3 celery ribs
1 medium onion
2 green peppers
2 tablespoons minced garlic
1/4 cup bacon fat (butter or oil will work too)
2 teaspoons Cajun seasoning (Like Tony's)
1 lb. ground beef
4 cans kidney beans
1 (14 oz.) package beef sausage
2 cup broth (beef or chicken)
8 cups hot cooked rice

Steps:

  • In a heavy bottomed 4 quart pot, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in bacon fat until soft.
  • Add the ground beef and cook until browned all the way through.
  • Pour in the broth and beans. Add cajun seasoning. Bring to a boil, and reduce to a simmer.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Serve beans over hot rice.

1 cup diced onion
1/2 cup diced green bell pepper
1/2 cup diced celery
2 medium tomatoes, diced (about 2 cups), divided
1 can (15 to 16 ounces) unsalted red or kidney beans, drained and rinsed
1 cup uncooked instant rice
1 tablespoon Cajun seasoning
1 cup reduced-sodium beef broth

Steps:

  • Prepare Cajun-Style Beef Sausage. Heat large nonstick pan over medium heat until hot. Add sausage mixture, onion, bell pepper and celery; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally.
  • Stir in 1-1/2 cups tomatoes, beans, rice, Cajun seasoning and broth. Cover and cook 5 to 6 minutes until rice is tender. Uncover and cook another 1 to 3 minutes or until desired consistency is reached. Top with remaining 1/2 cup tomatoes. Season with salt and pepper, as desired.

1 pound dry kidney beans
¼ cup olive oil
1 large onion, chopped
1 green bell pepper, chopped
2 tablespoons minced garlic
2 stalks celery, chopped
6 cups water
2 bay leaves
½ teaspoon cayenne pepper
1 teaspoon dried thyme
¼ teaspoon dried sage
1 tablespoon dried parsley
1 teaspoon Cajun seasoning
1 pound andouille sausage, sliced
4 cups water
2 cups long grain white rice

Steps:

  • Rinse beans, and then soak in a large pot of water overnight.
  • In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
  • Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
  • Stir sausage into beans, and continue to simmer for 30 minutes.
  • Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

½ pound dried kidney beans, rinsed
½ pound dried pinto beans, rinsed
4 cups water
4 cups vegetable broth
2 cloves garlic, minced
2 bay leaves
1 (14.5 ounce) can diced tomatoes, with liquid
1 (4 ounce) jar chopped pimento peppers, drained
1 (4 ounce) can diced green chiles
1 large green bell pepper, chopped
1 large sweet red pepper, chopped

¼ cup snipped fresh parsley
1 tablespoon vinegar
1 teaspoon paprika
1 teaspoon salt

Steps:

  • Place beans into a large pot with water. Bring to a boil; reduce heat and let simmer for 2 minutes. Remove from heat. Cover and let stand for 1 hour.
  • Drain and rinse the beans. Return to the pot with broth, garlic, and bay leaves; bring to a boil. Reduce heat, cover, and let simmer for 1 hour and 15 minutes.
  • Stir in diced tomatoes, pimentos, green chiles, bell pepper, sweet red pepper, onion, celery, parsley, vinegar, paprika, salt, red pepper flakes, cumin, and hot sauce. Cajun seasoning 2 tsp
Ground beef 1 lb
Kidney beans 4 cans

Chicken broth 2 cups
Cooked rice 8 cups

Steps:

  • In a heavy bottomed 4-quart pot over medium heat, heat bacon fat, butter or oil and add 1 chopped, medium onion, 2 chopped green bell peppers, 2 tablespoons of minced garlic, and 3 chopped celery ribs, cook until soft.
  • Add 1 lb of ground beef and continue cooking until browned.
  • Add 4 cans of kidney beans, 2 cups of broth and 2 teaspoons of Cajun seasoning. Bring everything to a boil and then reduce heat to simmer.
  • Cut 1 package of beef sausages into bits and add to the pot. Simmer for about 30 minutes.
  • Serve red beans and ground beef over hot rice! Enjoy!

1 lb dried kidney beans
2 quarts water
1 lb turkey sausage
1 large onion, chopped
4 stalks celery, chopped
2 teaspoons fresh garlic, minced
2 teaspoons salt
Tabasco sauce, to taste
brown rice or white rice, cooked

Steps:

  • Soak the kidney beans overnight in the water, or you can use the quick soak method. Bring them to a boil and then let them sit, covered, on the back of the stove for an hour or two.
  • After you have done the initial bean preparations let them boil for about an hour or until they are getting tender. While they cook, you can prepare the vegetables and the meat. The onion, celery and garlic will need chopping.
  • Fry the turkey sausage in a large skillet. Crumble it up with a fork as it cooks. Set the sausage aside until the beans have cooked at least an hour.
  • After the beans have softened up and are getting close to tender, it is time to add the rest of the ingredients. If your sausage is spicy, you may not want to add the Tabasco, so taste it before adding any. If your sausage is not spicy, then a small shot of Tabasco will marry nicely with the rest of the dish. Simmer the beans, sausage and vegetables for about half an hour longer, or until the beans are all the way tender. If you put the brown rice on to cook right before adding the vegetables and sausage to the beans, they should get done at about the same time.
  • Serve this by putting some rice into a cereal bowl. Then, ladle a goodly amount of the bean mixture on top of the rice.

1 (16 ounce) can red kidney beans (including liquid)
4 tablespoons butter
1/4 red onion, finely chopped
1/4 teaspoon garlic salt
1 tablespoon liquid smoke
1 teaspoon salt
3 teaspoons fresh ground black pepper
1/4 teaspoon red pepper flakes
1 teaspoon paprika
0.5 (16 ounce) can red kidney beans (including liquid)
2 cups cooked brown rice (quick cooking version is fine)

Steps:

  • (RECIPEZAAR DOESN'T RECOGNISE LIGHT RED BEANS!).
  • Cook the brown rice. Add the 1/2 can of light red beans (including liquid) to the cooked rice and set to one side.
  • Melt the butter and add all the remaining ingredients (excluding the rice with 1/2 can of beans).
  • Simmer the bean mixture for 45 minutes.
  • Stir every 10 mins or so and mash the light red beans with the back of a wooden spoon (you don't have to mash them all, just be sure to give those beans a good mashing!).
  • After 45 mins remove from the heat and add the cooled cooked rice and the additional 1/2 can of beans mixture.
  • Stir it all together until the rice is warmed through again and serve.
  • Reheats really well if you would like to make this ahead of time.
  • Serves 2 as a main course or 4 as a side.

I used fresh garden banana peppers b/c bell peppers were not fully grown yet, but if you have bell peppers I would use them instead. I had to change this recipe. I originally had it with regular rice and it wouldn't cook up fast enough so I changed it to instant. Hope this helps.

1 lb brown rice (instant)
1 tablespoon extra light olive oil
1 medium onion, chopped
1/2 bell peppers or 2 fresh garden banana peppers, chopped
2 garlic cloves, chopped
1/2 lb lean ground beef
1/2 cup carrot
14 1/2 ounces diced tomatoes
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon dried basil
16 ounces chicken broth (optional)

Steps:

  • In skillet saute onion, carrot, and bell or banana pepper in oil. Add beef, garlic, cumin, and cayenne pepper.
  • Cook till beef is done. Drain.
  • In lg soup pot add beans, beef mixture, basil, tomatoes, and rice with 6 cups of water.( Or broth plus 6 cups water.).
  • Cook 1 hour. Stirring often. Keep eye on it and cook until beans and rice are tender and water is cooked down. Add more water if necessary. May take up to 2 hours.
  • Enjoy!
