CROWD-PLEASER CHERRY SQUARES
This is my favourite bar-type cookie from Company's Coming! After you've tried it, you'll understand why.

Steps:
- FIRST LAYER: Crumble ingredients together well.
- Press into ungreased 9 x 9 inch pan.
- Bake in preheated 350F oven for 15 minutes.
- SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
- If using maraschino cherries, drain well.
- I prefer using candied cherries- at Christmas, I use a mixture of red& green.
- Spread over first layer& return to oven for 25 minutes.
- Let cool completely.
- TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
- This makes a minimum amount of icing to spread over top.

RED CHERRY DREAM SQUARES
I forget where I got this recipe, but my family has enjoyed it for years. It's a fun and different way to prepare a cake mix.

Steps:
- Heat oven to 350 deg.
- Grease 13x9" pan.
- In large bowl, combine cake mix, 1 cup of the rolled oats and 6 T of the margarine; mix until crumbly.
- Reserve 1 cupcrumbs for topping.
- To remaining crumbs, add 1 egg; mix until well blended.
- Press into greased pan.
- Pour cherry pie filling over crust; spread to cover.
- To reserved crumbs in large bowl, add remaining 1/4 cup rolled oats and 2 T margarine, nuts and brown sugar; mix well.
- Sprinkle over cherry filling.
- Bake at 350 deg for 35-40 minutes until golden brown.
- Cool completely.
- If desired, serve with whipped cream.

Steps:
- Cream butter; gradually add sugar, beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Gradually add flour, beating well. Stir in flavorings.
- Pour the batter into a lightly greased 15x10x1-inch jellyroll pan, spreading evenly.
- Lightly cut through batter with a small knife to mark off 24 squares. Spoon about 1 tablespoon pie filling in center of each square.
- Bake at 350~ for 45 minutes or until lightly browned. Batter will puff up around filling while baking.
- Cool cake in pan 10 minutes. Cut into squares, and remove from pan.

STRAWBERRY DREAM SQUARES
This recipe came in a email to me and it sounded so good that I wanted to keep in a safe place for future times. I have not made it yet but sure does sound delicious. NOTE: the preparation time is chilling time as this recipe needs chilled during preparation.

Steps:
- In a bowl mix together the graham cracker crumbs and melted butter.
- Press into the bottom of a 13x9 baking dish. Chill in refrigerator until needed.
- In a mixing bowl, cream together the cream cheese and sugar until well blended.
- Stir in the strawberries.
- Gently stir in 2 cups of Cool Whip and spread over chilled graham cracker crust.
- Beat together 2 packages of vanilla pudding mix with cold milk until thicken (2 to 3 minutes)
- Spread over cream cheese filling and refrigerate 1 hour.
- Top with remaining Cool Whip (1 cup)
- Sprinkle a few graham cracker crumbs over top and chill 3 to 4 hours.
- Keep refrigerated.

Steps:
- BASE: Melt 3/4 cup margarine. Add graham crumbs. Press half the mixture into an 8-inch square baking pan. Bake for10 minutes at 350°F Cool completely.
- FILLING: Combine icing sugar, cocoa, margarine and vanilla. Beat with electric mixer for 3 minutes. Pour over first mixtue.
- MIX: Combine melted margarine, beaten eggs and cocoa. Mix well. Pour over top of filling and put the rest of the crumbs on top.
- Refrigerate for 2 hours and serve.

- BASE- whisk flour and icing sugar in bowl, cut in butter or margarine and press into a greased 9x9 pan.
- Bake base in a 300 degree oven for 10 minutes.
- TOPPING- Beat eggs, blend in sugar and beat together.
- Add the vanilla and the dry ingredients.
- Add the coconut, cherries and the walnuts.
- Spread filling on the prepared base and bake at 325 degrees for 30 minutes or until top nicely golden brown.
- Cool until set before cutting.

I got this recipe from my mother--she used to make it for club meetings and church functions when I was younger. Now my kids like it too! One thing to note--there is no baking soda or baking powder in this recipe--the beaten eggs make it rise.

- Cream butter and sugar; add eggs and beat until fluffy. Add all other ingredients except cherry pie filling and beat well. Spread batter into a 10 X 15 jelly roll pan that has been greased and floured or sprayed with cooking spray. Spread cherry pie filling on top of batter in spoonfuls making 4 rows the length of the pan. Bake in a 350 degree oven for 35-45 minutes. May sprinkle with powdered sugar or drizzle with powdered sugar icing when done baking.

- Drain and chop cherries. Blot, or wrap, chopped cherries in paper towel to soak up excess moisture. Chop pecans and cut up dates. Measure coconut. Set cherries, nuts, dates and coconut aside.
- In bowl of stand mixer fitted with paddle attachment, mix flour and sugar together. With mixer set at medium speed, mix in the butter just until crumbly. A food processor may, alternatively, be used to make the base, pulsing the mixture for just a very few short bursts. Mixture will appear dry using either method.
- In bowl of stand mixer fitted with paddle attachment, beat the eggs lightly at medium-low speed. Increase speed slightly and beat in brown sugar, vanilla, and almond extract. Mix flour and baking powder together in small bowl. Reduce mixer speed to low and add the dry ingredients. Increase speed slightly and beat just until ingredients are combined and mixture is smooth.
- Place butter in bowl of stand mixer fitted with paddle attachment and beat at medium speed until creamy. Blend in the almond and vanilla extracts. Reduce mixer speed to low and gradually add the sifted icing sugar, about one-half cup at a time. Add the water (or milk), a couple of teaspoons at a time as the icing sugar is being blended in. If desired, add a smidgeon of pink food coloring gel to tint the icing soft pink. Increase speed to medium-low to blend ingredients then increase speed to high and beat an additional minute to ensure ingredients are well combined and icing is smooth. Additional milk or water may be required to make icing of desired spreading consistency. If adding additional milk or water, add by ½ teaspoon at a time. Icing should be of spreading consistency but not “soupy”.
