THAI BASIL CHICKEN

Adapted (liberally) from Simply THAI Cooking, this is a favorite in our house, as testified by the badly stained page in my cookbook. Can also sub pork for the chicken. Change vege to suit your taste - green beans are nice instead of bok choy. Prep all ingredients, including the sauces, before starting to cook.

1 medium bok choy, sliced 1-inch wide, whites and greens separated
1/2 onion, sliced
1/2 red bell pepper, sliced
12 ounces boneless skinless chicken breast halves, sliced 1/4-inch thick
1 teaspoon chopped garlic
1/2 teaspoon red pepper flakes
1/4 cup shredded basil
peanut oil, for stir-fying
2 tablespoons fish sauce
2 teaspoons sugar
2 tablespoons soy sauce
2 tablespoons oyster sauce
4 tablespoons water
1 teaspoon chili paste
1 teaspoon cornstarch
2 tablespoons water

Steps:

  • Heat oil in wok. Stir-fry onions, peppers, and white part of bok-choy until crisp tender. Remove and keep warm.
  • Add oil to wok if needed and stir-fry chicken, garlic, and pepper flakes until chicken is done. Add sauces in order, stirring between each addition to coat. Add cooked vegetables back and stir to coat.
  • Add green part of bok choy and basil, stirring just unti hot-crisp, and beginning to wilt. Serve immediately.

This only takes about 25 minutes to make. Very easy and fabulous flavor! This is very popular in Thailand. They sell this on the streets as well as in the restaurants. You won't believe how incredible this recipe is. It is my husband's and my new favorite. Serve with white rice.

2 tablespoons vegetable oil
½ onion, sliced
3 cloves garlic, sliced
1 large skinless, boneless chicken breast, cut into 1-inch pieces
¼ cup oyster sauce
3 tablespoons soy sauce
1 pinch white sugar
2 small chile peppers, sliced
⅓ cup water
½ cup fresh basil leaves

Steps:

  • Heat oil in a wok or large skillet over medium heat. Add onion and garlic; cook and stir until fragrant, about 30 seconds. Add chicken; cook and stir until no longer pink, about 5 minutes. Stir in oyster sauce, soy sauce, and sugar. Stir in chile peppers. Pour in water. Cook until slightly thickened, 3 to 5 minutes. Stir in basil before serving.

My version of this classic Thai dish has spectacular taste even with regular basil instead of Thai or holy basil. The sauce actually acts like a glaze as the chicken mixture cooks over high heat. The recipe works best if you chop or grind your own chicken and have all ingredients prepped before you start cooking.

⅓ cup chicken broth
1 tablespoon oyster sauce
1 tablespoon soy sauce, or as needed
2 teaspoons fish sauce
1 teaspoon white sugar
1 teaspoon brown sugar
2 tablespoons vegetable oil
1 pound skinless, boneless chicken thighs, coarsely chopped
¼ cup sliced shallots
4 cloves garlic, minced
2 tablespoons minced Thai chilies, Serrano, or other hot pepper
1 cup very thinly sliced fresh basil leaves
2 cups hot cooked rice

Steps:

  • Whisk chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar together in a bowl until well blended.
  • Heat large skillet over high heat. Drizzle in oil. Add chicken and stir fry until it loses its raw color, 2 to 3 minutes. Stir in shallots, garlic, and sliced chilies. Continue cooking on high heat until some of the juices start to caramelize in the bottom of the pan, about 2 or 3 more minutes. Add about a tablespoon of the sauce mixture to the skillet; cook and stir until sauce begins to caramelize, about 1 minute.
  • Pour in the rest of the sauce. Cook and stir until sauce has deglazed the bottom of the pan. Continue to cook until sauce glazes onto the meat, 1 or 2 more minutes. Remove from heat.
  • Stir in basil. Cook and stir until basil is wilted, about 20 seconds. Serve with rice.

