1 tablespoon canola oil
1 medium onion, chopped
1 garlic clove, minced
3 to 4 tablespoons red curry paste
1/2 teaspoon sugar
1 small eggplant, cut into 1-inch pieces (about 4 cups)
3 cups cubed peeled butternut squash, cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces
1 medium green pepper, cut into 1-inch pieces
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 carton (32 ounces) vegetable broth, divided
1 can (15 ounces) crushed tomatoes
1 can (13.66 ounces) coconut milk
Chopped fresh cilantro
Optional: Lime wedges and hot cooked rice

Steps:

  • In a 6-qt. stockpot, heat oil over medium-high heat; saute onion until lightly browned, 3-4 minutes. Add garlic; cook and stir 1 minute. Stir in curry paste and sugar., Stir in vegetables, garbanzo beans, 3 cups broth, tomatoes and coconut milk; bring to a boil. Reduce heat; simmer, covered, until vegetables are tender, 35-40 minutes., Stir in remaining broth; heat through. Serve with cilantro and, if desired, lime wedges and rice.

2 medium red potatoes, cut into 1/2-inch pieces

1 large sweet potato, peeled and cut into 1/2-inch pieces
1 teaspoon ground cumin
2 carrots, peeled and cut into 1-inch pieces
1/2 teaspoon ground cardamom
3 inches cinnamon sticks

Steps:

  • Heat the oil in a large skillet over medium heat.
  • Add the onion and cook, stirring occasionally for 5 minutes.
  • Add the garlic and ginger and cook for 2 minutes.
  • Add the curry powder, cumin, cardamom and cinnamon stick.
  • Cook stirring constantly for 30 seconds.
  • Add the tomato, coconut milk and salt and stir to combine.
  • Add the redskin and sweet potatoes and the carrots.
  • Cover and bring the mixture to a boil.
  • Reduce the heat to medium low and simmer until the vegetables are tender, about 20 minutes.
  • Remove and discard the cinnamon stick.
  • Serve stew warm.

.75 cup basmati rice
2 tablespoons canola oil
1 4-oz. jar red curry paste
1 pound 1-in. cauliflower florets (about 6 cups)
4 medium carrots, sliced
12 ounces baby yellow potatoes, halved (quartered if large)
2 13.66-oz. cans well-shaken and stirred coconut milk
2 teaspoons lime zest plus ¼ cup fresh juice (from 3 limes)
.25 cup chopped dry-roasted, salted cashews
lime wedges, for serving

Steps:

  • Stir together rice and 1½ cups water in a medium saucepan. Bring to a boil, then reduce heat to medium-low. Cover and simmer until all liquid is absorbed, about 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
  • Meanwhile, heat oil in a large pot over medium. Add red curry paste and cook, stirring constantly, until fragrant, about 30 seconds. Add cauliflower, carrots, and potatoes; stir to coat with curry paste. Add coconut milk, stirring and scraping bottom of pot to release any browned bits. Reduce heat to medium-low; cover and cook until potatoes and carrots are almost tender, 10 to 15 minutes.
  • Remove lid and continue to cook, stirring occasionally, until sauce thickens slightly and vegetables are crisp-tender, about 5 minutes. Stir in lime juice.
  • Serve stew topped with rice, cashews, and lime zest. Serve with lime wedges.

6 tablespoons vegetable oil
2 cups diced onions
1 red pepper, diced
6 tablespoons Jamaican or Madras curry powder
2 tablespoons chopped garlic
2 tablespoons chopped ginger
Kosher salt and freshly ground black pepper
2 cups large diced pumpkin
1 (12.5-ounce) can chickpeas, drained and rinsed
2 chayote, peeled, and roughly chopped
2 cups large dice Yukon gold potatoes
2 cups diced carrots
6 sprigs thyme
1 cup chopped scallions
Vegetable stock, to cover
1 head cauliflower, cut into florets
Cheryl's Hot Sauce, to taste, recipe follows
10 whole Scotch bonnet peppers, rinsed and stems removed
1 to 1 1/2 cups white vinegar
10 whole pimento seeds

Steps:

  • Heat a large braising pot over high heat. Add the oil and the onions, and saute for 2 minutes. Then, add the red peppers and saute 2 minutes more.
  • Then, add curry powder, and saute until fragrant. Add the garlic, ginger, a little salt and pepper to the saute.
  • Add the pumpkins, chickpeas, chayote, potatoes, carrots, thyme, and scallions, and stir the saute for about 6 minutes. Add enough vegetable stock to just cover the vegetables. Bring to a simmer, and then add the cauliflower and cover the pot.
  • Simmer for about 35 minutes. Then add Cheryl's Hot Sauce, salt, and pepper, to taste. Simmer for 5 minutes more.
  • To a blender, add peppers and 1 cup of vinegar and puree. Add remaining vinegar, if needed. Stir in pimento seeds. Store in a bottle or jar in refrigerator.
  • Yield: 2 cups

