- For the filling: Preheat oven to 350 degrees F.
- Whisk the eggs in a large bowl until light and lemon colored. Whisk in the sour cream and vanilla, then continue to whisk until smooth and creamy. Add the sugar, flour and salt and whisk until smooth and thoroughly incorporated.
- For the crumble topping: Add sugar, flour and butter to a large bowl or to the bowl of a stand mixer. Work the butter through using your hands or the mixer until the mixture is a coarse crumble. (If you squeeze a handful it should stick together but break apart easily.)
- For the pie: Fill the pie shell with the raspberries and slowly pour the custard on top. Spread the crumble over the whole surface. Bake until edges of the pie start to rise, the crumble topping is golden brown and the middle no longer jiggles when moved, about 1 hour. Let to cool completely before serving. Serve at room temperature with dollops of fresh whipped cream.
BAKED SOUR CREAM CUSTARD

- Heat oven to 150°C. Place 1 cup of sugar and 1 tbsp of water in a small saucepan and bring to a simmer. Continue to cook until the sugar becomes a dark caramel. You can swirl the pan so that the caramel colours evenly, but do not stir. Stirring can cause sugar to crystallise. Pour the caramel into the base of a 1.2L baking dish, tilting the dish so the caramel completely covers the base before it sets. Beat together the eggs and remaining sugar, then whisk in sour cream, milk and cream and vanilla in that order. Pour the custard over the set caramel. Place the baking dish inside a larger dish and place into the oven. Pour boiling water into the larger dish until it comes half way up the sides of the custard. Bake the custard for 50 minutes until when the side of the baking tin is tapped, the custard barely wobbles in the middle. Remove from the oven, allow to cool to room temperature, and then refrigerate until chilled. Serve big scoops of the chilled custard, making sure to spoon up the liquid caramel from the bottom of the dish. Adam's tip If you have a steam oven, you can avoid having to use a bain marie for baking the custard. Just steam it at full steam for about 45 minutes. RASPBERRY CUSTARD PIE

- Preheat oven to 375 degrees. Roll pate brisee to 1/8-inch thickness on a lightly floured surface. Fit into a 9-inch pie dish, and trim edges, leaving a 1-inch overhang. Tuck overhang under so edges are flush with rim, and crimp edges. Prick bottom of dough with a fork. Freeze for 15 minutes. Line dough with parchment, and fill with pie weights or dried beans. Bake until edges begin to turn gold, 25 to 30 minutes. Remove weights and parchment. Bake until crust is light gold and cooked through, 10 to 15 minutes. Let cool on a wire rack.
- Reduce oven temperature to 350 degrees. Whisk flour and 1/2 cup sugar in a medium bowl. Add egg and cream, and whisk to combine. Toss raspberries, remaining 1/4 cup sugar, and the salt in a medium bowl. Spoon berries into crust, then pour in cream mixture, filling to just below the rim.
- Bake until custard is set but still a bit wobbly in the center, about 45 minutes. Let cool in dish on a wire rack. Cover, and refrigerate for at least 2 hours (or up to 1 day). Garnish with fresh raspberries, and serve cold.

- Crust: Pulse flour, sugar, and salt in a food processor to combine. Add butter; pulse until pea-size lumps remain. Stir together yolks and 2 tablespoons ice-cold water; drizzle over flour mixture, pulsing just until dough holds together when pressed between your fingers. - Raspberry Filling: Heat the 1 cup water and sugar in a large saucepan until the sugar is dissolved. Combine the cornstarch, salt, 1/4 cup water, and lemon juice until smooth. - (If you're not using old or stale bread, you can dry it out in the oven first. Place the bread cubes on a baking sheet and bake at 250 degrees F for about 30 minutes, tossing every 10 minutes, until the bread is dry and stale.)
- Heat oven to 350 degrees F. In a large bowl add half and half, butter, vanilla, sugar and salt. Microwave for about 1 minute, just until butter has melted.
- Add the beaten eggs and cinnamon to the milk mixture and whisk well to combine.

VANILLA CUSTARD WITH RASPBERRY MASH

- In a medium saucepan, heat the milk and vanilla bean to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes. In a bowl, whisk the egg yolks and granulated sugar until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan.
- Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter. Pour into individual dessert dishes and chill. Chill at least 2 hours or until ready to serve. (The custard can be made up to 24 hours in advance. - Raspberry Mash: Place 1/4 of a pint of raspberries in a bowl with the sugar and mash it with the back of a fork. Toss in the remaining 1/4-pint of raspberries and gently toss to coat.

