This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

4 pounds russet potatoes, cut into 1/4 inch cubes
2 teaspoons chili powder
1 teaspoon salt
½ teaspoon ground black pepper
6 tablespoons butter, cubed
1 (8 ounce) package shredded colby-Monterey Jack cheese blend
1 (8 ounce) bottle Ranch dressing

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place the potatoes in the baking dish. Season with chili powder, salt, and pepper. Evenly distribute the butter over the potatoes.
  • Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing. Continue cooking 10 minutes, or until cheese is melted and bubbly.

2 cups mashed potatoes
1/3 cup shallot, finely chopped
2 teaspoons chopped chives
2 teaspoons Hidden Valley Original Ranch Dressing Mix (dry powder)
3 slices bacon, cooked crisp and chopped
2 tablespoons grated parmesan cheese
2 tablespoons Greek yogurt
1/4 teaspoon Tabasco sauce
2 eggs
1 -2 tablespoon flour
1/2 cup oil (for frying)
1/2 cup Greek yogurt
2 tablespoons dry ranch dressing mix
1 tablespoon chopped chives

Steps:

  • In a medium bowl combine mashed potatoes with the next 9 ingredients listed. Stir together until well blended. Heat cast iron skillet with a small amount of oil, on medium heat. Spoon batter into skillet, about a 4 inch round. Brown on both sides, drain on paper towels. Serve with dipping sauce.

1 tablespoon Hidden Valley Original Ranch Seasoning Mix
1 large red pepper, quartered and seeds removed
1/2 cup chopped shallot
1 teaspoon lemon juice
2 tablespoons Hidden Valley® Original Ranch® Dressing
1/4 cup sun-dried tomato packed in oil, chopped
1 tablespoon fresh chives, chopped
1/2 cup plain Greek yogurt
salt

Steps:

  • Preheat oven to 375 degrees and place potatoes on a large baking sheet cut side up. Sprinkle with salad dressing and seasoning mix and bake for 35-40 minutes. Remove and let cool. Increase oven temperature to 425 degrees and place red pepper on a baking sheet and bake until skins are charred. Put peppers in a plastic bag to sweat for a few minutes. Remove the outer skins and chop. Add to potatoes. In a small bowl, combine yogurt, shallots, chives, lemon juice, sundried tomatoes and hidden valley ranch dressing. Stir to combine. Pour dressing over potatoes and toss to coat. Salt to taste.

3 medium potatoes
2 eggs, separated
1 teaspoon salt
1 1/2 tablespoons flour
1/2 teaspoon baking powder
1/2 cup vegetable shortening, for frying

Steps:

  • Grate potatoes by hand, or process them in a food processor, and place in a large bowl.
  • Add beaten egg yolks to grated potatoes.
  • Stir in flour, salt, and baking powder, and mix well.
  • Beat egg whites until stiff, and fold into potato mixture.
  • On medium high heat, place enough shortening in a large skillet to have about 1/4" deep oil when melted.
  • Drop batter by large spoonfuls into hot oil.
  • Turn over when edges become a nice crispy brown, about 2 minutes.
  • Cook another minute or two on the other side.
  • Remove to a paper towel lined plate and sprinkle with salt, if desired.
  • Add shortening as needed to keep the oil level deep enough to fry the pancakes, but not deep enough to cover them.

5 large red potatoes (cleaned and quartered)
1/2 cup plain Greek yogurt
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
1/2 cup water (just enough to mash potatoes) or 1/2 cup milk (just enough to mash potatoes)
3 ounces brie cheese or 1/2 cup shredded mozzarella cheese
3/4 cup medium frozen shrimp, chopped (use the fully cooked variety )
3/4 cup frozen corn
1 loaf frozen bread dough, thawed according to directions
flour, for rolling out pizza dough
1 tablespoon olive oil
Hidden Valley® Original Ranch® Dressing, for dipping

Steps:

  • In a large pot put potatoes and enough water to cover them on the stove over medium to high heat. Cook until potatoes are tender. Drain.
  • To potatoes add yogurt, Hidden Valley Ranch mix, and milk or water. Beat until mashed.
  • Add corn, cheese, and shrimp. Blend together.
  • Cut dough into fourths. Roll out each fourth using a little bit of flour, so it doesn't stick.
  • Put about ½ cup to ¾ of filling into each fourth. I like to add a slice of Brie for good measure! Fold the dough over and crimp the edges.
  • Place "pockets" on a baking sheet lined with foil and sprayed with cooking spray.
  • Brush olive oil onto each pocket.
  • Bake at 350° for 30-35minutes.