3 cups water
2 cups jasmine rice, well rinsed
1 tablespoon olive oil
1 red bell pepper, cut into 1/4-inch-thick strips
1 zucchini, halved lengthwise, cut into 1/4-inch-thick half moons
Half an eggplant, cut into 1/2-inch cubes
Half a yellow onion, cut into 1/4-inch-thick strips
Four 14.5-ounce cans crushed tomatoes
1 tablespoon garam masala (see Cook's Note)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons paprika
1 1/2 teaspoons ground turmeric
1 1/2 teaspoons kosher salt
A pinch cayenne pepper, optional (see Cook's Note)
3 cloves garlic, minced
1/2-inch piece fresh ginger, crushed and minced
Two 13.5-ounce cans coconut milk
1/4 cup coconut oil (see Cook's Note)
2 scallions, cut into 1/4-inch-thick slices, for serving
Naan or pita, for serving

Steps:

  • For the rice: Combine the water and rice in a medium saucepan and bring to a boil, adjust to a low simmer, cover and cook until the rice is tender, and all the water has been absorbed, 15 to 20 minutes. Remove from heat and keep covered. (Tip: don't stir the rice while it's cooking.)
  • For the curry: Heat the olive oil in a large skillet over medium heat. Add the pepper, zucchini, eggplant and onion and cook, stirring, until crisp tender, 5 to 7 minutes. Remove from heat and set aside.
  • Combine the tomatoes, garam masala, cumin, paprika, turmeric, salt, cayenne, garlic and ginger in a medium pot, bring to a simmer and cook for 20 minutes. Careful of splashing, pour in coconut milk and add the coconut oil, turn off heat and let cool for about 5 minutes. Puree with hand stick blender (or in batches in a blender) until smooth.
  • Add the cooked vegetables to the curry sauce and simmer for 10 minutes.
  • Toast or grill the naan or pita bread until golden brown, 2 to 3 minutes. Cut into pieces.
  • For serving: Fill bowls with some rice and then top with some curry. Sprinkle with scallion and serve with a piece of naan or pita bread.

1 (12 ounce) package extra-firm tofu, drained
1 tablespoon vegetable oil
2 cups coconut milk
½ cup water, or more as needed
2 tablespoons Thai red curry paste
1 medium onion, finely chopped
2 medium potatoes, peeled and chopped
3 small zucchini, chopped
2 medium red bell peppers, cut into long, thin strips
2 tablespoons chopped fresh basil leaves
2 tablespoons lime juice
3 teaspoons soft brown sugar
1 (8 ounce) can bamboo shoots, drained

Steps:

  • Place tofu onto a plate and place another plate on top. Set a 3- to 5-pound weight on top. Press tofu for 20 to 30 minutes; drain and discard the accumulated liquid. Cut tofu into cubes.
  • Heat oil in a large, nonstick skillet over medium-high heat until hot but not smoking. Add tofu and saute, stirring occasionally, until nicely colored on all sides and moisture has cooked off, 8 to 10 minutes. Remove from the skillet and set aside.
  • Meanwhile, combine coconut milk, 1/2 cup water, and curry paste in a large wok or pan over medium-high heat; bring to a boil, stirring occasionally. Add onion; boil for 3 minutes.
  • Add potatoes, reduce heat to medium, and cook until potatoes are nearly cooked, about 8 minutes. Add zucchini and bell peppers; simmer for 5 minutes. Add 1/2 cup more water if curry is too thick.
  • Cut bamboo shoots in half and discard any tough ends. Add to the curry with the basil. Add brown sugar and lime juice; taste and adjust seasonings. Stir in tofu.

1 cup red lentils, picked over and rinsed
3 medium carrots, quartered lengthwise, then cut crosswise into 1/2-inch pieces
3 cups chopped trimmed spinach leaves (3 ounces)
1 cup frozen peas (not thawed)

Steps:

  • Heat 1/4 cup oil in a 4- to 5-quart heavy pot over moderate heat until hot but not smoking, then cook onion with 1/4 teaspoon salt, stirring occasionally, until golden, 8 to 10 minutes.

200g firm tofu, cubed
4-5 tbsp soy sauce
juice 3 limes
2 red chillies, 1 finely chopped, 1 sliced into rounds
2 tbsp vegetable oil
400ml can reduced-fat coconut milk
1 courgette, chopped into chunks
1 small aubergine, chopped into chunks
½ red pepper, deseeded and chopped into chunks
140g mushrooms, halved
140g sugar snap pea
20g pack basil, leaves picked
1 tsp brown sugar
jasmine rice, to serve
3 red chillies
1 lemongrass, roughly chopped
3 shallots, roughly chopped
½ red pepper, deseeded and roughly chopped
zest 1 lime
stalks from 20g pack coriander
thumb-size piece ginger, grated
2 garlic cloves
1 tsp freshly ground pepper
1 tsp ground coriander

Steps:

  • Whizz the paste ingredients in a food processor. Marinate the tofu in 2 tbsp soy sauce, juice 1 lime and the chopped chilli.
  • Heat half the oil in a large pan. Add 3-4 tbsp paste and fry for 2 mins. Stir in the coconut milk with 100ml water, the courgette, aubergine and pepper and cook for 10 mins until almost tender.
  • Drain the tofu, pat dry, then fry in the remaining oil in a small pan until golden.
  • Add the mushrooms, sugar snaps and most of the basil to the curry, then season with the sugar, remaining lime juice and soy sauce. Cook for 4 mins until the mushrooms are tender, then add the tofu and heat through. Scatter with sliced chilli and basil and serve with jasmine rice.
