Chow Mein Ramen Noodles image

Recipe video above. The fastest, easiest Chow Mein recipe ever! Made using a couple of cheeky shortcuts - ramen noodles, a Coleslaw mix, with the noodles cooked in the same skillet. It's a quicker version of real Chow Mein - 99% of the flavour, but FASTER!

Provided by Nagi

Categories     Mains

Time 15m

Number Of Ingredients 13

1 tbsp oil
200g/7oz chicken (, sliced (thigh, breast))
2 garlic cloves (, minced)
2 ramen or instant noodle cakes (, discard seasoning (Note 1))
200g/7oz pre shedded Coleslaw mix (, cabbage and carrot (Note 2))
3 green onion stems (, cut into 5cm/2" lengths)
1 heaped cup beansprouts
1 cup (250 ml) water
1.5 tbsp light soy sauce ((Note 3))
1.5 tbsp Oyster Sauce ((Note 4))
1 tbsp Chinese Cooking Wine or Mirin ((Note 5))
2 tsp sesame oil (, toasted (Note 6))
1 tsp white sugar (SKIP if using Mirin)

Steps:

  • Mix Sauce in a bowl.
  • Heat oil in a large skillet over high heat. Add garlic, cook 10 seconds.
  • Add chicken and cook until mostly changes from pink to white, then add Sauce.
  • Cook for 1 minute, then add Coleslaw mix and white part of green onions.
  • Cook for 1 1/2 minutes until cabbage wilts, then push everything to the side to make room for the ramen (see video & photos in post).
  • Add water then squidge the ramen cakes in side by side.
  • When water simmers, leave for 45 seconds. Flip, then leave for 30 seconds.
  • Loosen noodles, add bean sprouts and green onion, then toss energetically for 1 1/2 - 2 minutes until sauce reduces and coats noodles. (Note 7)
  • Serve immediately!

CHOW MEIN

Chow mein image

This was one of my mother's staple dishes when I was growing up. In my reinvention, I've added a bit more spice and detail and some crunchy noodles for a textural contrast.

Provided by goodfood.com.au

Categories     Main-course

Time 30m

Yield SERVES 4

Number Of Ingredients 20

3 tbsp olive oil
500g beef mince
2 pinches of Chinese five-spice
2 pinches of chilli powder (optional)
1 large brown onion, sliced Chinese-style (thinly sliced from root to top)
4 garlic cloves, finely chopped
150g (about 15cm long) piece of ginger, peeled and grated
3 long green chillies, thinly sliced
⅓ wombok cabbage, thinly sliced
250ml hot water
125ml oyster sauce
4 tbsp tamari sauce or light soy sauce
3 tsp sesame oil
150g frozen peas
1 handful of green beans, thinly sliced
5 spring onions, sliced on an angle
160g vermicelli, reconstituted in boiling water for 10 minutes (chopped into 5cm lengths with scissors)
100g bean sprouts
Sunflower or rice bran oil, for deep-frying (it needs to be about 6cm deep)
50g vermicelli noodles, uncooked, to garnish (optional)

Steps:

  • 1. If garnishing with vermicelli noodles, heat the oil in a deep-sided frying pan to 180C (when a cube of bread dropped in the oil turns golden brown in 15 seconds), carefully add the noodles and fry for 20 seconds. Remove and drain on paper towel. 2. Heat two tablespoons of oil in a wok or large saucepan over very high heat, add the beef and fry, stirring constantly for three to five minutes until browned. Mix in the five-spice and chilli powder and tip out into a bowl. 3. Pour a splash more oil into the same pan and add the onion, garlic, ginger and chilli, and stir-fry over high heat for a minute until fragrant. 4. Stir in the cabbage and half the hot water, then add the oyster sauce, tamari sauce and sesame oil and cook for eight minutes until the cabbage is just softened. Add the peas, beans and spring onion and stir in the drained vermicelli, bean sprouts and the cooked beef. Add a splash more water and soy sauce if necessary. 5. Garnish the chow mein with the crispy noodles and serve. Recipe from Everyday by Karen Martini, published by Plum; RRP $39.99.

Provided by Nagi | RecipeTin Eats

Categories     Noodles

Time 15m

Number Of Ingredients 16

200g /6 oz chicken breast or thigh fillets (, thinly sliced (Note 1 tenderise option))
4 cups green cabbage (, finely shredded (Note 3))
1 1/2 tbsp peanut oil ((or other cooking oil))
2 cloves garlic (, finely chopped)
200g /6 oz chow mein noodles ((Note 2))
1 carrot (, julienned)
1 1/2 cups bean sprouts
3 green onions (, cut into 5cm/2" pieces)
1/4 cup (65 ml) water
2 tsp cornflour / cornstarch
1 1/2 tbsp soy sauce (, all purpose or light (Note 4))
1 1/2 tbsp oyster sauce ((sub Hoisin))
1 1/2 tbsp Chinese cooking wine (OR Mirin (Note 5))
2 tsp sugar ((reduce to 1 tsp if using Mirin))
1/2 tsp sesame oil
White pepper ((sub black))

Steps:

  • Mix together cornflour and soy sauce, then mix in remaining ingredients.
  • Alternative: Use 1/3 cup Chinese All Purpose Stir Fry Sauce, if you have some in stock.
  • Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
  • Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 minute), then drain.
  • Heat oil in wok or large fry pan over high heat.
  • Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
  • Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
  • Add the cabbage, carrot, and the white pieces of shallots (i.e. from the base of the stalk). Stir fry for 1 1/2 minutes until the cabbage is mostly wilted.
  • Add the noodles, Sauce and water*. Stir fry for 1 minute, tossing constantly.
  • Add bean sprouts and remaining shallots/scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.
  • Remove from heat and serve immediately.