- Preheat oven to 375, and place rack in center of oven.
- Place the sugar and lemon zest in a food processor and mince until the zest is as fine as the sugar.
- Add the eggs, butter, and sour cream to the processor and blend for 1 minute.
- Add the lemon and orange juice and switch the machine on and off quickly just to combine.
- Pour the filling into the prebaked pastry shell.
- Place on a baking sheet and bake until the center is softly set, but not firm-- about 12 minutes.
- Remove from oven and place on a wire rack to cool completely.
- This tart can remain at room temperature for several hours before serving.
- Up to 2 hours before serving, cover with washed and dried berries.

- In a bowl with a pastry blender or in a food processor blend or pulse together flour, butter, shortening, and salt until mixture resembles coarse meal. Add 2 tablespoons ice water and toss or pulse until incorporated. Add enough remaining ice water, 1 tablespoon at a time, tossing with a fork or pulsing to incorporate, to form a dough. On a work surface with heel of hand smear dough in 3 or 4 forward motions to make dough easier to work with. Form dough into a ball and flatten to form a disk. Chill dough, wrapped in plastic wrap, at least 1 hour and up to 24.
- On a lightly floured surface with a floured rolling pin roll out dough into a 16- by 7-inch rectangle (about 1/8 inch thick). Fit dough into a 13- by 4-inch rectangular tart pan with a removable fluted rim. Chill shell, covered, 1 hour, or until firm.
- Preheat oven to 400° F.
- Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven 10 minutes. Remove weights or rice and foil and bake shell until pale golden, about 5 minutes more. Cool shell in pan on a rack. Shell may be made 2 days ahead and kept in pan, covered, at room temperature.
- Reduce temperature to 250° F. and transfer pan to a baking sheet.
- Make custard:
- Whisk together custard ingredients.
- Pour custard into tart shell. Bake tart on baking sheet in middle of oven 30 minutes and transfer to rack to cool. (Custard will continue to set as tart cools.) Tart may be prepared up to this point 1 day ahead and chilled, covered.
- In a small saucepan cook 1 cup raspberries and sugar over moderately low heat, mashing with a fork and stirring occasionally, 5 minutes and pour through a fine sieve into a small bowl, pressing hard on solids. Discard solids and cool raspberry mixture. Remove rim of tart pan and transfer tart to a platter. Pour cooked raspberry mixture over custard and arrange remaining 2 cups raspberries on top.

- Instructions MAKE THE CRUST: 1. Add the flour and sugar into a large bowl and mix. Add the melted butter and mix well. It may look a little "crumbly." Add the water, egg yolks, and salt and mix thoroughly. Feel free to use your hands to make a nice ball of dough. 2. Wrap the dough in plastic wrap and place in the refrigerator for about 30 minutes to an hour. After 30 minutes to an hour, remove the dough from the fridge, spread it in a tart mold, and bake for 15 minutes at 355°F. Remove and cool. 3. Take a fork and gently poke the bottom of the pan, perforating the dough randomly. Set foil or parchment paper on top of the dough, then place ceramic pie weights (baking beans) on top of the crust, and prebake the crust in the oven for around 15 minutes at 355 degrees. MAKE THE CUSTARD: 1. Mix the egg yolks with the sugar. Whisk well. Add the flour (or cornstarch) to the eggs and sugar mixture and mix thoroughly. Add 1/2 cup of milk to thin. 2. Heat the remaining milk on the stove on medium. When the milk is warm (after 3-4 min), add the eggs/flour/sugar/milk mixture and the split and scraped vanilla bean. Whisk until boiling. When it boils, your custard should already be thick and creamy. 3. Spread the custard thoroughly over the crust and top with raspberries (or any kind of fruits you like). - Preheat oven to 350°F. Line frozen pie shell with aluminum foil, and fill with pie weights or dried beans. Bake in preheated oven until edges of crust begin to brown, about 25 minutes. Remove pie weights and foil. Return pie shell to oven, and bake until bottom of crust is lightly browned, 8 to 12 minutes. Transfer to a wire rack, and let cool completely, about 30 minutes.
- Combine heavy cream and milk in a small saucepan. Bring to a low simmer over medium, about 5 minutes. Remove from heat. Stir in cinnamon stick, turmeric, salt, and pepper. Cover and let stand 30 minutes.
- Whisk together granulated sugar, brown sugar, and flour in a large bowl. Pour milk mixture through a fine wire-mesh strainer into sugar mixture; discard solids. Whisk gently, without creating too many air bubbles, just until sugar is dissolved. Pour milk mixture into cooled pie crust, and arrange raspberries on top. Place pie on a rimmed baking sheet.
