This vegetarian meatloaf is hearty and pleases even the most passionate of meat eaters! It's a family favorite dinner party recipe.

1 1/2 cups cooked brown rice
1 1/2 cups walnuts
1/2 cup cashews
1 yellow onion
3 cloves garlic
3 ounces shiitake mushrooms
3 ounces baby bella mushrooms (aka cremini)
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons olive oil
1 teaspoon dried marjoram
1 teaspoon dried thyme
1 teaspoon dried sage
4 large eggs
1 cup cottage cheese
12 ounces Swiss cheese, grated
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare the brown rice using Stovetop Brown Rice or Instant Pot Brown Rice. (You'll need 1/2 cup dry rice to yield 1 1/2 cups cooked; or you cook 1 cup dry rice and save the leftovers.)
  • Preheat oven to 375°F.
  • Place 1 1/2 cup walnuts and 1/2 cup cashews on a baking sheet and toast for 8-10 minutes, until lightly browned. Allow to cool.
  • Meanwhile, finely chop 1 onion and mince 3 cloves garlic. Clean and finely chop the mushrooms. Finely chop the 2 tablespoons fresh parsley. When the nuts have cooled, finely chop them with a knife or in a food processor.
  • In a large skillet, heat about 2 tablespoons olive oil. Add the onion and garlic and cook until translucent, about 3 minutes. Add the mushrooms, 1 teaspoon marjoram, 1 teaspoon thyme, and 1 teaspoon sage. Cook about 5 minutes, until the mushrooms are golden. Transfer to a large bowl.
  • In a small bowl, lightly beat together 4 eggs.
  • In the large bowl, combine the onion and mushroom mixture with the toasted walnuts and cashews, parsley, 1 1/2 cups cooked rice, 1 cup cottage cheese, 12 ounces Swiss cheese, beaten eggs, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper.
  • Butter a 9-inch loaf pan, line the bottom with parchment paper, and butter it again. Pour the mixture from the bowl into the pan.
  • Bake 1 hour until golden brown. Let cool in pan for 20 minutes, then invert loaf and remove from pan. Slice into pieces and serve warm. Leftovers can be stored for a few day in the refrigerator or a few months in the freezer (cut into pieces). Reheat in a 375F oven.

1 (12 ounce) bottle barbeque sauce
1 (12 ounce) package vegetarian burger crumbles
1 green bell pepper, chopped
⅓ cup minced onion
1 clove garlic, minced
½ cup soft bread crumbs
3 tablespoons Parmesan cheese
1 egg, beaten
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon parsley flakes
salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.
  • Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

High in fiber and protein, low in fat, easy and really yummy! I've always thought meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!

2 cups water
1 teaspoon salt
1 cup lentils
1 small onion, diced
1 cup quick-cooking oats
3/4 cup monterey jack cheese or 3/4 cup American cheese
1 egg, beaten
4 1/2 ounces spaghetti sauce or 4 1/2 ounces tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper

Steps:

  • Add salt to water and boil in a saucepan.
  • Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
  • Remove from fire.
  • Drain and partially mash lentils.
  • Scrape into mixing bowl and allow to cool slightly.
  • Stir in onion, oats and cheese until mixed.
  • Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
  • Mix well.
  • Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
  • Smooth top with back of spoon.
  • Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.

2 sticks celery, diced
2 garlic cloves, crushed

1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt

Steps:

"BETTER THAN BEEF" MEATLESS MEATLOAF

2 pounds brown mushrooms, sliced
2 teaspoons kosher salt, divided
½ cup diced yellow onion
¼ cup diced celery
2 tablespoons tomato paste
2 teaspoons beef base (such as Better than Bouillon®)
¼ cup water
1 cup cooked black lentils
2 large eggs, beaten
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1 pinch cayenne pepper, or to taste
2 tablespoons ketchup
½ cup fine dry bread crumbs
⅔ cup rolled oats
1 cup grated Parmigiano-Reggiano cheese
2 teaspoons olive oil
2 tablespoons ketchup
2 tablespoons Dijon mustard
2 tablespoons brown sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Very generously grease a loaf pan.
  • Heat olive oil in a large skillet over high heat. Add mushrooms and 1 teaspoon kosher salt and sauté until nicely browned and juices have evaporated, about 10 minutes. Stir in onion and cook until soft, another 5 to 7 minutes.
  • Add celery, tomato paste, and beef base; cook and stir until tomato paste begins to toast on the bottom of the pan, about 3 minutes. Stir in water and turn off the heat; let sit for about 3 minutes.
  • Transfer mushroom mixture into a food processor. Add cooked lentils and pulse until finely chopped but not pureed.
  • Transfer to a mixing bowl and add eggs, soy sauce, Worcestershire sauce, onion powder, garlic powder, pepper, remaining 1 teaspoon salt, oregano, thyme, cayenne, ketchup, bread crumbs, oats, and Parmigiano-Reggiano cheese. Mix until thoroughly combined.
  • Transfer mixture into the prepared loaf pan, then wrap with foil and place on a sheet pan.
  • Bake in the center of the preheated oven until firm to the touch, about 1 hour.
  • Remove the loaf from the oven and place on a wire rack. Remove the foil and place it on the baking sheet. Grease the foil with 2 teaspoons olive oil. Let the loaf sit for 10 to 15 minutes, and increase the oven temperature to 450 degrees F (230 degrees C).
  • While the loaf is resting, make the glaze: Whisk ketchup, Dijon mustard, and brown sugar together in a small bowl.
  • Invert the loaf onto the foil and spread glaze all over the surface, mostly on the top but some on the sides.
  • Return to the oven and bake until the glaze is cooked on, 15 to 20 minutes.
  • Carefully transfer the loaf onto a cutting board. Cut into 6 slices and serve.

2 celery ribs, chopped
3/4 cup onion, chopped
2 green onions, thinly sliced

3 tablespoons soy sauce
2 tablespoons ketchup
2 tablespoons ketchup, more

Steps:

  • Preheat Oven to 350°F.
  • Grind walnuts to powder and set aside.
  • Sauté celery, onion, green onion and garlic over medium heat until tender about 4 minutes.
  • Remove veggies from heat and let cool while you do the following steps.
  • Mash tofu in a bowl and stir in walnuts, feta, oats, soy sauce, ketchup, mustard, parsley, and poultry seasoning.
  • Once mixed stir in veggies.

1 tablespoon honey
1 (8 ounce) can tomato sauce
1 tablespoon brown sugar
6 ounces baby portabella mushrooms, sliced
1 green pepper, diced

2 eggs, slightly beaten
1/4 teaspoon garlic powder

1 (12 ounce) package veggie crumbles, thawed

Steps:

  • Saute the mushrooms, pepper, onion and garlic in the canola oil until all are soft. Set aside to cool slightly.
  • Combine tomato sauce, honey, brown sugar and mustard. Set aside.
  • In a large bowl, combine the eggs and milk. Add the breadcrumbs, the mixture should look like a thick paste.
  • To the paste, add the veggie crumbles, rice, sauteed vegetable mixture, salt, pepper, steak seasoning mix, and half the sauce mixture. Combine well.
  • Spread the mixture in a greased, 8 inch square glass baking dish. Pour the remaining sauce mixture on top and spread evenly.
  • Microwave the meatloaf on high for 14 minutes, checking after about 10 to compensate for different ovens. The edges should be somewhat brown and firm with most of the sauce on top looking thick and a bit dry. Allow to cool for 5-10 minutes. Enjoy!

I love lentils! After making some lentil meatloaf (http://www.food.com/recipe/really-good-vegetarian-meatloaf-really-33921) and lentil and rice tacos (http://www.food.com/recipe/easy-inexpensive-lentil-tacos-304604) I wanted to expand my use of lentils to my all-time favorite dish: Shepherd's Pie! This recipe is vegetarian, wheat free and very versatile. It was a hit with my guests tonight and my carnivorous young boys had seconds. My only regret is that they ate it all!

3/4 cup dried brown lentils
3/4 cup rice (white or brown)
4 cups water
4 vegetable bouillon cubes
6 medium yukon gold potatoes (peeled and quartered)
1/2 cup unsalted butter
1 teaspoon salt
1/2 cup milk
1 teaspoon rosemary (fresh or dry)
1 teaspoon thyme
1 tablespoon olive oil
1 onion, chopped
2 carrots, chopped
1 small yellow squash, chopped (optional)
1 cup frozen peas (fresh if you have them!)

Steps:

  • Preheat oven to 400 degrees F.
  • Put lentils, rice, 4 cups of water and bouillon together in a medium pot over high heat.
  • Bring to a boil, then turn down heat to simmer. Stir occasionally, cover and cook until rice and lentils are soft, about 20 minutes. Stir in rosemary and thyme and set aside.
  • While lentils cook: Boil potatoes in another pot of water until tender when pierced with a fork. Drain and return to pot over low heat.
  • Add butter, salt and milk and use a potato masher to smash potatoes to your desired smoothness.
  • In a medium pan heat olive oil over medium heat. Add onions, carrots and squash (or other vegetables you like). Cook until onions are tender.
  • Cover the bottom of an 8x8 glass baking dish with all of the the lentil and rice mixture. Next add a layer using all of the vegetables, add the frozen peas on top. Last carefully cover the layers with mashed potatoes, a spoonful at a time using a rubber spatula.
  • Cover the baking dish with foil and place in the center of the oven.
  • Bake for 25 minutes covered, then remove foil and bake for 5 more minutes.
  • Remove from oven and serve hot.

TOFU & LENTIL VEGETARIAN MEATLOAF

Altered from a meatloaf recipe I saw in Giant Food's healthy ideas. Fun to make and a little time-consuming, but worth it because just like meat lover's meatloaf, it has a lot of versatility for leftovers. It says on the card that if you use cooking wine for the red wine, to omit the salt. It originally called for whole wheat breadcrumbs and 3/4 lb each of lean ground beef and lean ground turkey. Firm tofu has a good consistency for this, as does Nasoya Soft. Vegans can easily veganize this with using ground flax and water, or a commercial vegan egg replacer, as a binder. I'd recommend serving this with broccoli and roasted baby carrots and pasta with tomato sauce. The magazine recommends sauteed spinach and red potatoes. Feel free to sub your own tomato sauce if you don't want to make the one listed, I didn't make it; but included for those who might like to.

1/2 cup water
1/2 cup dry red wine
1 teaspoon minced garlic (2 cloves)

1/2 teaspoon dried oregano

1 (17 ounce) package firm tofu
1 tablespoon olive oil
1 tablespoon soy sauce
1/2 teaspoon ground black pepper (approx)
1 cup lentils (regular brown lentils)
1 cup breadcrumbs (2 slices of bread if you want to grate your own)
1/2 cup shredded zucchini (about 1 small, or half of 1 large)
2 egg whites

Steps:

  • Combine tomato paste, water, wine, garlic, basil, oregano, and salt in a small saucepan. Bring to a boil and and reduce the heat to low. Simmer uncovered for about 15 minutes, then set aside.
  • Wash and sort through the lentils, removing any sticks, pebbles, etc. and bring 3 cups of water to a boil. Lower the heat and cook the lentils, loosely covered, for about 20 minutes or until soft but not disintegrating. Drain any excess water.
  • While the lentils are cooking, make the tofu "ground beef" by draining it very well and drying it off with paper towels, then (here comes the fun part), smash it into a bunch of pieces, so it has a ground beef or scrambled egg like consistency.
  • Mix the tofu pieces in a bowl with the pepper (I just shake some on, roughly 1/2 tsp), olive oil, and soy sauce. Brown in a frying pan/skillet for a couple minutes until it somewhat resembles ground beef and let cool for a few minutes.
  • Combine the cooked lentils, crumbled and cooked tofu, breadcrumbs, zucchini, egg whites, and about 1/2 cup of the tomato sauce in a large bowl and mix well.
  • Shape the mixture into a loaf and place into an ungreased 9 x 5 loaf pan. Bake at 350F for 45 minutes.
  • Pour the remaining tomato sauce mix over the top of the loaf, and bake for another 15 minutes.
  • Place onto a serving plate and let cool for about 10 minutes before cutting into 8 slices and serving.
