CHOW MEIN RAMEN NOODLES
Recipe video above. The fastest, easiest Chow Mein recipe ever! Made using a couple of cheeky shortcuts - ramen noodles, a Coleslaw mix, with the noodles cooked in the same skillet. It's a quicker version of real Chow Mein - 99% of the flavour, but FASTER!

Steps:
- Mix Sauce in a bowl.
- Heat oil in a large skillet over high heat. Add garlic, cook 10 seconds.
- Add chicken and cook until mostly changes from pink to white, then add Sauce.
- Cook for 1 minute, then add Coleslaw mix and white part of green onions.
- Cook for 1 1/2 minutes until cabbage wilts, then push everything to the side to make room for the ramen (see video & photos in post).
- Add water then squidge the ramen cakes in side by side.
- When water simmers, leave for 45 seconds. Flip, then leave for 30 seconds.
- Loosen noodles, add bean sprouts and green onion, then toss energetically for 1 1/2 - 2 minutes until sauce reduces and coats noodles. (Note 7)
- Serve immediately!

NO-BAKE CHOW MEIN NOODLE COOKIES
Our No-Bake Chow Mein Cookies recipe has been a family favorite for years! It's a simple refrigerator drop cookie that only needs 4 ingredients: crunchy chow mein noodles, butterscotch chips, chocolate chips, and peanuts.

- Line a baking sheet with wax paper or parchment paper.
- Place both the butterscotch chips and the chocolate chips in a large microwave-safe bowl. Melt the chips together in the microwave, stirring chips every 30-45 seconds, until smooth.
- Remove from microwave and begin folding in the chow mein noodles a little at a time until they are completely coated with the melted chip mixture. Fold in peanuts until they are completely coated.
- Drop chow mein mixture by the spoonful onto prepared baking sheet. Place baking sheet in the refrigerator until Chow Mein Cookies have completely set.
- Once Chow Mein Cookies have set, store covered at room temperature.

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, cream together the margarine and 1/2 cup brown sugar. Stir in the flour; the mixture should be crumbly. Sprinkle over the bottom of the prepared pan and pack down to cover.
- Bake for 15 to 20 minutes in the preheated oven, until lightly toasted. Remove from the oven and immediately sprinkle with chocolate chips. When the chips have softened enough, spread them over the crust.
- In a heat-proof bowl over simmering water, or in the microwave, combine the marshmallows, peanut butter, brown sugar and light cream. Cook, stirring occasionally until melted and smooth. Remove from heat and stir in the chow mein noodles. Spread on top of the chocolate layer of the crust. Let cool before cutting into squares.

- 1. If garnishing with vermicelli noodles, heat the oil in a deep-sided frying pan to 180C (when a cube of bread dropped in the oil turns golden brown in 15 seconds), carefully add the noodles and fry for 20 seconds. Remove and drain on paper towel. 2. Heat two tablespoons of oil in a wok or large saucepan over very high heat, add the beef and fry, stirring constantly for three to five minutes until browned. Mix in the five-spice and chilli powder and tip out into a bowl. 3. Pour a splash more oil into the same pan and add the onion, garlic, ginger and chilli, and stir-fry over high heat for a minute until fragrant. 4. Stir in the cabbage and half the hot water, then add the oyster sauce, tamari sauce and sesame oil and cook for eight minutes until the cabbage is just softened. Add the peas, beans and spring onion and stir in the drained vermicelli, bean sprouts and the cooked beef. Add a splash more water and soy sauce if necessary. 5. - Cook 225g egg noodles in a large pan of boiling water for 3-5 mins, then drain and put them in cold water. Drain thoroughly, toss them with 1 tbsp sesame oil and set aside.
- Combine 100g chicken breasts, cut into fine shreds, with 2 tsp light soy sauce, 2 tsp Shaohsing rice wine or dry sherry, 1 tsp sesame oil, ½ tsp white pepper and ½ tsp salt for the marinade, mix well and then leave to marinate for about 10 mins.
- Heat a wok over a high heat. Add 1 tbsp groundnut oil and, when it is very hot and slightly smoking, add the chicken shreds.
- Stir-fry for about 2 mins and then transfer to a plate.
- Wipe the wok clean, reheat until it is very hot then add 1½ tbsp groundnut oil.
- When the oil is slightly smoking, add the 2 finely chopped garlic cloves and stir-fry for 10 seconds.
- Add 50g finely shredded mangetout and 50g finely shredded prosciutto, and stir-fry for about 1 min.
- Add the noodles, 2 tsp light soy sauce, 2 tsp dark soy sauce,1 tbsp Shaohsing rice wine or dry sherry, ½ tsp white pepper, ½ tsp golden caster sugar, 2 finely chopped spring onions and 1 tsp salt.
- Stir-fry for 2 mins. Return the chicken and any juices to the noodle mixture. Stir-fry for about 3-4 mins or until the chicken is cooked.
- Add 1 tsp sesame oil and give the mixture a few final stirs. Put on a warm platter and serve immediately.

- Mix together cornflour and soy sauce, then mix in remaining ingredients.
- Alternative: Use 1/3 cup Chinese All Purpose Stir Fry Sauce, if you have some in stock.
- Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
- Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 minute), then drain.
- Heat oil in wok or large fry pan over high heat.
- Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
- Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
- Add the cabbage, carrot, and the white pieces of shallots (i.e. from the base of the stalk). Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
- Add the noodles, Sauce and water*. Stir fry for 1 minute, tossing constantly.
- Add bean sprouts and remaining shallots/scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.
- Remove from heat and serve immediately.

- Soak the chow mein noodles in cold water for about 5 minutes. Rinse a few times until the water turns clear and the noodles have become soft. Drain the excess water and set aside.
