Grandmother's Cheesecake image

A citrus cheesecake with a shortbread crust. It takes a long time of preparation but it is well worth the wait. If you can't find a vanilla bean, substitute 1/4 teaspoon vanilla extract for each 1 inch piece of bean. You can top with any of your favorite fruits or toppings, or eat it plain. Summertime fresh fruits are nice, or chocolate lovers can spread on a layer of fudge topping.

1 cup all-purpose flour
¼ cup white sugar
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
½ vanilla bean
½ cup unsalted butter
1 egg yolk
5 (8 ounce) packages cream cheese, softened
1 ¾ cups white sugar
3 tablespoons all-purpose flour

¼ cup heavy cream

Steps:

  • In a large bowl, combine 1 cup flour, 1/4 cup sugar, 1 teaspoon lemon peel, and 1 teaspoon orange peel. Split a 1-inch piece of vanilla bean; scrape seeds into flour mixture. Cut in butter until mixture resembles course crumbs. Add 1 egg yolk; stir until all flour is moistened. Gather dough into ball, wrap in wax paper, and refrigerate for 1 hour and 30 minutes.
  • Lightly butter a 9 inch springform pan. Roll dough on lightly floured surface to 1/8 inch thick; trim to a 10 inch circle. Reserve pastry trimmings. Press pastry circle into bottom and 1/2 inch up sides of a 9 inch buttered springform pan. Refrigerate 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C). Bake crust for 20 minutes, until lightly browned. Cool on wire rack.
  • Beat cream cheese, 1 3/4 cups sugar, 3 tablespoons flour, 1 1/2 teaspoons lemon peel and 1 1/2 teaspoons orange peel in large mixer on medium speed until light and fluffy, about 10 minutes. Split a 1 inch piece of vanilla bean and scrape seeds into cream cheese mixture. Beat in 5 eggs and 2 egg yolks, 1 at a time, on medium speed. Stir in cream.
  • Increase oven temperature to 500 degrees F (260 degrees C). Roll out reserved pastry trimmings on lightly floured board; cut into strips 2 inches wide. Pat strips up side of pan, pressing dough lightly to baked crust. Pour filling into crust. Bake 15 minutes.
  • Reduce oven temperature to 200 degrees F (95 degrees C). DO NOT OPEN OVEN DOOR! Bake until cheesecake is firm in center, about 50 minutes. Turn off oven; leave cheesecake in oven with door slightly open for 1 hour. Remove from oven, and cool completely on wire rack. Refrigerate at least 2 hours.

2 cups white sugar

2 ½ cups self-rising flour
1 cup milk
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 8 inch pans.
  • In a medium bowl, cream together the butter and sugar. Beat in the eggs, one at a time. Combine the milk and vanilla, add alternately to the creamed mixture with the flour, ending with the flour. Mix only as much as necessary. Pour into the prepared pans.
  • Bake for 15 to 20 minutes in the preheated oven. Cake will pull away from the sides of the pan slightly when done. Allow cakes to cool in the pans for a few minutes before removing to wire racks to cool completely.

Steps:

  • Preheat oven to 350 degrees.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the eggs, undrained crushed pineapple, flour, 1 cup of the white sugar, baking soda, salt, and 1 teaspoon of the vanilla together and stir until just combined. Pour batter into one ungreased 9x13 inch baking pan.
  • Combine the light brown sugar and the chopped nuts. Sprinkle over the top of the cake batter. Bake in preheated oven for 25 to 35 minutes or until cake tests done. Remove cake from oven and pour topping over hot cake.
  • To Make Topping: In a small saucepan combine the butter or margarine, the evaporated milk, the remaining 1/2 cup of the white sugar, and 1 teaspoon of the vanilla. Cook over medium low heat, stirring occasionally until sugar is dissolved. Mixture will be thin. Pour over hot cake.

This is a cheese-pie really, that my grandmother and mother both make perfectly. This was handed down from 4 generations in my family, and I've seen other people's variations, but so far, mom's and grandma's are my favorites.

2 (8 ounce) cream cheese, packages
2 large eggs, well beaten
3/4 cup sugar
1/2 teaspoon vanilla extract

1 graham cracker pie crust (try to find extra serving size)

Steps:

  • Preheat oven 375 degrees.
  • Beat two eggs together first
  • Then add all Filling Ingredients together with eggs.

  • Tak out of oven to cool for 15 minutes.

  • Spread Topping on the top of the pie and bake for 5 minutes.

