- For the cake: Preheat the oven to 350 degrees F.
- Put the brown sugar, 1/2 stick of the butter and the 1/4 cup pineapple juice in a small saucepan over medium heat. Cook until the sugar dissolves and begins to caramelize, about 10 minutes. Pour into a 9-by-13-inch baking dish and top with the pineapple rings. Set aside.
- Whisk together the flour, ginger and salt in a medium bowl.
- In a stand mixer with the paddle attachment, beat together the remaining 2 sticks butter and the granulated sugar until light and fluffy, about 4 minutes. Beat in the eggs, one at a time, scraping down the bowl as needed. Beat in vanilla until well incorporated.
- With the mixer on low speed, slowly add in the dry ingredients, beating just until incorporated--be careful not to over-mix. Spread the batter over the pineapple rings in the baking dish.
- Bake until a toothpick inserted into the center of the cake comes out clean, about 30 minutes. Cool for 15 minutes.
- Meanwhile, make the topping: Stir together the sour cream, sugar and vanilla seeds in a small bowl.
- To serve, invert the cake over a platter and cut into portions. Serve with a dollop of the sour cream topping.

- For the cake: Preheat the oven to 350 degrees F.
- Heat a 9-inch skillet over medium heat and melt 2 tablespoons butter. Add the slices of pineapple in a single layer and sprinkle the brown sugar over the fruit. Cook until the pineapple browns slightly, 2 to 3 minutes. Flip the pineapple slices. Turn off the heat and keep warm.
- Whisk together the buttermilk, vanilla, eggs and the remaining 6 tablespoons butter in a medium bowl until smooth. Use a rubber spatula to stir in the flour, granulated sugar, salt, baking powder and baking soda until completely smooth. (The batter will be fairly stiff.) Pour the batter over the pineapple.
- Transfer the skillet to the center of the oven and bake until a toothpick inserted in the center of the cake emerges clean, 40 to 45 minutes. Cool for about 10 minutes before carefully unmolding onto a serving platter. (See Cook's Note.)
- For the caramel: Combine the granulated sugar, corn syrup, lime juice and 1/4 cup cold water in a medium stainless saucepan. Stir in the pink peppercorns and bring to a gentle simmer. Cook until the sugar is dissolved, then cook, 10 minutes. Set aside to cool slightly. When the cake is unmolded, pour the caramel over the cake.

- 1. Drain the can of pineapple, reserving 1 cup of juice. Melt the butter and brown sugar over medium heat. Whisk gently together until well blended and falls from whisk in ribbons. Spray two 8" round cake pans with non-stick cooking spray well. Pour the Caramel into the pans, swirl pan around for even coating. Place the drained pineapple into the caramel. (You can make a lovely design here... I am typically too impatient for that... but I do make sure the pineapple is evenly distributed.) Set pans aside.
- 2. Mix the Cake Mix, Eggs, Oil, and reserved Pineapple Juice until blended. Pour into cake pans over the pineapple and caramel.
- 3. Bake at 350 degrees for about 28 minutes, or until a toothpick inserted in the middle comes out clean. Remove cake from oven, and let cool for about 5 minutes. Loosen cake from edges with a butter knife. Invert the cakes into pie plates. Some of the caramel will be absorbed into the cake, but it will also be very saucy - so be sure to invert onto a dish that has edges. This cake is delicious warm - fresh from the oven with a scoop of ice cream... Hmmm-mmm!

CARAMEL GRILLED PINEAPPLE SUNDAES
Okay, so I know that we really cheated on the sauce by using a jarred sauce, but this is exactly what we served to some guests for a last minute dessert after a meal of "Brats--Our Way" and grilled corn on the cob, and they loved it! For four adults and two small children, this really was just barely enough, and we could have probably eaten another pineapple. I noticed that most other pineapple recipes here involve marinating the pineapple or brushing it with something just before grilling. We've never tried that, but really enjoy the simple, fresh taste of the pineapple without other added ingredients. If you've never tried grilled pineapple, you owe it to your tastebuds to try one of the recipes for it here on the zaar!

- Peel, core, and slice pineapple into 3/4 inch to 1 inch thick rings. If your pineapple is already cored and sliced in a way that makes it impossible to cut into rings, just cut into big wedges. Pieces that are cut too small make it difficult to grill without losing pieces in the grill, as the pineapple will soften somewhat.
- Grill on a lightly oiled BBQ grill grate over medium to high heat, turning once, until the pineapple has nice grill marks, is warm, and slightly softened. Time will vary depending on your grill, but your eyes and your nose will tell you when it's ready!
- Warm caramel ice cream topping in microwave according to package directions.
- Assemble sundaes by placing a portion of pineapple in the bottom of each bowl. Top with a large scoop of vanilla ice cream, end drizzle a large spoonful of warm caramel topping over the top, and serve immediately.

