for 10 minutes in the preheated oven, or until cheese is melted and potatoes are warmed through. Garnish with parsley, and serve.

Steps:
- Preheat oven to 375 degrees F. Place potatoes on a baking sheet, drizzle with olive oil and season with salt. Roast for 25 to 30 minutes, or until tender through to the center when pierced with a sharp knife. Remove from oven and allow to sit for about 15 minutes or until cool enough to handle.
- Slice the tops off the potatoes and use the tip of a sharp knife to outline the area you will scoop out, leaving a small rim on the inside of the skin so the potato skins will hold their shape. Use a melon baller or small spoon to scoop out and transfer the potato to a large mixing bowl. Add ½ cup shredded cheddar cheese, ½ cup sour cream, cream cheese, ¼ cup Hormel Real Bacon Bits, seasoned salt, and pepper. Use an electric mixer to combine until creamy.
- Spoon the mixture back into the potato skins, mounding slightly. Place back on baking sheet and sprinkle with remaining shredded cheddar cheese. Bake for an additional 5 to 7 minutes, until potatoes are warmed through and cheese has melted.
- Garnish each potato bite with a small dollop of remaining sour cream, a sprinkling of bacon bits, and chives.

- Cut the potatoes in half lengthwise (so the cut surface is oblong-ish rather than circle-ish). Put them in a 9″x11″ cake pan (if your pan is prone to sticking, add some foil or parchment paper first). Toss the potatoes with 1 teaspoon of the olive oil, 1/4 tsp coarse salt and 1/8 tsp coarse black pepper. Scoot the potatoes to one side of the pan and arrange them cut side up. Lay the slice of bacon along the other side of the pan. Put the pan into the preheated oven.
- Roast until the potatoes are tender when pierced with a fork, about 15 minutes. Do check on them sooner, especially having a peek at your bacon. It will be done before the potatoes if it’s on the thin side. When the bacon looks crispy, remove it from the pan and transfer it to some kitchen towel to blot and cool. When the potatoes are done, remove the pan from the oven and allow them to cool as well.
- Meanwhile, toss the asparagus with the remaining 1 teaspoon of oil, a good pinch of salt and a grind of pepper. Put the spears on a baking sheet and pop it into the oven. Cook until bright green and only just yielding to the pressure of a fork (4 minutes for this asparagus, 7 for really thick ones). Remove from the oven and transfer them to a plate to cool. Cut each asparagus spear into three equal lengths.
