1 pkt. SHAKE 'N BAKE Seasoned Panko Seasoned Coating Mix
1/2 tsp. garlic powder
1/4 tsp. onion powder
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
3 catfish fillets (1-1/2 lb.), cut in half
1/4 cup KRAFT Zesty Italian Dressing
juice from 1 lime
1 cucumber, peeled, seeded and chopped
1/2 cup slivered red onions
2 cloves garlic, minced
1 serrano chile, stemmed, seeded and thinly sliced
1/2 avocado

Steps:

  • Heat oven to 375ºF.
  • Combine coating mix, garlic powder and onion powder in medium bowl; stir in cheese.
  • Spray baking sheet with cooking spray. Moisten fish with water. Add, 1 piece at a time, to coating mixture, turning to coat both sides of each fish piece with coating mixture. (Fish pieces will not be completely coated with coating mixture.) Place on prepared baking sheet. Top with any remaining coating mixture. Lightly press coating mixture into fish to secure.
  • Bake 20 min. or until fish flakes easily with fork. Meanwhile, combine all remaining ingredients except avocado.
  • Cut avocado into 6 slices. Serve fish topped with cucumber mixture and avocados.

¼ cup all-purpose flour
1 tablespoon salt free Cajun seasoning
1 large egg
4 (5 ounce) catfish fillets
½ teaspoon salt
Tartar sauce and lemon wedges (optional)

Steps:

  • Preheat oven to 450°F. Line a large rimmed baking sheet with foil and top with a wire rack. Coat the rack with cooking spray.
  • Stir cornmeal, flour and Cajun-Creole seasoning blend together in a large shallow dish. Whisk egg in a separate shallow dish.
  • Pat fillets dry with a paper towel and sprinkle evenly with salt. Working with 1 fillet at a time, dip in the egg to coat, letting excess egg drip back into the dish. Then dredge in the cornmeal mixture, turning to coat both sides. Transfer to the prepared rack on the baking sheet. Repeat with the remaining fillets. Coat the tops of the fillets with cooking spray.
  • Bake until crispy and golden, 15 to 20 minutes, turning the fillets over and coating with cooking spray halfway through. If desired, serve with tartar sauce and lemon wedges.

I adapted this recipe from Better Homes & Gardens. It is much healthier than pan frying fish and tastes just as good. This recipe works great on any fish fillets. My husband and I fish often and this works well with either frozen or fresh fillets. We have used it with trout, bass, and catfish.

1 lb fish fillet, thawed
1/4 cup milk
1/3 cup flour
1/3 cup Italian seasoned breadcrumbs
1/4 cup parmesan cheese, grated
1/2 teaspoon dill
1 dash black pepper
2 tablespoons butter, melted

Steps:

  • Rinse and pat dry fish. Cut into 4 serving size pieces if needed.
  • Measure thickness of each piece. This will determine cooking time.
  • Create an assembly-type line with milk in one dish, flour in another.
  • In the last dish, combine bread crumbs, parmesan, dill, and black pepper. Add melted butter, stir until forms small crumbs.
  • Dip fish in milk (this helps the flour stick to fish).
  • Then dip in flour.
  • Dip again in milk.
  • Then dip into bread crumb mixture. Press crumbs into fish if not sticking.
  • Place fish on GREASED baking sheet.
  • Bake uncovered at 450 degrees for 5 minutes per 1/2 inch thickness of fish. If the thickest part of fish is 1 inch thick, bake for 10 minutes. Check doneness by inserting fork and if fish flakes easily.
  • I place rings of onion and lemon juice on bottom and top of fish while baking for extra flavor.