PINEAPPLE UPSIDE DOWN CAKE
This dense cake has the flavors of almond, caramel, and pineapple. Recipe is from Simply Recipes. Change of plans for Easter... Now i'll be making this cake as it is the favorite of Uncle. EDIT 6/11: If you are looking for an old fashioned pineapple upside down cake, you are probably better trying a different recipe. - Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer ontop of the caramel mixture.
- Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.
- Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

- Preheat oven to 375 degrees. Line a 9"x13" pan with parchment paper.
- In a large bowl, beat together cake mix, butter, eggs and pineapple juice. Mix well.Set aside.
- In a medium sauce pan over medium high heat melt butter and whisk in brown sugar and evaporated milk. Bring to a boil stirring consistently. Adjust heat to simmer and continue to stir for about 5-7 minuets being careful not to burn mixture. Remove from heat and whisk in vanilla.
- Carefully pour hot caramel mixture into baking pan over parchment paper. Distribute pineapple rings over caramel sauce. Add cherries.
- Pour cake batter over caramel and fruit.
- Bake for about 45 minuets or until inserted toothpick comes out clean.
- Once cake is finished baking, allow to sit for 3-5 minuets then remove cake from pan by flipping cake onto wired rack and carefully and slowly, pull back paper from caramel. to continue to cool. Failure to do this will allow the cake to keep baking, which will result to a dry cake.
- Place cake onto desired dish and serve. Refrigerate leftovers.

- For this recipe, we perfer to use a 9-inch pan with the sides that are at least 2-inches high. Alternatively, a 1-inch safe oven-safe skillet (either cast iron or stainless steel) can be used not only to cook the pineapple, but to bake th cake as well. If using a skillet instead of a cake pan, cool the juices directly in the skillet while making the batter; it's OK if the skillet is still warm when the batter is added. For a cake with a light, tender crumb, it is important to cream the butter and sugar well and to have the eggs at room temperature.
- Lightly spray 9-inch round, 2-inch deep cake pan with nonstick cooking spray, set aside.
- FOR THE PINEAPPE TOPPING:.
- combine pineapple, brown sugar, and orange zest in 10-inch skillet; cool over medium heat, stirring occasionally during first 5 minutes, until pineapple is translucent and has light brown hue, 15-18 minutes. Empty fruit and juices into mesh strainer or colander, set over medium bowl. Return juices to skillet, leaving pineapple in strainer, (you should have about 2 cups cooked fruit). Add orange juice to skillet and simmer juices over medium heat until thickened, beginning to darken, and mixture forms large bubbles, 6-8 minutes, adding any more juices released by fruit to skillet after 4 minutes. Off heat, whisk in butter and vanilla; pour caramel mixture into prepared cake pan. Set aside while preparing cake. (Pineapple will continue to release liquid as it sits: do not add this liquid to already-reduced juice mixture.).
- FOR THE CAKE:
- Adjust oven rack to lower-middle position and heat oven to 350°F Whisk flour, baking powder, salt, and cardamom in medium bowl; set aside.
- In bowl of standing mixer fitted with flat beater, cream butter and sugar at medium-high speed until light and fluffy. 3-4 minutes. Reduce speed to medium, add vanilla, and beat to combine; one at a time, add whole eggs, the egg white, beating well, and scraping down bowl after each addition. Reduce speed to low; add about 1/3 of the flour mixture and beat until incorporated. Add half of milk and beat until incorporated; repeat, adding half of remaining flour mixture and remaining milk, and finish with remaining flour. Give final stir with rubber spatula, scraping bottom and sides of bowl to ensure that batter is combined. Batter will be thick.
- TO BAKE:.
- Working quickly, distribute cooked pineapple in cake pan in even layer, gently pressing fruit into caramel. Using rubber spatula, drop mounds of batter over fruit, then spread batter over fruit and to sides of pan. Tap lightly against work surface to release any air bubbles. Bake until cake is golden brown and toothpick into center comes out clean, 45-50 minutes. Cool 10 minutes on wire rack, then place inverted serving platter over cake pan. Invert cake pan and platter together; life off cake pan. Cool to room temperature, about 2 hours. Then cut into pieces and serve.

- Preheat oven to 350 F (180 C). In a large bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, add eggs and beat. Add sugar and brown sugar and beat. Add vegetable oil and beat. Pour into dry ingredients and stir to combine. Add carrots and pineapple and mix to incorporate. Pour into two 20-centimeter greased cake pans. Bake for 80 minutes, or until toothpick inserted into the centre comes out clean. Let cool.
- For the icing, whip together butter and icing sugar and beat until smooth. Add cream cheese and continue beating. Add vanilla and rum and beat until incorporated.
- For salted caramel drizzle, add water to pan. Add sugar and stir until it starts to dissolve. Put on the heat and let simmer until it turns a dark amber colour. Warm the cream. Slowly add it to the sugar, stirring. Let simmer a few minutes more. Take off heat. Add butter and stir in, being careful of splattering. Add salt and stir in. Let the caramel cool to room temperature.
- When ready to assemble, slice the top off of the two cakes to level. Slice each cake in half lengthwise. Spread icing on each layer of cake and stack. Refrigerate 30 minutes. Spread icing around outside and over the top until smooth all around. Refrigerate one hour. Cover top of cake with caramel drizzle and let drip down the sides. Garnish with leftover icing and whole pecans.
