- Brew 2 cups apple spice tea, then let cool. Mix with 2 cups orange juice, 1 cup apple juice and 2 cups ginger ale in a pitcher filled with ice. Add 1 cup rum, if desired. Chill. Divide among 6 glasses and serve with cinnamon sticks.

- Place the hot water in a small stainless steel saucepan and add the sugar, ginger, cloves, cinnamon and nutmeg to the pan. Bring to a boil, place a lid over the saucepan and reduce to a simmer. Continue to simmer until the flavors have married, about 20 minutes. Remove from the heat, strain through a fine-mesh sieve into a non-reactive bowl and allow to cool. Once cool, add the cider, applejack and brandy to the bowl. Stir to mix well and refrigerate for at least 2 hours, and up to 5 days. Serve in a small punch bowl with an ice mold, if desired, and garnish each glass with an apple slice.

- For the Spiced Rum: Remove the cap from the rum bottle and drop the allspice, cloves, star anise, orange zest, vanilla bean and cinnamon stick into the bottle. Reseal and let sit at room temperature for 2 days to up to a week, shaking it once a day.
- Put 2 cups of ice cubes in an 8-inch square cake pan and layer in half of the fruit. Top with another 2 cups of ice and then the remaining fruit (the ice cubes keep the fruit from sinking to the bottom). Fill with water and freeze until solid, about 6 hours.
- When ready to serve, combine the sugar with 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar is completely dissolved, about 2 minutes. Remove from the heat and let cool to room temperature. Stir together the sugar syrup, orange juice, lime juice and bitters in a large punch bowl. Pour the rum into the punch bowl, through a fine mesh sieve, and discard the spices. Let the ice island sit at room temperature for about 10 minutes, unmold and float in the punch.
- Fill a highball glass with ice cubes pour in 1 cup of punch. Top with about 2 ounces of seltzer and the garnish of your choice.
SPICED PERCOLATOR PUNCH
It's now a tradition that I serve this at the Christmas Tea I host each year, as well as any open house. Called by many names--and there are similar recipes on this site--it's different because it doesn't include apple juice or cider.

SPICED WINE FIRE PUNCH RECIPE BY TASTY

- Cut oranges in half and juice.
- Pour red wine in a large pot. Add the orange juice through a sieve to get rid of pulp.
- Add cider, cloves and half the cinnamon sticks and bring to a simmer, but do not boil.
- Cut apple in ⅓ - ½ inch (1 cm) slices, leaving the peel on and the star in the middle intact. Put the center slices with a star aside and add the rest of the ends to the punch.
- To serve, pour punch in a heat resistant glass.
- Take the center slices with the inner star shape and clean the holes of the seeds and tough lining, making sure to keep the star shape intact.
- Carefully place the apple slice on the punch, so it floats on top.
- Pour a little bit of the rum in a glass, heat-safe dish. Have another glass nearby to hold the spoon you will use to move the sugar to the apple.
- Soak sugar cube in rum and place it over the star in the glass.
- Carefully, with a lighter, set sugar cube on fire until you see the sugar bubbling and a blue flame.
- If necessary, carefully add small amounts of rum on the sugar cube with a spoon to keep it burning until the sugar is melted.
- Stir with a cinnamon stick and enjoy immediately while it is still hot. If not sweet enough, repeat sugar cube flaming step or add more sugar to the hot drink.

HOLIDAY SPICED FRUIT PUNCH
This started with a little of this and a little of that and alot of tasting! After several punch efforts this is the final recipe. Hope you enjoy it! I make a frozen ring of the punch mixture without the rum, but add chucks of pineapple and red cherries so the ring looks lovely floating in the punch bowl. Prep time doesn't include chill time.

THE OXFORD BISHOP: 19TH CENTURY SPICED MULLED PORT WINE
A lovely Traditional old English recipe by Eliza Acton, a 19th Century Victorian cookery writer of great repute. This unique beverage is also mentioned in "The Christmas Carol" by Charles Dickens, although in the book it was called Smoking Bishop!! This is a fruity & spiced warm mulled Port Wine drink which brings a glow to your face & warmth to your aching joints, believe me! Just the festive beverage to have after returning from Christmas Midnight Mass or whilst listening to Carols from King's College on Christmas Eve. Also wonderful as a welcome drink for a party or special event. It is easily topped up if extra guests arrive, and I have used wine in the past when the port was finished!

- Pre-heat oven to 200C/400F/gas mark 6.
- Cut the orange in half and stud the 2 halves with the cloves.
- Place the two halves on a lined baking tray cut-side up, and bake for 15 - 20 minutes.
- Take out of the oven & set to one side.
- Meanwhile pour the water into a large pan and add the sugar, cinnamon, mace, allspice & ginger.
- Place over a high heat and stirring all the time, bring to the boil and let it boil until it has reduced by about half.
- Take off the heat & set to one side.
- When you are ready to serve the Oxford Bishop, empty the bottle of port into the pan with the spiced sugar water and add the two halves of baked oranges.
- Add the orange juice and gently heat up and simmer - be careful NOT to boil it!
- Serve from a warmed Punch Bowl with the orange halves floating in it - this should serve about 6 people.

SPICED FIGS IN PORT
Steps:
- Rinse figs, cover with water and simmer 20 minutes. Drain, reserving the liquid. Return one cup of the cooking liquid to the pan, along with the remaining ingredients and simmer briefly, just until the sugar dissolves.
- Return figs to the pan and simmer 10 minutes longer. Cover and allow to stand overnight in syrups.
- Transfer to clean jars or containers and refrigerate or reheat to boiling, transfer to clean, hot, 16-ounce canning jars, process 15 minutes in a boiling water bath and seal with new lids according to manufacturer's directions.
