WATERMELON SALAD
As strange as it sounds, sweet, juicy watermelon with feta, red onion and mint is a winning combination. This summery, light salad is refreshing and is perfect for a summer barbeque.

- Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and set aside. Peel and halve the onion, and thinly slice.
- In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.
- In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.

- Using a sharp knife, cut off rinds from watermelons. (You should have a total of 2 pounds peeled fruit.) Quarter each melon, and then cut into 3-inch-long, 1/4-inch-thick slices. Arrange slices on a serving platter.
- Using a vegetable peeler, shave paper-thin slices of ricotta salata over watermelon. Sprinkle with salt and mint, and serve immediately.
RED AND YELLOW WATERMELON SALAD
Easy to make; sweet and refreshing! I used two varieties of watermelon-seedless red and seedless yellow! Fresh mint from the garden, too! For the fruit-flavored vinegar, raspberry flavor was used. From Quick and Simple magazine with a few minor changes.
