1 tablespoon vegetable oil
1 medium onion, chopped
2 ribs celery, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1/2 pound smoked sausage, cut into 1/4-inch slices
1 tablespoon Neelys Dry Rub
1 teaspoon dried thyme
Salt and freshly ground black pepper
2 (12-ounce) cans red beans, drained and rinsed
3 cups chicken stock
2 bay leaves
4 cups chicken stock
2 cups long-grain rice
1 tablespoon vegetable oil
Pinch salt

Steps:

  • In a large skillet heat the vegetable oil over medium-high heat. Saute the onion, celery, green bell pepper, and garlic until tender. Add the smoked sausage, Neelys Dry Rub, thyme, salt and pepper. Saute for about 5 minutes then add the red beans, chicken stock and bay leaves. Let simmer uncovered on low for 1 1/2 hours. Stirring occasionally and adding water, if necessary.
  • While the beans are cooking add all the ingredients for the rice to a small saucepan over medium heat. Cover and let cook for 15 minutes. Once the rice is cooked, let stand for 5 minutes. Serve with the red beans.

1 (14 ounce) can dark red kidney beans
1 (14 ounce) can light kidney beans
2 cups chicken broth (seasoned is best)
1 cup water
1/2 cup chopped red bell pepper
1/2 cup chopped onion
1/2 cup celery
2 tablespoons cayenne seasoning
2 teaspoons louisiana hot sauce, to taste
1 cup white rice (instant or not) or 1 cup brown rice (instant or not)

Steps:

  • Cut sausage into 1/2 inch pieces.
  • Lightly brown.
  • Add vegetables.
  • Simmer 5-7 minutes.
  • Add remaining ingredients and bring to a boil.
  • Reduce to simmer, cover with a tight fitting lid, and cook until rice is done.
  • **NOTE** The cayenne seasoning mentioned is NOT straight cayenne pepper. Try one of the seasonings such as Tony Cachere's or Emeril's cajun seasoning. Sorry for any miscommunication.

1 lb spicy smoked sausage
1 large onion, diced
2 celery ribs, diced
3 garlic cloves, minced
2 teaspoons cajun seasoning, divided
2 cups uncooked long grain rice
2 (14 ounce) cans chicken broth
2 (15 ounce) cans kidney beans, rinsed and drained
1 (15 ounce) can diced tomatoes
2 bay leaves
1/2 cup chopped fresh parsley

Steps:

  • Cut smoked sausage into 1/4 inch thick slices. Cook in a large Dutch oven over medium-high heat 8 to 10 minutes or until browned.
  • Remove sausage and drain on paper towels. Reserve 1 teaspoon drippings in pan.
  • Saute onion and celery in hot drippings over medium-high heat 4 to 5 minutes.
  • Stir in garlic, 1/2 teaspoon Cajun seasoning, and rice. Saute 3 minutes.
  • Stir in broth, next 3 ingredients and remaining 1 1/2 teaspoons Cajun seasoning. Bring to boil; cover, reduce heat and simmer 15 to 20 minutes.
  • Remove from heat; stir in sausage and parsley; let stand, covered for 10 minutes or until rice is tender.
  • Serve with hot sauce if desired.

This recipe was given to me by my sister. It's a hearty dish, and wonderful for the cold winter months. To make a little meatier, I cut up a small ham steak in cubes and add the cubed ham the last 20 minutes. Serve over cooked rice.

2 cups dried red beans
½ teaspoon dried minced garlic
1 tablespoon dried minced onion
2 teaspoons salt
1 bay leaf
1 teaspoon white sugar
¼ teaspoon ground cayenne pepper
1 teaspoon celery seed
1 teaspoon ground cumin
¼ teaspoon crushed red pepper flakes
1 ham hock
1 pound smoked sausage, sliced

Steps:

  • Pick over the dried beans, and soak them in water overnight.
  • The next day, drain off the soaking water, and place the beans in a large pot or slow cooker. Cover with water, and stir in the dried garlic and onion, salt, bay leaf, sugar, cayenne pepper, celery seed, cumin, and crushed red pepper flakes. Push the ham hock down into the beans. Bring to a boil, reduce the heat, and simmer over low heat for 3 to 4 hours.
  • Stir in the smoked sausage, simmer for 20 more minutes, and serve.

1 lb dried red beans
4 c water
3 c chicken broth
3 Tbsp cajun seasoning
1 pepper,chopped ~ red or green
1 large onion, chopped
3 stalk(s) celery, chopped
1 1/2 tsp garlic powder
2 clove minced, garlic
1 lb smoked sausage, sliced
salt & pepper ~ optional, the cajun seasoning is pretty salty
Hot cooked rice

Steps:

  • 1. Place everything in crock pot and cook on high for 7 - 7 1/2 hours, or until beans are tender. The last 30 minutes, I added 1/2 cup Basmati rice. Just to thicken some. You can either add the rice like I did, or serve over hot cooked rice.

