1/3 cup wheat germ
1 (7 ounce) can no-salt-added corn, drained or 1 cup cooked fresh corn kernels
1/3 cup finely sliced green onion
1/3 cup minced parsley
1/3 cup chopped carrot
1/3 cup chopped celery
3 tablespoons polyunsaturated oil (vegetable)
2 tablespoons lemon juice
1/2 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon vegit seasoning or 1/4 teaspoon Mrs. Dash seasoning mix
salad greens
1 sliced cucumber

Steps:

  • Combine the wheat germ, corn, onions,parsley, carrot and celery.
  • Combine the oil, lemon juice, herbs and Mrs Dash or Vegit and combine with wheat germ corn mix.
  • Line a salad bowl with crisp salad greens and fill the center with the salad mix.
  • Wash a fresh cucumber and slice it very thin. Do not peel the cucumber unless it has been waxed to preserve it. Place the slices decoratively over the corn mix.

1 egg
1/2 cup brown sugar
1 1/4 cups nonfat milk
1/3 cup butter or 1/3 cup margarine, melted
1 cup flour
1/4 teaspoon salt
4 teaspoons baking powder
1 cup wheat germ

Steps:

  • Preheat oven to 425 degrees.
  • In large bowl, beat together the egg, sugar, milk and butter.
  • Mix into the milk mixture the flour, salt and baking powder.
  • Batter may be lumpy.
  • Fold in one cup wheat germ.
  • Spoon mixture into greased muffin tins.
  • Bake for 20 minutes.

2 ears fresh corn, kernels cut from cob
½ red onion, diced
1 tablespoon fresh parsley
salt to taste
ground black pepper to taste
1 tablespoon chopped fresh chives

Steps:

  • Heat the butter in a saucepan over medium heat, and stir in the corn and onion. Cook 5 minutes, until heated through. Mix in parsley, and season with salt and pepper. Garnish with chives to serve.

These are so good! We had them tonight with beef taco salad, and I think these muffins are even better than the cornbread wedges I usually make! Firm yet tender, these plump golden muffins will add wholesome flavor to any meal. Wheat germ, milk, and cornmeal add to the health benefits, while sucanat (a minimally processed sweetener) helps to give the muffins their naturally delicious taste. Plus, they are really easy! If you're looking for a simple cornbread muffin WITHOUT a sugar overload and WITH a lot of scrumptious flavor, try these. They are great when served hot out of the oven, drizzled with a little honey or topped with cheese :-)

1 cup wheat germ
8 teaspoons baking powder
1 teaspoon salt

  • Stir dry ingredients together.
  • Make a well, add all remaining ingredients, and stir just until moistened.
  • Divide batter between 18 sprayed muffin cups; bake at 400 degrees for 12-15 minutes, and serve hot!

1 cup yellow cornmeal
3/4 cup unbleached flour
1/4 cup wheat germ
4 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sucanat or 2 tablespoons brown sugar
2 eggs, beaten
1 cup milk
1/4 cup melted butter

Steps:

  • Stir dry ingredients together.
  • Make a well, add remaining ingredients, and stir just until moistened.
  • Pour into sprayed 9 inch pie plate and bake 25 minutes at 400 degrees; cool on rack 15 minutes, invert bread onto rack, and cut into wedges.
  • Edited to say: I have been making this with 1/2 cup of unbleached flour and 1/2 cup of wheat germ (increasing the wheat germ), and it is just as delicious -- so try it the healthier way if you are so inclined!
