1970'S FRENCH STRAWBERRY PIE
My mom used to make this for our family back in '72. I totally loved it then as I do now! Very quick and easy to make. My mom used to make homemade crust but I always have trouble with mine and I recently found Keebler® ready made shortbread pie crusts!

Steps:
- Beat cream cheese and 1 tablespoon heavy cream together in a bowl. Spread into bottom of pie crust. Arrange about 2 cups quartered strawberries onto cream cheese layer.
- Mix 2 cups mashed strawberries, 1 cup sugar, and cornstarch in a saucepan; cook over medium heat until slightly reduced and thickened, about 10 minutes. Cool completely.
- Pour cooled strawberry mixture over strawberry layer in pie crust. Chill in refrigerator until set, 2 hours.
- Beat 1 cup heavy cream, 2 tablespoons sugar, and vanilla extract in a bowl until light and fluffy, about 5 minutes. Spread over cooled pie.

- Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
- Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.
- Bake for 35 to 45 minutes, or until the crust is slightly browned.

- Preheat oven to 425°. On a floured surface, roll dough to fit a 9-in. pie plate. Trim and flute edge. Line crust with a double thickness of foil. Fill with pie weights. Bake until golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes. Cool on a wire rack. , With a fork, mash 1 cup strawberries; set aside. - Cook frozen berries in large saucepan over med-low heat until berries release juice.Increrase heat to med-high and stirring often cook until you get a jam like consistency.(about 25 minutes.) Now measure and see if you have 2 cups! It needs to reduce to exactly 2 cups.(This is very important. It you have more after that time return it to the pan and cook some more.)
- While this is cooking combine Gelatin, water and lemon juice and let stand until softened and thickened. (5 minutes).
- Add the gelatin mixture, sugar, pinch of salt to the berry mixture and simmer for a few more minutes.
- Transfer to a bowl and let cool about 30 minutes to room temp.fold in the sliced, fresh berries and place all in your baked pie shell. Refrigerate about 4 hours and up to 24 hours.
- For the topping whip the cream cheese, sugar and vanilla with electric mixer until smooth.With mixer running. Add the whipping/heavy cream and beat until stiff peaks form.
- Serve pie with this delicious topping.
- For a Lower calorie Topping. Use reduced fat cream cheese and fold in Cool-Whip Light or Free.

- Make the crust: Combine the butter and cream cheese in a food processor and process until smooth. Add the flour and salt and process just until the mixture comes together into a ball. Scrape out the dough, shape into a disk, wrap in plastic wrap and refrigerate for at least 1 hour.
- Meanwhile, prepare the crumb topping: Combine the oatmeal, flour and sugar in a small bowl and toss to combine. Add the melted butter and stir until thoroughly incorporated. Refrigerate the topping until chilled, at least 30 minutes.

- Spread cream cheese which has been softened with a little cream on bottom of pie shell.
- Place cut up strawberries on top of cream cheese.
- Place left over fresh strawberries in sauce pan and mash.
- Add sugar and cornstarch.
- Cook for 10 minutes on medium until really thick.
- Cool strawberry mixture. (Make sure its cooled).
- Pour over pie.
- Chill pie for 2 hours.
- Whip whipping cream (I add a couple tablespoons of sugar and some vanilla for extra flavor).
- Spread over top of cooled pie.
- EAT and ENJOY!

I have been baking this pie since my daughters were very small. They are now 40 and 42. So as you can see, I have been making this pie for a long time. It is always the one they request when we have BBQs in the summertime. I even make it for them in the winter when and if I can find fresh strawberries. I think you will like it also. My grand-daughter said I should name it 'To Die For Strawberry Cream Pie.'

- In a small mixing bowl beat cream cheese and sugar until fluffy. Cover and put in refrigerator. Place several whole strawberries on the bottom of the pie shell and then fill in with sliced strawberries. Set aside. Bring water, sugar, cornstarch to boil over medium-low heat until thick and clear, about 2 minutes. Remove from heat and add Jell-O. Stir until dissolved and pour while hot over berries in pie shell. Let cool, then refrigerate for several hours or overnight. When pie is cooled, spoon the cream cheese topping on top of the pie and smooth over. Or, if you like you can pipe the cheese on with a frosting bag and tip. (a Ziploc bag with the corner snipped off works well too.) Refrigerate until ready to eat. Enjoy!

- Wash strawberries and remove stems; cut large berries in half or roughly chop them.
- Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. - Roll out dough 1/8 inch thick on a lightly-floured surface; fit it into a 10 inch glass pie plate, crimping edge decoratively.
- Chill for 30 minutes.
- Prick pastry lightly with a fork, line with foil and weight with dry beans or pie weights.
- Preheat oven to 375F and bake crust for 10 minutes, remove beans and foil, sprinkle bottom with almonds, and bake 10-12 minutes more, or until almonds are golden.
- Let cool.
- Hull and slice 1 pint of the strawberries and in a saucepan, combine them with ¼ cup water and sugar.
- Bring to a boil, stirring until sugar is dissolved, and simmer 3 minutes.
- In a small bowl, stir together cornstarch and ¾ cup water, add to cooked strawberries and bring to a boil.
- Simmer, stirring, for 3-5 minutes, or until thickened, and stir in lemon juice.
- Hull remaining 1 ½ pints strawberries, arrange in pie shell, and pour cooked strawberry mixture over.
- Chill pie for 3-4 hours or until set.
- In a chilled bowl, beat cream, vanilla extract and icing sugar until it holds soft peaks and serve with pie.