This is but one of hundreds of ways to make Southern Red Beans & Rice. My recipe is very basic. Easy for the beginning cook. From start to finish means an investment in time of two days. So plan ahead. Try it, your taste buds will shout "thank you" !

1 lb dried red beans
1-1/2 lb smoked sausage cut into chunks or slices (your favorite kind)
1 large ham hock or ham bone
1 large chopped onion
2 clove garlic, minced
1 tsp dried thyme
1 tsp freshly ground black pepper
1/2 tsp ground sage
1/4 tsp cayenne pepper, flakes or powder (more or less to taste)
salt to taste
freshly cooked white rice

Steps:

  • 1. Soak beans overnight in cold water. Drain and put the beans in a large pot or Dutch oven. Add fresh water to cover, along with the sausage and ham, onion, garlic, thyme, pepper, sage and cayenne. Bring to boil over medium high heat.
  • 2. Reduce heat to medium low, cover and simmer until beans are tender, adding more water if necessary to keep them from drying out. This will take 2 to 3 hours. Add salt to taste. Discard ham bones.
  • 3. Remove about 1/4 cup of beans from mixture and mash; return to Dutch oven and stir. Simmer 15 more minutes. Serve over hot rice.

I went to a great restaurant in Savannah one summer and had red beans and rice. When I came home, I tried to figure out just how they made it. I haven't figured it out exactly, but this recipe is a pretty good imitation. Serve with hot white rice, fried potatoes, and cornbread if desired.

1 pound smoked sausage of your choice, sliced
1 onion, chopped
1 green bell pepper, chopped
½ teaspoon minced garlic
2 tablespoons dried parsley
1 teaspoon paprika

1 tablespoon ground black pepper
2 (15 ounce) cans dark red kidney beans
1 (15 ounce) can light red kidney beans

5 green chile peppers, chopped
1 teaspoon salt

Steps:

  • Heat oil in a large skillet over medium high heat. Add sausage and onion and saute until onions are translucent. Add bell pepper, garlic, parsley, paprika, cayenne pepper and ground black pepper. Saute all together, stirring occasionally, until bell pepper is a little tender (about 10 minutes).
  • Drain and rinse kidney beans. Add all kidney beans, tomatoes and chile peppers. Stir to mix together, reduce heat to medium and let simmer for 25 to 30 minutes. Add salt to taste while simmering. Serve hot.

1 1/2 lbs good-quality smoked sausage, cut into chunks
1/2 lb smoked ham hocks or 1/2 lb ham shanks
1 large onion, diced

1 stalk celery, diced
1 garlic clove, finely chopped
1 teaspoon dried thyme, crumbled
1 teaspoon fresh ground pepper
1/2 teaspoon sage

hot sauce

Steps:

  • Place beans in Dutch oven and cover generously with water; let soak 30 minutes.
  • Add all remaining ingredients to beans except salt, rice, and hot sauce.
  • Bring to a boil over medium-high heat.
  • Reduce heat to medium-low, cover and simmer until beans are tender, adding more water if necessary, about 2 1/2 hours.
  • Add salt to taste.
  • Discard ham bones after cutting any meat from them into bite-sized pieces; return meat to pot.
  • Remove about 1/2 cup of beans from mixture and mash to a paste.
  • Return mashed beans to pot and stir through.
  • Simmer 15 more minutes.
  • Serve hot over rice: pass hot sauce, if desired.

2 lbs smoked sausage, (sliced 1/4" thick)
2 cups diced onions
1 cup green pepper, (diced small)
3 stalks celery, (diced)
3 cloves garlic, (minced)
2 15.5 oz cans kidney beans, (one drained, use juice from other can)
10.5 oz can Rotel®
2 tsp Slap ya mama® seasoning
1 tsp pepper
1/4 tsp cayenne pepper
1/4 tsp red pepper flakes
1 1/2 cup white rice
2 cups beef broth
1 1/2 cup water, (divided)
2 Tbsp butter

Steps:

  • In a large stock pot or Dutch oven, add sliced sausage and 1/2 cup water.
  • Cook over medium high heat stirring often until sausage has browned and water has evaporated (might need to add additional water to sausage during browning. Add 1/8 cup at a time if needed).
  • Once sausage has browned, remove sausage from pot and place on a plate.
  • Add butter to pan, melt and then add diced onions, celery and bell pepper.
  • Sauté until onions are translucent and vegetables are tender add garlic and cook for an additional minute, then add sausage back to pot.
  • Pour beef broth, 1 cup water, beans, Rotel, rice into pot, stir then add seasoning, pepper, cayenne pepper and red pepper flakes. Stir.
  • Bring to a simmer, cover and cook on low/medium heat for 25 minutes stirring occasionally.
  • Remove from heat and leave covered. Let sit covered for 10 minutes then enjoy!

