This Corn Souffle recipe is a fluffy, subtly sweet corn custard that's a perfect side dish for the holidays!

4 large eggs
1/4 cup unsalted butter, melted and cooled
1/4 cup granulated sugar
1/2 cup milk
4 Tablespoons cornstarch
4 Tablespoons cornmeal
1 (15.25 oz) can corn kernels, drained (or 1 1/2 cups fresh or frozen corn kernels)
2 (14.75 oz) cans cream style corn
1 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • Preheat the oven to 400 degrees. Grease a 9 x 13 inch casserole dish or a 3 quart flat oval baking dish.
  • In a large bowl, lightly beat the eggs with a whisk. Whisk in the butter and sugar.
  • In another bowl or large measuring cup, whisk together the milk, cornstarch, and cornmeal until smooth. Add to the egg mixture and whisk until well combined.
  • Add the corn kernels, cream corn, salt, and vanilla and stir until combined.
  • Pour the mixture into the prepared pan and bake for 45 minutes to 1 hour, or until the top is lightly browned and the souffle is set. Serve immediately.

Cornbread Souffle image

This lovely cornbread souffle is the perfect light lunch along with a salad; but it also makes a great theatrical start to a special dinner.

2 tablespoons unsalted butter plus 2 tablespoons melted
1/4 cup plus 1 tablespoon grated Parmesan
1 1/2 cups whole milk
1 cup stone-ground cornmeal
4 large egg yolks plus 5 large egg whites
1 teaspoon kosher salt
Pinch cayenne pepper

Steps:

  • Preheat the oven to 375 degrees F. Butter six 4-ounce souffle ramekins with the melted butter using a pastry brush with an upward motion. Sprinkle the 1 tablespoon Parmesan into the 6 ramekins to coat. Run a finger around the inside lip of the ramekins to clean off any excess, so that the souffle rises more evenly.
  • Mix 1/2 cup milk with the cornmeal in a small bowl. Bring the remaining cup milk and the remaining 2 tablespoons butter to a boil over medium heat in a small pot, then add the cornmeal mixture and cook, stirring constantly, until thickened, about 2 minutes. Let cool slightly, then mix in the egg yolks, salt, cayenne and the remaining 1/4 cup Parmesan. Beat the egg whites in a large bowl with an electric mixer, on medium-high speed until they hold soft peaks.
  • Gently fold the egg whites into the cornmeal mixture and divide among the prepared ramekins. Put them on a baking sheet and bake until they have puffed and risen and the tops are browned and firm, about 25 minutes. Serve hot within 5 to 10 minutes (the souffles may deflate slightly).

6 large eggs
2 tablespoons plus 1/2 cup cornmeal, divided
2 cups fresh or frozen corn (about 10 ounces), thawed
2 cups 2% milk
1 tablespoon sugar
3/4 cup heavy whipping cream
1/2 cup butter, melted
1 tablespoon canola oil
1 cup chopped sweet onion
3 ounces cream cheese, softened
1 teaspoon plus 1/8 teaspoon salt, divided
1/2 teaspoon freshly ground pepper
1/8 teaspoon baking soda

Steps:

  • Separate eggs; let stand at room temperature 30 minutes. Grease a 2-1/2-qt. souffle dish; dust lightly with 2 tablespoons cornmeal., Preheat oven to 350°. Place corn, milk and sugar in a blender; cover and process until smooth. Add cream and melted butter; cover and process 15-30 seconds longer., In a large saucepan, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until tender. Stir in corn mixture, cream cheese, 1 teaspoon salt, pepper and remaining cornmeal until heated through. Remove to a large bowl., Whisk a small amount of hot mixture into egg yolks; return all to bowl, whisking constantly., In a large bowl, beat egg whites with baking soda and remaining salt on high speed until stiff but not dry. With a rubber spatula, gently stir a fourth of the egg whites into corn mixture. Fold in remaining egg whites. Transfer to prepared dish., Bake 45-50 minutes or until the top is deep golden brown and puffed and center appears set. Serve immediately.

