1/2 cup plain dried breadcrumbs
2 teaspoons Kosher salt
1 teaspoon black pepper
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup milk
1 large egg, beaten
1 tablespoon Worcestershire sauce
2 pounds 80/20 ground beef
1 small yellow onion, finely minced
2/3 cup good-quality ketchup
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce
1/2 teaspoon Kosher salt
1/4 teaspoon garlic powder, onion powder, and black pepper

Steps:

  • Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
  • In a large bowl, use a fork to mix together breadcrumbs, salt, pepper, garlic powder, and onion powder. Add the milk, egg, and Worcestershire and mix once more.
  • Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
  • To make the topping, combine ketchup, sugar, Worcestershire sauce, salt, garlic powder, onion powder, and black pepper in a small bowl and whisk to combine.
  • Pour half of the sauce mixture over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce, and bake an additional 30-35 minutes.
  • Allow the meatloaf to rest about 15 minutes before slicing into. Serve and enjoy!

2 teaspoons parsley
1 teaspoon salt

Steps:

  • Combine eggs, milk, and Worcestershire.
  • Stir in crumbs, onion, parsley, salt, pepper, sage, chili powder, and garlic powder.
  • Add beef and mix well using wet hands; place in a 8x4x2 inch loaf pan.
  • Bake in a 350F oven for 1 1/4 hours; drain off any excess fat.
  • Mix together catchup, brown sugar, and mustard; spread over meat and return to oven for 10 minutes.

We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

2 large eggs, lightly beaten
1/3 cup milk
3 tablespoons Worcestershire sauce
Kosher salt
1/4 cup olive oil
1 large onion, chopped
2 cloves garlic, finely grated
1 tablespoon thyme leaves, chopped
Freshly ground pepper
1/2 cup ketchup
2 pounds 80/20 ground beef chuck
1/2 cup panko

Steps:

  • Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
  • Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

I recently decided that I'd just like to have a basic meatloaf recipe of my own. After throwing a few things together and actually, you know... going through with it (with the help of my girlfriend, who suggested the cooking wine), I prepared myself for disappointment. But, to my surprise... it wasn't half bad! Try it out yourself, and don't be afraid to make it your own with some extra spices and cheeses.

1 cup breadcrumbs (unflavored)
1 teaspoon adobo seasoning
1 teaspoon seasoning salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 pinch dried oregano leaves
2 tablespoons pecorino romano cheese
1 sprig parsley (optional)
1 1/2 lbs ground beef (80/20 lean to fat ratio preferable)
1 egg (I use extra large)
1 dash red wine
2 tablespoons ketchup (estimation, see below)
1 tablespoon ketchup (estimation, see below)
1 1/2 tablespoons Worcestershire sauce
3 tablespoons milk (I use skim)

Steps:

  • First, move your oven rack to the middle position and preheat your oven to 400°F.
  • Next, combine bread crumbs, Adobo, seasoning salt, garlic powder, onion powder, oregano, and pecorino-romano cheese (be sure to pack it tight into those tablespoons, now!) in a medium mixing bowl. If you would like a little bit of color in your meatloaf, finely mince a bit of parsley and add that as well. Stir with a fork or whisk in order to get everything evenly distributed, and set the mixture aside.
  • Drop the egg into a small bowl and beat it just until the yolk is broken up a bit. Set this aside as well.
  • Now, dispense the ground beef (in small clumps) into a large bowl. Add to this your red wine, 2 tablespoons of ketchup (actually two "squeezes"; it may be closer to 2 teaspoons -- my eye for these things is terrible), Worcestershire sauce, milk, your bowl of dry ingredients, and your slightly beaten egg. Mix it all together with your hands until everything is evenly distributed. Try not to over-mix; doing so will yield a tough meatloaf!
  • Place the mixture into a bread pan and shape into a loaf. Lastly, spread on just enough ketchup (the aforementioned 1 tablespoon) to thinly (and I do mean thinly!) cover the top.
  • Bake for forty minutes (at 400°F) and let sit for five minutes afterwards. Serve and enjoy!

"BETTER THAN BEEF" MEATLESS MEATLOAF

2 pounds brown mushrooms, sliced
2 teaspoons kosher salt, divided
½ cup diced yellow onion
¼ cup diced celery
2 tablespoons tomato paste
2 teaspoons beef base (such as Better than Bouillon®)
¼ cup water
1 cup cooked black lentils
2 large eggs, beaten
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
¼ teaspoon dried oregano
¼ teaspoon dried thyme
1 pinch cayenne pepper, or to taste
2 tablespoons ketchup
½ cup fine dry bread crumbs
⅔ cup rolled oats
1 cup grated Parmigiano-Reggiano cheese
2 teaspoons olive oil
2 tablespoons ketchup
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Very generously grease a loaf pan.
  • Heat olive oil in a large skillet over high heat. Add mushrooms and 1 teaspoon kosher salt and sauté until nicely browned and juices have evaporated, about 10 minutes. Stir in onion and cook until soft, another 5 to 7 minutes.
  • Add celery, tomato paste, and beef base; cook and stir until tomato paste begins to toast on the bottom of the pan, about 3 minutes. Stir in water and turn off the heat; let sit for about 3 minutes.
  • Transfer mushroom mixture into a food processor. Add cooked lentils and pulse until finely chopped but not pureed.
  • Transfer to a mixing bowl and add eggs, soy sauce, Worcestershire sauce, onion powder, garlic powder, pepper, remaining 1 teaspoon salt, oregano, thyme, cayenne, ketchup, bread crumbs, oats, and Parmigiano-Reggiano cheese. Mix until thoroughly combined.
  • Transfer mixture into the prepared loaf pan, then wrap with foil and place on a sheet pan.
  • Bake in the center of the preheated oven until firm to the touch, about 1 hour.
  • Remove the loaf from the oven and place on a wire rack. Remove the foil and place it on the baking sheet. Grease the foil with 2 teaspoons olive oil. Let the loaf sit for 10 to 15 minutes, and increase the oven temperature to 450 degrees F (230 degrees C).
  • While the loaf is resting, make the glaze: Whisk ketchup, Dijon mustard, and brown sugar together in a small bowl.
  • Invert the loaf onto the foil and spread glaze all over the surface, mostly on the top but some on the sides.
  • Return to the oven and bake until the glaze is cooked on, 15 to 20 minutes.
  • Carefully transfer the loaf onto a cutting board. Cut into 6 slices and serve.
