This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

2 tablespoons unsalted butter
1 medium onion, diced
1 green bell pepper, diced
1 clove garlic, minced
1 pound lean ground beef
12 ounces (1 1/3 cup) tomato sauce
3/4 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon red wine vinegar
1 teaspoon paprika
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
6 hamburger buns, toasted

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
  • Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.

1 pound lean ground beef
¼ cup chopped onion
¼ cup chopped green bell pepper
½ teaspoon garlic powder
1 teaspoon prepared yellow mustard
¾ cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

Steps:

  • In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
  • Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

2 tablespoons cornmeal
1 teaspoons olive oil
0.5 cups onion
0.25 cups celery
1 tablespoons garlic
0.25 teaspoons salt
1 pounds lean ground beef
24 ounces marinara sauce
0.5 units carrots
1 pounds pizza dough
0.25 cups parmesan cheese

Steps:

  • 1. Adjust oven rack to lowest position. Preheat oven to 425 F. Sprinkle cornmeal on large cookie sheet. Set aside.
  • 2. Heat 1 teaspoon of the oil in a large skillet over medium heat. Add onion, celery, garlic and salt. Cook, stirring, 3 minutes, until vegetables soften. Stir in ground beef, breaking up with the back of the spoon. Cook 3 to 5 minutes, until beef is no longer pink. Add marinara sauce and carrot, stirring until combined. Reduce heat to medium-low; simmer 15 minutes. Transfer to a large bowl; cool 15 to 20 minutes, until room temperature. Makes 4 cups.
  • 3. Divide dough into 4 equal pieces. On a lightly floured surface, shape dough into four 7-inch circles. Spread 1/2 cup of the meat filling in bottom half of dough circle, leaving a 1/2 inch border. Sprinkle with 1 tablespoon of the parmesan. Fold top half of circle over filling to make a semicircle. Fold edge over and flute. Transfer Calzone to prepared sheet. Refrigerate. Repeat process with remaining dough and 1 1/2 cups filling. Brush top of each Calzone with the remaining 2 tablespoons oil. Bake 15 to 20 minutes, until golden brown.
  • For another batch of Calzones or a pasta topper: Freeze remaining 2 cups filling in a microwave-proof bowl for up to 2 weeks. To reheat: Microwave on high 5 to 6 minutes.

2 1/2 pounds ground beef
1 large green bell pepper, diced
1/2 large onion, diced
1 1/2 cups ketchup
5 cloves garlic, minced
Hot sauce, such as Tabasco
Worcestershire sauce
Salt and freshly ground black pepper
8 kaiser rolls
2 tablespoons packed brown sugar
2 teaspoons chili powder, or more as needed
1 teaspoon dry mustard
1/2 teaspoon red pepper flakes, or more as needed
2 tablespoons butter, softened
Chips or salad, for serving, if desired

Steps:

  • Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
  • Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
  • To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

Sloppy joes are a simple, American staple the whole family can get stuck into. Add a dash of spicy chipotle or smoky barbecue sauce to the minced beef filling for some zing.

1 tbsp vegetable oil
1 onion , finely chopped
2 small red peppers or yellow peppers, finely chopped
2 garlic cloves , crushed
400g minced beef
2 x 400ml cans chopped tomatoes
2 tbsp chipotle or smoky barbecue sauce
4 cheese slices
6 burger buns
crispy onions , to serve
iceberg lettuce , to serve

Steps:

  • Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
  • Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

1 pound lean ground beef (90% lean)
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup shredded carrot
1 can (8 ounces) tomato sauce
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 tube (16.3 ounces) large refrigerated buttermilk biscuits
1/2 cup shredded cheddar cheese, optional

Steps:

  • In a large skillet, cook beef, onion, celery and carrot over medium heat 6-8 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain., Stir in tomato sauce, ketchup, brown sugar, vinegar, Worcestershire sauce and tomato paste. Bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until thickened, stirring occasionally. Cool completely., Preheat oven to 350°.
