My Crock Pot Spaghetti Sauce image

This is a spaghetti sauce recipe that I've developed over time. You may alter the ground meat as you please; sometimes I use all ground beef when I find a good sale but half beef/half pork is pretty tasty. My crock pot is my best friend at times when I'm having busy days at work but still want a decent meal on the table for my family. I serve spaghetti with crusty bread and a romaine salad. Cook time is the crock pot cooking time. This recipe is for a 4 quart crock pot, halve it if your pot is smaller.

1 lb ground beef
1 lb ground pork
1 medium onion, chopped fine
2 (28 ounce) cans diced tomatoes, with juice
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 bay leaves
5 garlic cloves, pressed
4 teaspoons dried oregano
1 1/2 teaspoons salt
4 teaspoons dried basil
3 tablespoons brown sugar
1 teaspoon dried thyme

Steps:

  • Brown meats and onion in a skillet and drain well.
  • Transfer to your crock pot.
  • Add remaining ingredients and mix well.
  • Cover and cook on low for 8-10 hours.
  • Serve over hot spaghetti noodles.

2 tablespoons olive oil
4 cloves garlic, minced
1 large carrot, finely chopped
1 celery stalk, finely chopped
1 yellow onion, finely chopped
Kosher salt and cracked black pepper
3 tablespoons tomato paste
1/2 teaspoon dried thyme
1/8 teaspoon ground nutmeg
1/2 cup dry red wine
2/3 cup heavy cream
Two 28-ounce cans crushed tomatoes
1 pound ground pork
1 pound ground sirloin
Pasta, for serving

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the garlic, carrots, celery and onions. Sprinkle with salt and pepper and cook about 3 minutes. Add the tomato paste, thyme and nutmeg, and continue cooking until the vegetables have softened and started to brown, about 2 minutes. Deglaze with the wine, pulling up any bits from the bottom of the pan. Season with salt and pepper.
  • Carefully transfer to the slow cooker. Stir in the cream and tomatoes. Mix the pork and sirloin together in a separate bowl, using your hands, until combined. Stir the meat into the slow cooker, spreading out evenly and avoiding any large clumps. Cover and cook on high for 4 to 6 hours or on low 8 to 10 hours. Skim the accumulated grease from the surface before serving. Serve over pasta with crusty bread for soaking up the sauce.

1 ½kg lean minced beef (or use half beef, half pork mince)

1 cup red wine
1 cup sliced green olives

½ teaspoon Hungarian paprika

1 cup finely chopped sweet onion, divided
1 clove garlic, crushed and chopped

1 teaspoon brown sugar

3 (4 ounce) links Italian sausage links, casings removed
2 cloves garlic, crushed and chopped
1 teaspoon ground white pepper

1 cup red wine, or more if needed

Steps:

  • Mix together the crushed tomatoes, tomato sauce, stewed tomatoes, 1 cup of red wine, green olives, 4 teaspoons of sea salt, basil, oregano, paprika, and cayenne pepper in a slow cooker. Set the cooker to Low.
  • While the cooker is warming up, place 3 tablespoons of olive oil in a skillet over medium heat, and cook 3/4 cup of sweet onion until the onion just begins to soften, about 2 minutes; stir in 1 clove of garlic. Cook the mixture for 3 more minutes before mixing in parsley and mushrooms. Reduce heat, and simmer the mixture for about 10 minutes. Stir in the brown sugar, and mix to dissolve.
  • While the parsley and mushrooms are simmering, heat 3 more tablespoons of olive oil in a skillet over medium heat, and stir in the remaining onion and the sausage. Brown the sausage, breaking the meat up into crumbles as it cooks, about 10 minutes; season the mixture with white pepper and cumin. Pour 1 cup of red into the skillet, and scrape the pan with a wooden spoon to dissolve any brown flavor bits into the wine.
