1 1/2 cups avocados, diced
3 tablespoons lime juice
1/2 teaspoon salt
1 dash pepper
1 dash nutmeg
2 (12 1/2 ounce) cans chicken broth
1/4 cup heavy cream, whipped

Steps:

  • Place avocado, lime juice, salt, pepper and nutmeg in an electric blender. Add 1 can of chicken broth.
  • Cover and blend 30 seconds at high speed.
  • Stir in remaining can broth; chill until ice-cold.
  • Garnish with a spoonful of whipped cream and a sprinkling of nutmeg.
  • Prep time does not include refrigeration time.

1 chicken carcass, free range
1 bulb of garlic, peeled and roughly chopped
1 onion, large and sliced
1/2 cup risoni
3 carrots, grated
4 stalks celery, finely chopped
parsley, sprig, chopped
salt, Himilayan Crystal Rock Salt

Steps:

  • in a large saucepan cover the carcass with 8 cups of cold water. Add the garlic cloves and onion and bring to a boil. Gently simmer for 30 - 45 minutes.
  • Skim off any foam that forms on the surface with a spoon or small sieve. The bitter foam can boil back into the soup and taint the flavour.
  • Remove the carcass into a colander. Return the soup to the heat and add the pasta, vegetables and chopped parsley.
  • Simmer for 15 - 20 minutes until the pasta is cooked and the vegetables tender.
  • Adjust seasonong.
  • Meanwhile remove meat from the chicken carcass and add to the soup.