1 cup chopped onion
1 cup chopped red bell pepper
1/2 teaspoon unsalted butter
3 cups 1% milk
1/2 cup yellow cornmeal
4 oz extra-sharp reduced-fat Cheddar (made from 2% milk), coarsely grated
2 tablespoons chopped fresh flat-leaf parsley
2 large egg yolks
1/4 teaspoon freshly ground black pepper
1 teaspoon salt
7 large egg whites
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 375°F.
  • Cook onion and bell pepper in butter in a 2-quart heavy saucepan over moderate heat, stirring frequently, until softened. Add milk and bring to a boil. Add cornmeal in a slow stream, whisking, and cook over low heat, stirring constantly, until thickened, about 5 minutes. Remove from heat and cool 5 minutes.
  • Whisk in cheese, parsley, yolks, pepper, and 1/2 teaspoon of salt.
  • Beat whites with cream of tartar and remaining 1/2 teaspoon salt in a large bowl with an electric mixer on medium speed until they just hold stiff peaks. Fold one fourth of whites into cornmeal mixture to lighten, then fold cornmeal mixture gently but thoroughly into remaining whites. Spoon mixture into a greased 3-quart casserole and smooth top.
  • Bake in middle of oven until puffed and golden brown, 30 to 35 minutes.
  • Serve immediately.

5 ears corn, left in husks
3 Green Tomatoes, recipe follows, small dice
2 green bell peppers, cored, seeded and small diced
2 red bell peppers, cored, seeded and small diced
1 cup white vinegar
2 tablespoons granulated sugar
1 1/2 tablespoons kosher salt
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 teaspoon freshly ground black pepper
Zest and juice of 3 lemons
1 pound seeded habanero
1/4 cup granulated sugar
1/4 cup white distilled vinegar
1 tablespoon chopped garlic
Kosher salt and freshly ground black pepper
3 eggs
Juice of 1/2 lemon
2 tablespoons Dijon mustard
3 ounces white distilled vinegar
3 cups vegetable oil
3 cups cornmeal
2 cups cornstarch
2 tablespoons sweet paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon dried oregano
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
4 cups all-purpose flour
Blended oil, for frying
Beaten eggs, for egg wash
Four 4- to 5-ounce fillets yellowtail snapper, skinned and boned
3 pounds green tomatoes, sliced
2 cups apple cider vinegar
1 1/2 cups brown sugar
1/4 cup granulated sugar
1/4 cup white vinegar
2 tablespoons kosher salt
1 tablespoon mustard seeds
1 teaspoon freshly ground black pepper

Steps:

  • For the roasted garlic: Preheat the oven to 350 degrees F.
  • Place cloves in a small oven-safe dish. Cover with oil and then foil. Roast 45 minutes.
  • For the chow chow: Meanwhile, preheat a grill to medium heat.
  • Grill the corn in the husks, then shuck and cut the kernels from the cobs. In a medium bowl combine corn, Tomatoes and bell peppers. In a separate bowl, combine vinegar, granulated sugar, salt, granulated garlic, granulated onion, pepper, lemon juice and zest and 2 1/2 ounces water. Add to vegetable mixture. Refrigerate until ready to use.
  • For the habanero hot sauce: Combine habaneros, granulated sugar, vinegar, garlic, salt and pepper and just enough water to cover in a small pot. Cover and cook on medium heat until peppers are tender and liquid is almost gone. Remove and let cool. Blend until smooth.
  • For the smoky habanero aioli: Combine eggs, lemon juice, mustard, vinegar and 2 tablespoons roasted garlic together in a tall container or wide mouth jar. Using a stick blender, slowly add oil until combined. Add 1 to 2 tablespoons habanero hot sauce.
  • For the cornmeal snapper: Combine cornmeal, cornstarch, paprika, granulated garlic and onion, oregano, salt, pepper and 2 cups flour in a medium bowl and mix well.
  • Set up standard breading station: A dish with the remaining 2 cups flour, a dish with egg wash, and the cornmeal mixture.
  • Heat oil in a deep-fryer or in a Dutch oven fitted with a deep-fry thermometer to 350 degrees F.
  • Coat snapper in flour, then egg, then cornmeal. Fry snapper until golden in color and cooked through, 3 to 4 minutes.
  • To serve, spoon aioli on the plate and place snapper directly on top. Serve chow chow on the side.
  • Combine green tomatoes, cider vinegar, brown sugar, granulated sugar, white vinegar, salt, mustard seeds, pepper and 2 1/4 cups water.
