GARLIC BREAD
This loaded with garlic bread smells amazingly divine. It tastes even better!

Steps:
- With rack in middle position, preheat oven to 425.
- With an immersion blender beat butter and mayonnaise or stir well with a fork until smooth and luscious.
- Stir in salt, minced garlic, oregano and garlic powder, red pepper flakes if using, and parmesan cheese.
- Slice bread horizontally through the middle into two halves. Place on a baking sheet.
- Spread each bread half with half of the butter mixture.
- Place in preheated oven for 10 minutes. Then turn on broiler to high and let bread turn golden. This takes just a few minutes so watch carefully!
- Remove and using kitchen shears, cut bread into slices. (I find this easier than using a knife, but whatever works!)
GARLIC BREAD
Sounds difficult, but once you get the hang of it, it's actually quite easy. This bread dresses up Italian meals, and it disappears fast! Make two loaves for company!

Steps:
- Slice loaf, LEAVING CRUST INTACT, into slices.
- It is important NOT to slice through the bottom.
- Set aside.
- Mix butter with other ingredients.
- Allow to sit on counter a while, so flavors travel all through the butter.
- Take a length of foil, and place loaf lengthwise on the foil.
- Very gently, spread slices apart, being careful not to break bottom, and spread with butter mixture.
- When all slices are spread, use any leftover butter to spread the top of the loaf.
- Wrap sides of foil up.
- Leave top UNCOVERED.
- Twist ends of foil.
- Bake on tray for about 20-30 minutes in a 350 degree oven.
- This is great with spaghetti or lasagna.
- When baking lasagna, just put it in with the lasagna for the last half hour of baking time.
GARLIC BREAD

- Preheat the oven to 425°F.
- Slice loaf of French bread in half lengthwise.
- Stir together softened butter, sea salt, minced garlic, and parsley.
- Use a spatula to spread half of the butter mixture onto the bread loaf. Place the two halves of the bread together. Wrap tightly with aluminum foil and place in the oven to bake for 30 minutes.
- While the bread is heating, melt the remaining butter mixture in a small saucepan until the garlic is fragrant about 2 to 3 minutes.
- After 30 minutes, unwrap the bread to make sure the butter is melted and the bread is hot all the way through. TIP: If you'd like to crisp or toast the top of the bread a bit, place the two halves face up on a baking sheet. Broil for 2 to 3 minutes or until toasted.
- Brush or drizzle melted butter mixture over the toasted bread for extra garlic butter.
- Sprinkle additional minced parsley over the bread if desired.

CRUSTY GARLIC BREAD

- Put the butter in a bowl, add the garlic and mix well. Spoon the butter out onto a sheet of cling film and roll up to make a sausage-shaped log. Chill for 10 mins.
- Heat oven to 200C/180C fan/gas 6. Slice the baguette into about 12 slices but not all the way through, leaving the base intact to hold it together.
- Remove the cling film from the butter and thinly slice on a chopping board. Press each butter slice between the slices of bread.
- Wrap the baguette in foil, place on a tray and bake for 5-6 mins, then peel back the foil. Cook for a further 4-5 mins to crisp up.

- Preheat oven to 400 degrees F. Peel the outer layers of the whole head of garlic. Making sure to leave the garlic cloves intact.
- Use a sharp knife and cut the top 1/4 of the head of garlic. You want to be able to expose the garlic. Drizzle with olive oil and sprinkle with salt and pepper. Cover with aluminum foil. Bake for 40 minutes. Set aside to cool.
- Once the garlic is cool enough to handle, squeeze in a large mixing bowl. Add room temperature butter, parsley, parmesan cheese, salt and pepper. Mix until smooth.
- Make 1/2 inch wide cuts in your bread. Make sure to cut about 90% of the way down, leaving the bottom of the bread connected. Spread compound butter in between the slices, and across the top of the crust. Sprinkle the shredded mozzarella cheese on top of the bread and cover with aluminum foil.
- Set your oven to 400 degrees F and bake the loaf for 35-40 minutes.
- Remove from the oven and serve warm. You can cut through the bottom of the bread with a knife or pull off a slice with your hands!