1 cup Thai basil, fresh

Steps:

  • Mix sugar,lime juice and fish sauce in small bowl. Set aside.
  • Bring large pot of water to boil. Remove from heat. Add rice noodles, stirring to separate noodles. Let stand 5 to 7 minutes, or until noodles are tender but firm. Drain well. Set aside.
  • Heat oil in large skillet or wok on medium high heat. Add garlic and chili; stir-fry 15 seconds or until fragrant.
  • Add chicken, carrots and green onions; stir-fry 3 to 5 minutes until chicken is cooked through.
  • Stir in fish sauce mixture; stir-fry 1 minute. Add basil; stir-fry 30 seconds or until basil is wilted.
  • Add noodles; toss to coat. Serve immediately.

This is a recipe I got off the Thai Kitchen red rice noodles box. It's fantastic and very authentic tasting. It's also good with regular rice noodles and Asian wheat noodles. I've made it with Italian sweet basil, and also by substituting cilantro for the basil. Both are very good. I haven't tried it yet, but I think this would be great served with crushed peanuts sprinkled on top. I'm posting the recipe here for safekeeping.

1 tablespoon sugar
1 tablespoon lime juice
1 tablespoon fish sauce
4 ounces red rice noodles (2 single-serve packages)
2 tablespoons vegetable oil
1 teaspoon garlic, minced
1 small Thai chile, minced
1/2 lb boneless skinless chicken breast, cut into thin strips
1/4 cup carrot, julienne-cut
2 tablespoons green onions, thinly sliced
1/2 cup Thai basil (or cilantro)

Steps:

  • 2. Meanwhile, heat oil in large skillet or wok on medium-high heat. Add garlic and chile; stir fry 15 seconds or until fragrant. Add chicken, carrots and green onions; stir fry 3 to 5 minutes or until chicken is cooked through.
  • 3. Stir in fish sauce mixture; stir fry 1 minute. Add basil (or cilantro); stir fry 30 seconds or until basil (or cilantro) is wilted. Add to noodles in bowl; toss to coat. Serve immediately.
  • Tip: Thai basil has dark green leaves with purple stems and has a licorice flavor. It can be found in most Asian markets. If unavailable, substitute Italian basil.

oil
8 garlic cloves, sliced
6 shallots, sliced
3/4 lb rice vermicelli
4 dried red chilies
6 dried Chinese mushrooms, soaked
1 (6 ounce) can shrimp
3 tablespoons tomato paste
2 tablespoons sugar
1 tablespoon nam pla
1/2 cup bean sprouts
2 tablespoons basil
2 tablespoons peanuts, crushed

Steps:

  • Marinate chicken in wine 30 minutes.
  • In a small skillet, saute garlic and shallots in 3 Tablespoons oil until crisp; drain, reserving oil.
  • Boil rice vermicelli noodles 2 minutes; drain; toss with garlic oil.
  • Grind red chilies.
  • In a wok, heat 1 tablespoon oil and fry chilies 1 minute, until aroma mellows.
  • Add chicken and wine, and sliced Chinese mushrooms; stir-fry 3 minutes.
  • Add shrimp; heat through; add tomato paste, 2 tablespoons sugar, and nam pla.
  • Add bean sprouts and basil; stir 2 minutes.
  • Add noodles; toss.
  • Garnish with garlic, shallots, and peanuts.

1 medium onion, chopped
1 (3 ounce) poblano chiles, seeded and chopped

3 tablespoons fish sauce
2 (32 ounce) cartons reduced-sodium chicken broth
3 cups water
1/2 cup fresh basil leaf, packed and thinly sliced, plus sprigs for garnish
1 1/2 lbs boneless skinless chicken thighs, trimmed of fat and thinly sliced crosswise
1 (14 ounce) package linguine-style rice noodles
1/4 cup fresh lime juice

Steps:

  • Heat oil in a 6-quart dutch oven until hot. Add onion and chile, and cook 10 minutes or until lightly browned and tender, stirring occasionally.
  • Add ginger, garlic, red pepper flakes, and 1 tablespoons fish sauce. Cook one minute.
  • Add broth, water, and half the basil; heat to boiling on high.
  • Reduce heat to low, cover and simmer for 20 minutes.
  • Uncover, increase heat to medium-high. Stir in chicken and uncooked noodles and heat to boiling. Boil 1 minute.
  • Remove dutch oven from heat. Skim off fat.
