RED HOTS {CAJUN MASHED POTATOES}
Steps:
- Fill a large pot with the 8 cups of water.
- Add dry and liquid crab boil and stir. Turn on heat to high.
- Add potatoes and bring to a boil. Boil until potatoes are fork-tender.
- Drain potatoes into a colander place back into pot.
- Add butter and begin mashing potatoes until mostly smooth.
- Add milk and salt and stir.
- Taste to season with more salt if necessary.

Steps:
- Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork tender, 20 to 25 minutes.
- Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all of the steam to escape.
- Turn off the heat before adding the butter, cream cheese, heavy cream and Cajun Seasoning. Mash, mash, mash! Next, add the seasoning salt, salt and pepper. Mash to combine.
- Place the lid on the pan to keep the potatoes warm until you are ready to serve.
- Combine the garlic powder, paprika, black pepper, salt and cayenne.
CAJUN MASHED POTATOES
Best mashed potatoes recipe ever! I started this around 20 years ago and refined it over the years to this recipe. My kids love it!

Steps:
- Wash the potatoes and cut into 1" squares. LEAVE the skins on the potatoes.
- Boil the potatoes in a large pot for 15-20 minutes or until the skins freely separate from the potatoes.
- A few minutes prior to draining the potatoes, put the butter, salt, pepper, and cream cheese in a small bowl and microwave until soft.
- Add the Mrs. Dash seasoning and mix thoroughly.
- When the potatoes are done, drain the water from them but leave them in the pot.
- Pour the cheese/butter/seasoning mixture on top. Add milk, a little at a time, until the consistency is as you like it.
- Mix thoroughly with a potato masher, adding up to more milk if desired.
- Serve hot.

RED HOT SOUTHERN SWEET POTATOES
Red hot cinnamon candies have been 1 of my favorite ingredients since my childhood & this is the 1st of 2 recipes I'm entering that feature them. I found this at allrecipes.com & it was posted by SMTHJG who said "My grandmother used to make this simple sweet-spicy dish every yr for the holidays. It's so delicious that you'll want to make it all yr." I agree w/her & hope you will as well. Just imagine this dish along side a lovely glazed ham! Yum!

Steps:
- Place sweet potatoes in a lrg saucepan w/enough water to cover.
- Bring to a boil & cook over med heat till tender (about 25 min).
- Drain of all water & place in a lrg casserole dish.
- Preheat oven to 350°F (175°C).
- In a med bowl, stir together the butter, brown sugar, red hot candies & water.
- Pour over the sweet potatoes in the dish.
- Bake for 1 hr till sweet potatoes are soft & the candies are melted.
- After this, you may top w/marshmallows (if desired) & return the dish to the oven for 10 min to toast them.
