RED WINE VINEGAR MARINADE

Red Wine Vinegar Marinade image

Always marinate food in refrigerator; never at room temperature. Allow 1/4 to 1/2 cup of marinade for each 1 to 2 lbs. of meat. For tenderization to take place, beef must be marinated at least 6 hour or longer. Marinating longer than 24 hours causes the meat fibers on the surface to break down, resulting in a "mushy" texture. Remaining marinade may also be served as a sauce with the grilled meat or poultry. It should be heated to the boiling point before serving, if not using as a sauce it should be discarded.

Provided by Catnip46

Categories     Weeknight

Time 30m

Yield 1/4 cup

Number Of Ingredients 6

1/4 cup red wine vinegar
2 tablespoons vegetable oil
1 tablespoon Dijon mustard
1 minced garlic clove
1/2 teaspoon dried Italian seasoning
1/8 teaspoon fresh coarse ground black pepper

Steps:

  • Mix marinade ingredients.
  • Pour marinade in a heavy-duty seal-able plastic bag or a glass dish. Select dishes in which the foods will fit snugly but lie flat.
  • Turn food occasionally during marinating so that all sides are equally exposed to the marinade. Marinate at least 30 minute but remember the longer time marinading the more tender and favorable the meat.
  • Grill or cook food.

THE WORLD'S BEST ALL-PURPOSE MEAT MARINADE

The World's Best All-Purpose Meat Marinade image

This versatile meat marinade adds so much flavor to your meat. It helps to tenderize and infuse your steak, pork chops, or chicken with taste plus making it tender.

Provided by Marisa Franca

Categories     Main Course Meat

Time 10m

Number Of Ingredients 10

2/3 cup olive oil
2/3 cup soy sauce
10 garlic cloves (minced)
6 tbsp light brown sugar
4 tbsp Worcestershire sauce
4 tbsp hot sauce
2 tbsp dijon mustard
2 tbsp apple cider vinegar (*** see notes)
2 tsp red pepper flakes
1 tsp black pepper

Steps:

  • Add all of the ingredients to a medium size glass bowl.
  • Using an immersion blender, blend all of the ingredients together.
  • Pour the marinade into a glass jar and screw on the lid. Let the flavors meld in refrigerator overnight.
  • When ready to use, place the meat in a zip lock bag. Pour enough of the marinade over the meat so that it is covered with the seasoning.
  • Marinate for at least 1 hour or up to 24 hours. The longer it marinates, the better the seasoning penetration.
  • If you're marinating chicken, marinate under 2 hours. The texture of the meat does not do well with long marinates in acidic liquids such as vinegars or citrus.

RUSSIAN SHASHLIK RECIPE (Шашлык)

Homemade Lamb or Beef Shish Kebab Skewers Marinated and Cooked Over a Charcoal Grill, like Souvlaki - Russian Shashlik Recipe (Шашлык)

Provided by Peter Kolesnichenko

Categories     Dinner     Main

Number Of Ingredients 8

2 kg lamb (cut into 2" cubes (shoulder or leg))
4 bay leaves (ripped in half)
4 medium onions (sliced)
2 teaspoons salt
2 teaspoons pepper to taste
2 tbs oil
1-½ cups of water (Borjomi Mineral Water)
hot paprika powder (optional)

Steps:

  • In a large bowl, combine the lamb, sliced onions, bay leaves, salt, oil and water. Using your hands, mix them all together set aside in the fridge to marinate overnight. If in a hurry then for minimum 4 hours.
  • Thread the meat pieces onto metal skewers, about 6 per skewer, with any fat positioned towards the outside of the skewer.
  • Prepare the mangal. Place charcoals in the mangal, and light and allow to burn for about 30 minutes, or until the charcoal is all white. Your mangal is ready.
  • Place the skewers on the mangal and cook until the meat is cooked. The length of time is determined by the heat and height from the charcoal. Don't burn your meat! Keep turning the shashlik as it cooks, so it doesn't burn. I like to add hot paprika spice directly on the skewer for a spicy kick.

7 TIPS FOR MAKING MARINADE MAGIC - BLOG.CA

From blog.pamperedchef.ca
Estimated Reading Time 6 mins
  • Marinades are a Surface Treatment. You may have heard that marinating food for days on end will get all those flavors deep into the meat. But, that’s not the case.
  • Don't Marinate Meat at Room Temperature. You may find a recipe that calls for marinating your meat at room temperature. Ignore that instruction. Marinating at room temperature used to be a common cooking practice and appears in a fair number of recipes.
  • Perfect Your Marinade to Meat Ratio. If you don’t use enough marinade, your meat won’t be fully coated. If you use too much, you’re just wasting money.
  • Create Your Marinade. You may have a specific marinade recipe you want to use, or you might want to try making your own. Marinades are easy to make: The most important thing (other than using flavors you like) is to make sure you include all the ingredients you need for your desired results.
  • Consider the Chemistry. Though acid is a common marinade ingredient, it also complicates the chemistry of the situation. It can do great things for your dish, but it also means you need to pay attention.
  • Take Your Time. Marinades require time. They need time for the herbs and spices to combine with the oil and acid. They need time for the salt to penetrate deep into the meat.
  • Reuse Wisely—Or Not at All. Never put used marinade on cooked food. A marinade can be reused, but only if you boil it first. It may be tempting to toss your marinade in with your meat while it’s cooking, but the marinade won’t hold heat the same way your dish will.

  • Prepare the grill for direct cooking over high heat (230°C to 290°C). If you’re using a charcoal grill, keep a small part of the charcoal grate clear of briquettes as a safety zone of indirect heat.
  • Lift the steaks from the dish and pat dry with paper towels. Discard the marinade. Lightly brush the steaks with oil and season evenly with salt and pepper. Allow to stand at room temperature for 15 to 30 minutes before grilling. Meanwhile, make the sauce.

Mix in the sour cream and cheese and cook just until the sauce begins to simmer and the cheese has melted, about 3 minutes, stirring occasionally. Do not boil the sauce or it will curdle. Remove from the heat, add ¼ teaspoon of pepper and cover to keep warm.
