Advieh (Persian Spice Mix) image

Advieh is a Persian spice mix made with several aromatic spices. Warm and flavorful spices such as cardamom, turmeric and cinnamon make the perfect mix for any recipe!

4 tsp Cumin
1/2 tsp Ground Clove
4 tsp Cinnamon
2 tsp Dried Rose Petals
1 tsp Black Pepper
2 tsp Turmeric
2 tsp Ground Cardamom

Steps:

  • Layer all the spices in a jar with a tight lid.
  • Shake well and make sure the spices are fully mixed.
  • Store in the spice cabinet and use for rice dishes, stews and kebabs.

2 tablespoons ground cinnamon
2 tablespoons ground cumin
1 tablespoon green cardamom
1 teaspoon cloves (or nutmeg)
3 tablespoons ground coriander
2 tablespoons ground cumin
2 tablespoons angelica ((golpar in Persian))
2 tablespoons ground ginger
1 tablespoon shah Jeera
1 teaspoon ground cinnamon
1 teaspoon anise seeds
1 teaspoon nigella seeds
1/2 teaspoon celery seeds
1/2 teaspoon turmeric
1/2 teaspoon green cardamom (or nutmeg)
1/2 teaspoon ground black pepper
1/2 teaspoon red pepper flakes
1/2 teaspoon dried tarragon
1/2 teaspoon dried savory
1/2 teaspoon dried cilantro
2 tablespoons ground coriander
2 tablespoons ground cumin
1/2 tablespoon ground black pepper
1 teaspoon dried fenugreek leaves
1/2 teaspoon cloves
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
2 tablespoons ground coriander
2 tablespoons ground cumin
1 tablespoon garlic powder
1/2 tablespoon turmeric
1/2 tablespoon ground black pepper
1/2 tablespoon red pepper flakes
2 teaspoons salt
1 teaspoon dried fenugreek leaves
4 tablespoons ground coriander
2 tablespoons rose petals (dried)
1 tablespoon ground cinnamon
1 tablespoon dried limes ((seeds removed))
4 teaspoons ground cumin
2 teaspoons ground cardamom
2 teaspoons ground black pepper
2 teaspoons ground angelica ((gol-par))
1/2 tablespoon cloves (or star anise)
1/8 teaspoon ground nutmeg

Steps:

  • Measure out the whole spices and grind them in your electric or nut grinder. You may also use a mortar and pestle.
  • Mix the dried herbs and other ground powders into the spice blend in the final step.
  • If you already have the ground form of the spices, you may simply combine the ground spices in the specified quantities and add the herbs.
  • For the advieh torshi you may add the seeds (anise, nigella, celery), dried herbs and red pepper flakes to the mix without grinding.
  • Toasting the whole spices is not typical for making advieh. But if you do, it will make the flavors a bit more intense.
  • Don't toast the rose petals, saffron, angelica, dried limes or herbs.
  • Store spice mixes in glass spice jars.

BRAISED LAMB SHANKS WITH ROSEWATER & ADVIEH image

This classic Persian recipe for RawSpiceBar's March 2015 spice box incorporates advieh, a traditional, mild Persian spice blend and rosewater for a subtly flavored, fall off the bone Persian New Year specialty marking the spring equinox. A balanced blend of Persian spices & rosewater are slow simmered with lamb shanks, for a succulent flavor you're unlikely to find among other cuts of lamb. Subtle hints of orange zest, lime, dried rose buds and rosewater give this dish subtle complexity- a trademark of Persian cooking. Perfect served alongside long-grain basmati rice tinged with saffron, this dish makes a frequent appearance during Nowruz, Persian New Year, celebrating spring fertility and renewal.

6 lamb shanks
4 eggs, beaten
8 garlic cloves, crushed
2 large onions, chopped
3 tablespoons honey
6 tablespoons canola oil
1/2 cup rose water
4 teaspoons salt
1 teaspoon pepper

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Heat 3 tbsp oil over medium-high heat in large Dutch oven. Pat lamb shanks dry of excess liquid with towel. Generously salt & pepper shanks. Add to Dutch oven and cook lamb on all sides until golden brown. Remove and set aside.
  • Add remaining 3 tbsp oil over medium-high heat. Add onions, until translucent, about 5 minutes.
  • Add garlic, stir until raw aroma disappears, about 2 minutes. Add RawSpiceBar's Advieh Khoresh Spices & stir, about 30 seconds.
  • Add honey, rosewater, orange zest, 2 tsp salt, 1/2 tsp pepper and stir, another 30 seconds.
  • eturn lamb shanks to Dutch oven, add 1 cup water and cover.
  • Transfer Dutch oven to oven and bake for 2 hours. Rotate lamb shanks and re-cover pot. Continue baking until lamb is falling off the bone, about 1 hour more. Remove from oven and keep warm until ready to serve.
  • Serve alongside saffron rice and mast-o-khiar and enjoy!

Advieh image

An aromatic Persian spice blend which is good added to stews and pulses. This recipe is from " A Taste of Persia" by Najmieh Batmanglij. The author suggests adding the rose petals to the ground spices. After trying both ways, I prefer to whizz them in the spice grinder for a minute or two.