1 1/2 cups crushed graham crackers (10 crackers, about 5 ounces)
1/3 cup unsalted butter, melted
1/3 cup granulated sugar
4 8-ounce packages cream cheese, room temperature
16 ounces sour cream, room temperature
8 tablespoons unsalted butter, room temperature
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
1 1/2 cups granulated sugar
5 large eggs, room temperature
1 14.5-ounce can pitted tart cherries
1/2 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon fresh lemon juice

Steps:

  • Preheat oven to 350°F. Line the bottom of a 10-inch springform pan with parchment paper. Set aside.
  • In a medium bowl, stir together the ingredients for the crust. Press firmly into the bottom of the prepared pan.
  • Bake for 9 minutes, until golden brown. Remove from oven and set aside to cool. Increase oven temperature to 375˚F.
  • Add cream cheese to the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until whipped and fluffy.
  • Add sour cream, butter, cornstarch, vanilla, lemon juice, and sugar. Beat until combined. Beat in eggs one at a time on medium speed, fully incorporating between additions.
  • Grease the side walls of the springform pan with unsalted butter. Double wrap the base of the springform pan with aluminum foil.
  • Place springform pan in a large roasting pan. Pour in filling mixture.
  • Fill roasting pan halfway with about 6 cups boiling water, making sure it doesn't go up past the foil on the pan.
  • Bake for 1 hour. The filling should be set, still wiggly but not wet in the center.
  • Remove springform pan from water bath. Set aside to cool on the countertop for 3 hours. Then refrigerate for 6 hours.
  • Once the cheesecake is chilled, drain cherries, reserving the juice in a small bowl.
  • In a medium saucepan, combine cherry juice, sugar, and cornstarch. Bring mixture to a boil. Cook for 2 minutes, stirring occasionally, or until thickened.
  • Remove from heat. Stir in lemon juice and reserved cherries.
  • Spread over filling. Chill for at least 2 hours before serving. Unmold from springform pan, slice, and serve.

2 tbsp cornstarch

1 tsp baking powder
1/2 tsp salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside.
  • Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick).
  • Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the centre comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

Based on a traditional yellow cake mix recipe, this cinnamon and pecan coffee cake is the perfect breakfast recipe! Baked in a Bundt pan with a simple glaze on top, anyone who eats this will want the recipe for themself!

¼ cup cornstarch
1 ½ cups sugar
2 ½ tsp baking powder
½ tsp salt
8 tbsp unsalted butter (room temperature)
½ cup vegetable oil

2 egg yolks
1 cup milk
2 tsp vanilla extract
½ cup sour cream
1 cup toasted pecans (chopped)
½ cup sugar
1 tbsp cinnamon
1 cup sifted powdered sugar
½ tsp cinnamon
1 tsp vanilla extract
1-2 tbsp milk

Steps:

  • Preheat the oven to 350°F. Grease a bundt pan with baking spray and set it aside.
  • In the bowl of an electric mixer, combine the flour, cornstarch, sugar, baking powder, and salt. Mix on low speed for 30 seconds to combine. Add the room temperature butter 1 tbsp at a time and allow each piece to incorporate before adding the next, 2-3 minutes, until the mixture looks like wet sand. Add the oil and mix on low.
  • In a large measuring glass, combine the eggs, yolks, milk, and vanilla extract. Whisk to combine. With the mixer on low speed, add half of the wet mixture to the mixer. Mix for 1 minute and add the sour cream. Continue to mix for 1 minute, then add the remaining milk mixture. Mix until just combined, 1 minute, and turn the mixer off.
  • In a small bowl, combine ¾ cup of toasted pecans, ½ cup of sugar, and the cinnamon. Stir to combine. Pour roughly ¾ of the batter into the prepared Bundt pan. Sprinkle about ¾ of the sugar mixture on top. Repeat with the remaining batter and sugar mixture. Use a knife inserted all the way to the bottom of the pan and make figure-eight patterns to combine the sugar and batter slightly.
  • Bake in the preheated oven until the cake is golden and a skewer inserted in the middle comes out mostly clean, 45-55 minutes. Remove the cake from the oven and cool in the pan for 10 minutes. Then invert on a cooling rack for 40 minutes to finish cooling.
  • While cooling, combine the powdered sugar, cinnamon, vanilla extract, and milk. Whisk until smooth and drizzle over the cooled cake. Top with the remaining nuts and serve.

2 cups raisins
2 cups water
1 cup butter (cubed)
3-1/2 cups all-purpose flour
1 tsp baking soda

1/2 tsp each ground nutmeg and cloves
1 cup chopped pecans
1 cup heavy whipping cream
1 cup butter (cubed)
1 cup sugar
4 large egg yolks (lightly beaten)
1/4 cup brandy
1/4 cup brandy

Steps:

  • In a large saucepan, combine the sugar, raisins, water and butter. Bring to a boil. Reduce heat to medium; cook, uncovered, until sugar is dissolved, about 5 minutes. Remove from the heat; cool.
  • In a large bowl, combine the flour, baking soda, cinnamon, nutmeg and cloves. Add raisin mixture; beat until blended. Fold in pecans.
  • Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° until cake springs back when lightly touched, 45-55 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  • For sauce, in a large saucepan, bring cream to a boil; stir in butter and sugar until smooth. Reduce heat; stir a small amount of hot liquid into egg yolks. Return all to the pan, stirring constantly. Cook until sauce is slightly thickened and coats the back of a spoon (do not boil). Remove from the heat; stir in brandy. Serve warm with cake.
