IRISH FRIED CABBAGE WITH BACON
Irish Fried Cabbage and Bacon is a simple recipe that's pan-fried in bacon grease and loaded up with bacon pieces and onion and seasoned with brown sugar, salt, and pepper.

- Cook bacon in a deep cast iron skillet over medium-high heat until crisp, about 4 to 6 minutes. Use a slotted spatula to remove the bacon pieces and transfer to a paper towel-lined plate.
- Add the diced onion to the bacon drippings and cook until translucent, about 1 to 2 minutes.
- Add shredded cabbage to the pan and toss to coat. Add in brown sugar, salt, and pepper and cook until cabbage is tender, about 5 to 7 minutes.
- Add the bacon back to the cabbage and cook for another 2 to 3 minutes. Serve hot and season with additional salt and pepper if desired.

- Place a large stockpot over medium heat. Cut the bacon strips into 4 pieces each. Separate the bacon pieces and place in the pot. Stir and sizzle until the bacon is cooked, but not fully crispy.
- Meanwhile, peel the onion and cut it into 8 wedges. Then cut the cabbage in half and remove the core. Cut the cabbage into 12 wedges. Once the bacon is mostly cooked, add the onion to the pot and sauté for 3-4 minutes to soften.
- Add the cabbage, chicken broth, and mustard seeds. Stir to move the cabbage to the bottom of the pot and bring the bacon upward. Cover and simmer for 15-20 minutes, until the thickest parts of the cabbage are tender. Stir once or twice while cooking. Taste, then salt and pepper as needed. Serve with whole grain mustard on the side, if desired.

- Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
- Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
- Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
- Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
- Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
- Crumble the cooked bacon into the cabbage and serve hot.

I love cabbage! And bacon, and onion, so you will see several recipes sort of alike here. It's such a comfort food for me.Sometimes I'll leave out the bacon and add ground beef. Sometimes I'll add some fresh chopped tomato. Cabbage is like a canvass, you can add things and make it an ever-changing recipe. The times are just a guestimate.

- Cut bacon into 1" pieces. Place in large frying pan and cook until ready to turn. Add butter and onion and cook till medium brown.
- Add cut cabbage and add bay leaf if using. Add enough water to cover (1/4 cup at a time.).
- Cover and allow to steam, stirring often, and adding water as needed to help loosen the brown bits in the pan.
- Cook 15-20 minutes (it will cook down quite a bit in volume.) Taste to check for desired tenderness. When almost done, add vinegar, stir,and heat an additional.
- 5 minutes. Sprinkle with coarse black pepper just before serving if desired.

- Brown ground beef and drain.
- Sauté mushrooms, onion, and garlic in vegetable oil.
- Cook bacon in large fry pan, remove from pan and allow to cool.
- Place cabbage in fry pan with bacon grease, stir until cabbage is coated with bacon grease. Cook slightly, salt and pepper to taste.
- Combine ground beef and sauté mixture into the cabbage pan. Cook until cabbage is slightly crisp.
- Crumble bacon and add to mixture, stir.

- Cook the bacon in a large skillet over medium heat until crispy and cooked through.
- Remove the bacon and place it on paper towels to drain. Chop into crumbles.
- Stir onion into the skillet with the bacon grease and cook, stirring often, for 5 minutes, or until tender.
- Now add the garlic powder and cabbage immediately and continue cooking for another ten minutes, or until softened.
- Add the bacon crumbles on top, salt and pepper to taste.
- Stir to combine, lessen the flame and cook for another couple of minutes or until the liquid evaporates, and keep stirring at regular intervals.