1 tablespoon canola oil

Steps:

  • In large stew pot, soften onions in oil for 1 minute.

1 lb Red beans
2 tbsp olive oil (or vegetable oil)
1 lb andouille sausage (sliced)
1 cup onion (finely diced )
¾ cup celery (chopped )
1 green bell pepper (diced)
4 cloves garlic (minced)
7 to 8 cups chicken stock (or more as needed)
1/2 lb Smoked turkey leg (necks, ham bone, or ham hock)
2 bay leaves
Salt and black pepper to taste
1 tsp dried thyme
½ to 1 tsp cayenne pepper (or to taste)
2 tsp cajun seasoning
2 tbsp chopped green onion or parsley for garnish
Hot sauce
Apple cider vinegar

Steps:

  • Sort the beans by removing any dirt and bad beans
  • Pour the beans in a large bowl, add enough cool water to submerge the beans completely, and leave to soak for at least 4 hours. I prefer to leave it overnight.
  • For a quick soak, pour the beans in a stockpot, add enough water to submerge the beans about 4 inches, then bring the beans to a boil and let it sit for one hour. Drain and rinse under cold water. Pour the beans back into the stockpot.
  • Heat the oil in the skillet over medium heat and brown the sausage on both sides.
  • Stir in the onion, bell pepper, and celery Cook until tender. About 5 to 8 minutes. Stir in the garlic and cook until fragrant-about a minute.
  • Add the red beans, smoked Turkey, bay leaves, thyme, black pepper, cayenne pepper, cajun seasoning, and chicken broth. Bring to a boil, then turn the heat to medium-low and leave to simmer for 1 1/2 hours; Season with salt and adjust the seasoning if necessary.
  • Cook for another 30 mins or until thick and creamy.
  • Cook the rice: Bring the rice and water to boil in a pot. Cover, reduce heat to low and simmer for 20 minutes.
  • Serve over rice. Enjoy!

1/4 cup chopped tasso, or chopped ham
1 1/2 cups chopped yellow onions
3/4 cup chopped celery
3/4 cup chopped green bell peppers
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Pinch cayenne
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons fresh thyme
1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
1 pound smoked ham hocks
3 tablespoons chopped garlic
10 cups chicken stock, or water
4 cups cooked white rice
1/4 cup chopped green onions, garnish

Steps:

  • Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.
  • In a large pot, heat the bacon grease over medium-high heat. Add the tasso and cook, stirring, for 1 minute. Add the onions, celery and bell peppers to the grease in the pot. Season with the salt, pepper, and cayenne, and cook, stirring, until the vegetables are soft, about 4 minutes. Add the bay leaves, parsley, thyme, sausage, and ham hocks, and cook, stirring, to brown the sausage and ham hocks, about 4 minutes. Add the garlic and cook for 1 minute. Add the beans and stock or water, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender and starting to thicken, about 2 hours. (Should the beans become too thick and dry, add more water, about 1/4 cup at a time.)
  • Remove from the heat and with the back of a heavy spoon, mash about 1/4 of the beans against the side of the pot. Continue to cook until the beans are tender and creamy, 15 to 20 minutes. Remove from the heat and remove the bay leaves.
  • Serve over rice and garnish with green onions.

  • Rinse beans then soak in a large bowl with water overnight. When ready to cook, drain the soaked beans, give them a rinse and set aside.
  • Heat oil in a large heavy based pot over medium-high heat. Fry sausage until slightly browned while stirring occasionally, about 5 minutes. Add onion, bell pepper, celery and garlic, sauté for 3 to 4 minutes until soft and fragrant.
  • Season with tomato paste, Italian herbs, paprika, cajun seasoning, cumin, paprika, cayenne and thyme sprigs. Sauté, stirring occasionally, for a further minute.
  • Add the ham hock, water and pre-soaked beans. Season with a pinch of salt to taste (only add about 1/8 teaspoon to start with) and black pepper. Bring to a boil, then reduce heat to low and cover pot. Let simmer while stirring occasionally so that the beans don't stick to the bottom of the pot, for about 1 1/2 - 2 hours or until beans are tender
