These Easy Cool Ranch Doritos Chicken Fingers are such a fun spin on a favorite dinner! Crispy Doritos coat the chicken pieces for a meal everyone will love! This homemade chicken fingers recipe is simple, and incredibly delicious.

2 lbs boneless chicken breasts, cut into "tenderloin" strips
2 cups buttermilk
1 (12 oz) bag of Cool Ranch Doritos (or whatever flavor you prefer)
1 cup flour
*optional 1-2 Tbsp Ranch seasoning mix for extra Ranch flavor

Steps:

  • In a medium bowl, marinate the chicken strips in buttermilk for at LEAST 2-3 hours (you can soak overnight).
  • When ready to bake preheat oven to 400°.
  • Line a baking sheet with foil and spray with nonstick spray. Set aside.
  • Take bag of Doritos and crush the chips inside. Now transfer Dorito pieces and flour into food processor or blender to crush and blend until the Doritos are the size of panko bread crumbs. Add in Ranch seasoning if desired.
  • Transfer crumbs into a medium bowl.
  • Set up a "coating station" and remove each chicken strip from the buttermilk, allowing excess to drip off and coat the chicken in the Dorito/Flour mixture.
  • Transfer to lined baking sheet. Continue with all chicken.
  • Bake chicken strips for 15-20 minutes until chicken is cooked through.
  • Serve immediately with Ranch dressing!

2 cups shredded, cooked chicken
1 ½ cups shredded Colby Jack, mozzarella, or cheddar cheese, divided
1 (10.5 ounce) can condensed cream of chicken soup, not diluted
½ cup milk
½ cup sour cream
1 (10 ounce) can Ro-tel tomatoes with green chilies, drained ((or substitute with a can of regular petite-diced tomatoes))
½ of a 1-ounce packet (about 4 teaspoons) dry Ranch seasoning mix ((just the dry seasoning))
1 (9.25 ounce) bag Doritos Cool Ranch chips, coarsely crushed ((about 4 cups crushed))

Steps:

  • Heat oven to 350°F (180°C). Grease a 2-quart baking dish or spray with nonstick cooking spray; set aside.
  • In a large bowl, stir together chicken, 1 cup of the cheese, condensed soup, milk, sour cream, tomatoes and green chilies, and dry Ranch seasoning.
  • Place half of the crushed Doritos (about 2 cups) in the bottom of the prepared baking dish.
  • Top with chicken mixture.
  • Cover with foil and bake for about 20-25 minutes, or until heated through.
  • Sprinkle the remaining ½ cup of shredded cheese and remaining crushed Doritos over the top of the casserole. Put the dish back in the oven, uncovered, and bake for about 5 more minutes, or until the cheese is melted.

Crispy on the outside and juicy on the inside, these tenders are packed with flavour, easy to make and ready in less than half an hour!

4 boneless, skinless chicken breasts (2.5 lbs.)
1 255g bag of Cool Ranch Doritos
3/4 cup all purpose flour
4 large eggs, beaten
3/4 cup milk

Steps:

  • Preheat oven to 400°F.
  • Line 2 baking sheets with foil or brush very lightly with olive oil to prevent sticking. If you have a wire rack that sits in a baking sheet, that will work very well.
  • p id="instruction-step-3">3. Slice chicken into pieces about 3-4 inches long by 2-3 inches wide. Place in bowl and set aside. Depending on the size of the chicken breast, you will get 5-7 pieces in each one.
  • id="instruction-step-4">4. Open top of Doritos bag, then hold the top closed and squeeze to crunch up the Doritos. The pieces will resemble crunched up corn flakes.
  • id="instruction-step-5">5. In separate bowls, place milk, flour, and beaten eggs. Line up bowls in the following order: milk, flour, eggs, Doritos, cookie tray, wet cloth. (Before assembling, have a wet cloth handy as this can get a little messy!)
  • ="instruction-step-6">6. Dip each piece of chicken, one at a time, into the milk, then flour, next eggs and finally crunched up Doritos. Place on baking sheet.
  • "instruction-step-7">7. Bake in 400F for 15-20 minutes, turning over once halfway through. Test to ensure that chicken is no longer pink inside.

1 sweet pepper, sliced
1/4 large sweet onion, sliced
32 fresh spinach leaves, rinsed
2 chicken breasts
1 cup shredded mozzarella cheese
1 tablespoon salt
1 tablespoon pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1/2 cup low fat ranch dressing (or regular)
4 toothpicks
0.333 (15 5/8 ounce) bag ranch Doritos
spray extra virgin olive oil (optional)

Steps:

  • Filet open chicken breasts, pound to thin.
  • Sprinkle both sides with seasonings.
  • Lay on 8 spinach leaves and 1/4 pepper and onion slices on each chicken breast half. Add 1/4 cup shredded mozzarella cheese. Roll and close with a toothpick.
  • Lightly coat in low fat ranch dressing (or regular ranch) then roll in crushed Doritos.
  • Place on top of cookie cooking rack on a cookie sheet so chicken doesn't get soggy. For extra crisp, lightly spray with EVOO sprayer and bake 25-30 minutes at 350*.
  • **Don't forget to remove toothpick before serving**.

1 regular can cream of chicken soup
1 regular can cream of mushroom soup
1 regular can Ro*Tel (chilies and tomatoes)
2 large cans cooked chicken
1 bag Doritos
1 large bag cheddar cheese

Steps:

  • Sautee onion in oleo until clear. Add soups, Ro*Tel, and chicken to onion.
  • Layer a casserole dish with Doritos. Layer some soup mixture and then cheese. Keep layering until all ingredients are gone and cheese is on top.
  • Bake at 350°F for 15 minutes.

1 bacon strip, cut in half lengthwise
2 boneless skinless chicken breast halves (4 ounces each)
2 tablespoons fat-free ranch salad dressing
3 tablespoons finely chopped fresh mushrooms
3 tablespoons finely chopped sweet red pepper
3 tablespoons finely chopped green onions
2 teaspoons cornstarch
6 tablespoons fat-free evaporated milk

Steps:

  • In a small nonstick skillet, cook bacon over medium heat until cooked but not crisp. Drain on paper towel. Flatten chicken to 1/4-in. thickness; spread with ranch dressing. Top with mushrooms, red pepper and onions. Roll up and wrap a piece of bacon around each; secure with a toothpick if needed. , Place in a shallow 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25-30 minutes or chicken juices run clear. Remove and keep warm. Remove toothpicks., Strain pan juices. In a small saucepan, combine cornstarch and milk until smooth; stir in pan juices. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with chicken.
