I searched high and low for a great recipe for slow cooker fajitas before I came up with this. The best part for me is that I don't have to defrost the meat before I throw it in there. Also, this makes a very large batch, so it's good for big families or a crowd of guests.

2 ½ pounds frozen skinless, boneless chicken breasts
1 (14.5 ounce) can diced tomatoes, well drained
1 (8 ounce) jar salsa
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground paprika
1 teaspoon white sugar
1 teaspoon onion powder
1 teaspoon garlic powder
¾ teaspoon chicken bouillon granules
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
1 pinch red pepper flakes, or to taste
2 onions, sliced into thin strips
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 green bell pepper, sliced into strips
2 tablespoons cornstarch
1 (15 ounce) package flour tortillas
1 (8 ounce) package shredded Cheddar Jack cheese
½ cup sour cream, or to taste

Steps:

  • Combine chicken breasts, tomatoes, salsa, chili powder, salt, paprika, sugar, onion powder, garlic powder, bouillon granules, cumin, cayenne pepper, and red pepper flakes in a slow cooker.
  • Cover and cook on Low until chicken is tender, about 5 hours. Transfer chicken to a cutting board; shred using 2 forks. Return to the slow cooker. Add onions, red bell pepper, yellow bell pepper, green bell pepper, and cornstarch.
  • Cook on Low until peppers soften, 1 1/2 to 2 hours. Serve chicken and peppers with tortillas, Cheddar Jack cheese, and sour cream.

All the delicious flavors of traditional fajitas without all the extra hassle! Just dump everything in the slow cooker and let it simmer to tender well seasoned perfection.

2 lbs boneless skinless chicken breasts
1 (14.5 oz) can petite diced tomatoes with green chilies
3 bell peppers ((preferrably 1 red, 1 yellow and 1 green) cored and sliced)
1 large yellow onion, (halved and sliced)
4 cloves garlic, (minced)
2 1/2 tsp chili powder
2 tsp ground cumin
1 tsp paprika
3/4 tsp ground coriander*
1 tsp salt
3/4 tsp pepper
2 Tbsp fresh lime juice
1 Tbsp honey
12 6-inch flour tortillas
Cilantro, sour cream, salsa, guacamole or sliced avocados, shredded Mexican cheese ((optional))

Steps:

  • Pour half of the canned tomatoes into the bottom of a slow cooker and spread into an even layer. Top with half of the peppers** and half of the onions. Sprinkle garlic in. Top with chicken breasts.
  • In a bowl whisk together chili powder, cumin, paprika, coriander, salt and pepper. Evenly sprinkle half of the seasoning over chicken breasts then flip chicken and sprinkle in remainder. Top with remaining half of the tomatoes, then layer in remaining peppers and onions.
  • Cover and cook on HIGH heat about 2 - 3 hours or low heat 4 - 6 hours, until chicken has cooked through and veggies are tender.
  • Remove chicken, and cut into strips, or shred. Ladle out 1 cup of the broth in slow cooker (mostly tomato liquid) and discard.
  • In a small bowl whisk together lime juice and honey and add to slow cooker along with chicken and season with additional salt to taste if desired (I sometimes like to add 1/4 cup chopped cilantro too here but this is optional). Gently toss. Serve warm in warmed tortillas optional toppings.

Steps:

  • In a slow cooker, place half of the bell peppers and onion.
  • Lay on the chicken, and coat both sides with taco seasoning, salt, and pepper.
  • Sprinkle on garlic, half of the lime juice, and diced tomatoes. Cover with remaining peppers, onion, and lime juice.
  • Cover and cook on high for 3 hours.
  • Remove chicken from the slow cooker, shred, and return to slow cooker.
  • Cover until heated through.
  • Serve over brown rice with sour cream, guacamole, shredded cheese and cilantro.

Steps:

  • Add half of the sliced peppers and onions to your slow cooker.
  • Layer the chicken and coat all sides with taco seasoning.
  • Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
  • Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
  • Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

¼ teaspoon cayenne pepper

Steps:

  • Open Reynolds® Slow Cooker Liner and place it inside a 5- to 6 1/2-quart slow cooker bowl. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl.
  • Place chicken in Reynolds® Slow Cooker Liner. Place onions and bell peppers on top of chicken.
  • Mix salsa, fajita seasoning mix and cayenne pepper in a medium bowl. Pour over chicken. Place lid on slow cooker.

2 lbs boneless skinless chicken breast
1 medium onion cut into strands
3 orange or red peppers
1 packet of taco seasoning
3/4 cup of water
corn or flour tortillas
sour cream
salsa
diced tomatoes
lettuce

Steps:

  • Place chicken in crock pot
  • Sprinkle taco seasoning on both sides of the chicken, reserving 1/4 of the seasoning.
  • Place onions and peppers on top of the chicken and sprinkle the remaining seasoning on top.
  • Add water.
  • Place lid on the crock pot.
  • Cook on low for 4-6 hours or until the chicken is completely cooked.
  • Take chicken out of the crock pot and shred.
  • Remove the onions and peppers.
  • Return the chicken to the crock pot so that it can absorb the liquid in the pot.
  • Assemble the fajita with the chicken and onions and peppers.
  • Top with favorite toppings (tomatoes, sour cream, etc.)
  • Enjoy!

1 cup salsa
2 cups frozen corn

1 cup shredded cheddar cheese
sour cream

green onions

Steps:
