Steps:
- 1. Peel and slice the bananas. Divide the slices evenly among 4 ungreased 6-ounce ramekins or souffle dishes.
- 2. In a small bowl, combine 2 Tbsp. melted butter and the lemon juice. Mix well. Drizzle the butter mixture over the bananas in each ramekin.
- 3. In a small bowl, combine the oats, walnuts, brown sugar and the remaining melted butter. Mix well. Sprinkle the oat mixture evenly over the bananas.
- 4. Bake in a preheated 375-degree oven until the bananas are hot and the topping is bubbly, about 10 to 12 minutes. Serve warm with the ice cream and a sprinkle of cinnamon.
- 5. SOME VARIATIONS: For a tropical taste, use lime juice instead of lemon juice and add 1 tsp. grated fresh ginger. Substitute unsweetened coconut for the walnuts. Add 1/4 tsp. ground cloves to the butter and lemon juice mixture. The flavor of the spice is utterly delicious in this dessert!

BANANA CRISP
A diffrent kind of fruit crisp. It works equally well with slightly underripe or fully ripe bananas (just not mushy ones!). Serve with either whipped cream or ice cream (try coconut). If you don't want to use rum, omit it or use 1 teaspoon of rum extract for flavor.

Steps:
- Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
- Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
- Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
- Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

- Heat a large skillet, stainless steel or nonstick, over medium heat. Once hot, add the butter and sugar and cook until melted. Add the bananas and cook, stirring frequently 3-4 minutes, until softened and fragrant.
- Remove the pan from the heat and carefully add the rum. I did not light it on fire to burn it off, because I was too scared and didn’t mind the additional flavor. Use your discretion with this step.
- Place the pan back over the heat and cook for an additional 1-2 minutes, stirring frequently, until the sauce reduces slightly.

- Preheat your oven to 350°F (177°C).In a mixing bowl, use a rubber spatula or your hand to combine the oatmeal cookie crumbs, sugar, and melted butter until they hold together.
- In the bowl of your stand mixer (or in a mixing bowl), use the paddle attachment to blend together the cream cheese, brown sugar, nutmeg, and salt on low speed.
- Pour the banana cheesecake batter into the cooled oatmeal cookie crust. Level the batter in the pan to make sure the surface is even. Set the foil-wrapped cheesecake pan into a pan that has a larger circumference. Pour boiling water into the outer pan and carefully slide the whole set up into your preheated oven. Bake the cheesecake for 1 hour 15 minutes.
- Melt the butter in a sauté pan over medium-low heat. Once the butter melts, whisk in the brown sugar and cinnamon. Slowly cook the brown sugar, stirring every 30 seconds or so to encourage it to dissolve. It will go from looking like a gritty paste to curdled within 2 minutes.
