MAMA MABEL'S SWEET POTATO PIE
Steps:
- Preheat oven to 350 degrees F. After your potatoes are done cooking and you've mashed them (make sure you mash them well or your pie will be stringy), add your butter mixing it until it melts.
- Next take all your spices and mix them together in the smaller bowl. Add your vanilla to your spices and then add it to the potatoes. Beat your eggs well and mix them into your sweet potato mixture. Slowly begin to add your evaporated milk to the mixture. Be careful how much you add you don't want it to get to juicy. If you feel like you need to add more go ahead.
- Pour mixture into your pie shell and put pies into preheated oven. Let bake 35 minutes.

Steps:
- Preheat the oven to 400 degrees F. Scrub the potatoes, place them on a baking sheet and bake until the thickest part is easily pierced with a knife, about 1 hour 15 minutes. Remove the pan from the oven and allow the potatoes to cool completely. Break them up by hand into rough 1- or 2-inch pieces. (This step can be done a day in advance; refrigerate the potatoes until needed.)
- In a small bowl, whisk to combine the mustard and vinegar. While whisking, add the olive oil in a steady stream to form an emulsion.
- In a deep-fryer or pot over medium-high heat, heat about 4 inches of peanut oil or lard to 360 degrees F. Fry the potatoes in batches until golden brown and crisp, using a slotted spoon or frying spider to turn them often, about 4 minutes. When the potatoes are done, use a slotted spoon to transfer them to a paper towel-lined plate.
- In a large bowl, combine the potatoes, scallions and enough vinaigrette to lightly coat (about 2 tablespoons) and toss to combine. Pour onto a platter, sprinkle with flaky salt and serve.

Steps:
- Now when you buy your sweet potatoes, do not get them too big. They will not boil quite right. Get some medium sized ones.Boil potatoes in a big pot. While they're boiling, get your oven started. Set it to about 350 degrees. Also get mixing bowl ready when it comes time to put your spices together. When potatoes are finished, run under cold water for a spell so you can peel them without getting burnt. But do not let them get cold, because you want potatoes to be warm sufficient to heat butter. Put potatoes in bowl and mash up real good. Put butter in potatoes and fold in till it melts. Take sugar and spice ingredients and blend them together in a small bowl. Last, add in vanilla in with the spices, then add in it all to the potatoes. Beat large eggs real well. Put large eggs in with all the rest of the stuff. Finally, take evaporated lowfat milk and start adding it a little at a time to potato mix. Keep an eye on it because you do not want it to get too juicy. If you feel you need to add in a bit more, go ahead. But be careful, you do not want it too juicy. Pour pie mix into the shells and set pie in oven. Bake about 35 min or possibly so.

Steps:
- Puree all ingredients in a blender.
- I have to do this in 2 batches to fit all the ingredients.
- Pour each batch into a large container with a pouring spout (I use a plastic juice pitcher).
- Pour filling into a uncooked pie crust.(This recipe will make 2 deep dish pies).
- Bake in a 350 degree oven that has been preheated for approximately 1 hour.
- I cover the edges of the crust with foil to prevent over browning. I remove it after 30 minutes and rotate the pies so they cook evenly.
- Allow to cool completely before slicing. Enjoy!

FRIED POTATOES WITH SPICY AIOLI

Steps:
- For the potatoes: To a small saucepan, add the potatoes and cool water to cover. Salt the water generously and bring to a boil over high heat. Reduce the heat to medium-high, and simmer until the potatoes are just tender when pierced with a fork, 10 to15 minutes. Remove from the water and let cool. While the potatoes are cooling, make the spicy aioli.
- For the spicy aioli: In a large bowl, combine the mayonnaise, Sriracha, paprika, garlic lime zest and juice and a pinch salt. Stir to combine and set aside.
- To finish the potatoes: Heat a large cast-iron skillet with your favorite fat until it reaches 350 degrees F. The fat should come 1 to 2 inches up the side of the pan.
- With the heel of your hand, smash the potatoes so they are relatively flat but still holding together. Add the potatoes to the fat and cook until golden brown, about 3 minutes. Remove from the fat with a slotted spoon and place in the bowl with the aioli. Add a spoonful of the hot fat, stir to coat and transfer to a serving platter. Garnish with the scallions and serve immediately. I guarantee you will never look at a French fry the same way again.
MAPLE -BAKED SWEET POTATOES
Two of my favorite flavors, Sweet Potatoes and Maple. The cooking time for the sweet potatoes is shortened by parboiling them and it also helps to keep them moist. Recipe is courtesy of Jacques Pepin

- Arrange potato slices in a large casserole. Season with salt and pepper and then dot with butter pieces. Drizzle potatoes with maple syrup, sprinkle with water and bake for 25 minutes or until tender and lightly browned. If necessary, you can broil the casserole for a minute or two before serving.
